NINETY MINUTE CINNAMON ROLLS
Delicious cinnamon rolls made with a soft, quick rising dough.

Steps:
- Heat the milk in a small saucepan until it bubbles, then remove from heat. Mix in margarine; stir until melted. Let cool until lukewarm.
- In a large mixing bowl, combine 2 1/4 cup flour, yeast, white sugar and salt; mix well. Add water, egg and the milk mixture; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes.
- Cover the dough with a damp cloth and let rest for 10 minutes. Meanwhile, in a small bowl, mix together brown sugar, cinnamon, softened margarine.
- Roll out dough into a 12x9 inch rectangle. Spread dough with margarine/sugar mixture. Sprinkle with raisins if desired. Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place cut side up in 12 lightly greased muffin cups. Cover and let rise until doubled, about 30 minutes. Preheat oven to 375 degrees F (190 degrees C).
- Bake in the preheated oven for 20 minutes, or until browned. Remove from muffin cups to cool. Serve warm

- Combine 2 cups flour and yeast in mixing bowl.
- Heat milk, 1/2 cup shortening, sugar and salt in saucepan just until warm (150ºF to 200ºF), stirring until shortening almost melts.
- Add to flour mixture.
- Add egg.
- Beat with electric mixer at low speed for 30 seconds, scraping bowl.
- Beat 3 minutes at high speed. By hand, beat in remaining flour until batter is thoroughly mixed.
- Place in large bowl.
- Spray top with no-stick cooking spray. Cover with plastic wrap.
- Let rise until double, about 1 hour.
- Stir down.
- Beat thoroughly with wooden spoon.
- Let rest 5 minutes.
- Spray muffin cups with no-stick cooking spray.
- Drop batter by tablespoons into prepared muffin pans, filling half full. Cover. Let rise until double in size, about 30 minutes.
- Heat oven to 400ºF.
- Spray tops with no-stick cooking spray.
- Sprinkle with poppy seeds.

I found this recipe a few years ago and have adopted this as my official best cinnamon rolls of all time. I make it every Christmas. I like it because I pour the extra cinnamon and brown sugar that is left in the bottom of the muffin tins,over the cinnamon rolls. This way the whole cinnamon roll is like the best part, the center.
