CURRY-COCONUT SHRIMP

1 teaspoon canola oil
½ cup minced onion
½ cup minced red bell pepper
1 clove garlic, minced
1 teaspoon ground cumin
¾ teaspoon ground coriander
½ teaspoon curry powder
½ cup light coconut milk
1 teaspoon sugar
¼ teaspoon crushed red pepper flakes
1 pound jumbo shrimp, peeled and deveined
1 tablespoon cornstarch
1 tablespoon water
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in large, nonstick saucepan over medium heat. Saute onion, red pepper, and garlic until vegetables begin to soften, about 3 minutes.
  • Season with cumin, coriander, and curry powder. Cook for 1 more minute. Stir in coconut milk, sugar, and crushed red pepper flakes. Bring to a boil. Reduce heat, and simmer, uncovered for 2 minutes.
  • Stir in shrimp, and increase heat to medium-high. Cook and stir until shrimp is cooked through, about 4 minutes.
  • In a small bowl, combine cornstarch with 1 tablespoon water. Stir into shrimp mixture, and cook until sauce has thickened, about 1 minute. Stir in cilantro, and remove from heat.

½ sweet onion, minced
2 cloves garlic, chopped

5 tablespoons butter
1/2 cup minced onion
6 tablespoons flour
2 1/2 teaspoons curry powder*
1 1/4 teaspoons salt
1 1/2 teaspoons sugar
1/2 teaspoon powdered ginger
1 cup chicken broth
2 cups milk
4 cups cleaned, cooked shrimp (3 pounds raw)
1 teaspoon lemon juice

Steps:

  • Melt butter in a double boiler. Add onion. Simmer until tender. Stir in flour and other dry ingredients. Gradually stir in chicken broth and milk. Cook over boiling water, stirring until thickened. (Could be 10 minutes). Add shrimp and lemon juice. Heat to serving temperature. (Be sure not to head too long or shrimp will over-cook and turn to rubber.)
  • Serve over fluffy rice with 2 or more accompaniments on top: chutney, shredded coconut, diced bananas, sliced avocado, pineapple chunks, bacon bits, salted almonds, Spanish peanuts, or currant jelly.

1 pound large shrimp
2 teaspoons olive oil
1 medium onion, coarsely chopped
1 teaspoon garlic, coarsely chopped
2 teaspoons curry powder
1 3-inch piece fresh lemongrass, thinly sliced crosswise (optional)
1/3 cup coarsely chopped fresh ginger
8 cardamom pods
2 cups unsalted tomato juice
1/2 teaspoon salt
1/3 cup nonfat yogurt
1/2 medium cucumber, peeled, seeded, and diced (1 1/2 cups)
1/4 teaspoon garam masala (a spice blend available at Indian groceries and specialty-food stores)
1/2 tablespoon fresh lemon juice
1 tablespoon chopped mint or cilantro
12 sprigs cilantro, for garnish

Steps:

  • Peel and devein shrimp, reserving shells and leaving tails intact. Cover; refrigerate.
  • Heat oil in a medium saucepan over medium-low heat. Add onions and garlic; cook, stirring often, until onions are translucent, 5 to 7 minutes. Reduce heat to low; add shrimp shells, curry, lemongrass, ginger, and cardamom. Cook, stirring often, until shells are pink and mixture is very aromatic, about 5 minutes.
  • Add 4 cups water, tomato juice, and salt. Raise heat; bring to a boil. Reduce heat to medium low and simmer, skimming off scum as necessary, about 1 hour.
  • Combine the yogurt, cucumber, garam masala, lemon juice, and chopped mint or cilantro; cover with plastic and refrigerate.
  • Strain stock, pressing on solids, into a clean medium saucepan. Return to a boil. Reduce heat so stock is at a bare simmer. Add shrimp; poach, adjusting heat as needed to maintain a bare simmer, 3 to 4 minutes. Transfer shrimp to a dish; cover with foil. Raise heat to medium high; simmer liquid until it is reduced by about half, about 20 minutes. Pour the sauce over shrimp; garnish with cilantro sprigs and serve with reserved cucumber relish.

Simmer the mixture, stirring constantly, until it begins to thicken, about 2 minutes. Add the shrimp and simmer, stirring, until the shrimp turns pink and is cooked through, about 4 minutes. Stire in the lime juice, and add salt and pepper to taste.
  • Ladle the curried shrimp over rice and top with garnishes as desired. Serve the mango chutney on the side.

2 pounds shrimp
1 ancho chile
1 large onion
3 tablespoons vegetable oil
1 clove garlic, minced (green part removed)
1 stalk celery, chopped
1 tablespoon chopped parsley
1/2 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon ground fennel seed
1 teaspoon ground cumin seed
1/2 cup yogurt
2 tablespoons fresh coriander, chopped

Steps:

  • Peel the shrimp, reserving the shells, and sprinkle them with salt. Rinse thoroughly, drain and repeat the process two more times. Blot dry with paper towels.
  • Tear the ancho chile in strips, discarding the seeds, and soak for 20 to 30 minutes in 1 cup hot water.
  • Place the shrimp shells in a large saucepan with half the onion, coarsely chopped, the celery and parsley. Add 5 cups water and bring to boil. Simmer for 30 minutes.
  • Chop the remaining half-onion and sautee in the vegetable oil until golden brown, stirring frequently. Add the garlic and cook for one minute, then add the spices. Stir-fry for a minute, then add 1 cup of the shrimp stock. Boil rapidly for 5 minutes. Meanwhile, puree the ancho chile in its soaking liquid until smooth. Add to the sauce, along with the rest of the shrimp stock. Cook for 20 minutes.
  • Add the shrimp and cook for about 3 minutes. Add the yogurt and heat through. Sprinkle with coriander and serve on basmati rice.

Steps:

  • To make the sauce: Melt butter in a 3-quart saucepan over medium-low heat. Add onion, carrot and celery and cook, stirring occasionally, until soft, about 5 minutes. Add curry and chili powders and cook, stirring, for 5 minutes. Whisk in flour, coconut milk and 1/3 cup water, raise heat to medium and whisk until just boiling. Whisk in salt, mace, allspice, nutmeg, cloves, cinnamon and then apple. Reduce heat to low, cover and simmer for 30 minutes. Push through a strainer with a metal spoon into a medium bowl, cover and refrigerate overnight.
  • When ready to serve, place the sauce in a saucepan and stir in currant jelly and chutney. Heat over medium heat until blended, whisking occasionally. Add chicken or shrimp, stir and cook until heated through, about 5 minutes. If mixture is too thick, thin with chicken or shrimp cooking liquid or heavy cream. Serve with the rice and the condiments in separate bowls.
