Recipe video above. This is a recipe that really makes the most lamb racks which are a pricey cut of meat! Adding a crunchy rosemary-garlic crumb not only adds extra flavour but is also a great textural contrast to the soft and tender lamb meat. To stop the crumb falling off lamb racks, just add a touch of egg into the mustard spread. Egg is after all the ultimate natural food glue!Serve straight up (lamb cutlets are sooo juicy and tender, most people think no sauce is necessary!), with a Creamy White Wine & Mustard Sauce or else a Pea Puree (great colour and is as good as a sauce).

1 rack of lamb (6 to 9 bones) (, your choice Frenched or not (Note 1))
1 1/4 tsp salt
3/4 tsp black pepper
2 tbsp olive oil
3 tsp egg (, lightly whisked (Note 2))
3 tbsp Dijon mustard
1 tbsp fresh rosemary leaves (, finely chopped)
1 small garlic clove (, minced)
1 cup Panko breadcrumbs ((Note 3))
2 tbsp parmesan (, finely grated)
1 garlic clove (, finely minced (knife, not garlic press))
1/4 tsp each salt and pepper
2 tbsp fresh rosemary leaves (, finely chopped)
30g / 2 tbsp butter (, melted)
1 cup dry white wine ((sauvignon blanc, pinto gris, semillon, or any blend))
1 cup chicken stock (, low sodium)
1 cup heavy/thickened cream
1 tbsp dijon mustard
1/8 tsp each salt and pepper

Steps:

  • Preheat oven to 200°C/390°F (all oven types). Place shelf in the middle of the oven.

Tender oven-roasted rack of lamb, seasoned with rosemary, fresh lemon juice, and garlic, is perfect for entertaining and so easy to make!

4 cloves garlic (crushed)
1 teaspoon chopped fresh rosemary leaves
2 racks of lamb (frenched (2 pounds each, 8 ribs each))
1/4 lemon
1 1/2 teaspoons kosher salt and freshly ground pepper (to taste)

Steps:

  • Season the lamb racks with lemon juice and season with salt and pepper on both sides.
  • Rub the garlic all over them and sprinkle with rosemary.
  • Set the racks fat side up on a large rimmed baking sheet lined with foil if desired and let stand for 1 hour.
  • Preheat the oven to 450°F.
  • Roast the lamb in the upper third of the oven for about 25 minutes for medium-rare meat, or until a thermometer reaches 130F (or longer if you like your cooked medium or medium-well). Simply insert the tip of the thermometer through the side of the chops and into the thickest part of the meat, careful not to touch the bone (which is hotter than the meat that surrounds it).
  • When that spot reaches 130°F, it's finished. The temperature will continue to rise an additional 5 degrees as the lamb rests.
  • Transfer the lamb racks to a carving board and let them rest, tented with foil for 10 minutes.
  • Carve the lamb in between the rib bones and transfer to plates.
  • Serve right away. Trim fat before eating*.

1 1/2 tablespoons kosher salt
2 tablespoons minced fresh rosemary leaves
3 garlic cloves, minced
1/2 cup Dijon mustard
1 tablespoon balsamic vinegar
2 racks of lamb, "frenched" (see note)

Steps:

  • In the bowl of a food processor fitted with a steel blade, process the salt, rosemary, and garlic until they're as finely minced as possible. Add the mustard and balsamic vinegar and process for 1 minute. Place the lamb in a roasting or sheet pan with the ribs curving down, and coat the tops with the mustard mixture. Allow to stand for 1 hour at room temperature.
  • Preheat the oven to 450 degrees F.
  • Roast the lamb for exactly 20 minutes for rare or 25 minutes for medium-rare. Remove from the oven and cover with aluminum foil. Allow to sit for 15 minutes, then cut into individual ribs and serve.

½ cup fresh bread crumbs
2 tablespoons minced garlic
2 tablespoons chopped fresh rosemary
1 teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
1 (7 bone) rack of lamb, trimmed and frenched
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Move oven rack to the center position.
  • In a large bowl, combine bread crumbs, garlic, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper. Toss in 2 tablespoons olive oil to moisten mixture. Set aside.
  • Season the rack all over with salt and pepper. Heat 2 tablespoons olive oil in a large heavy oven proof skillet over high heat. Sear rack of lamb for 1 to 2 minutes on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Roll in the bread crumb mixture until evenly coated. Cover the ends of the bones with foil to prevent charring.
  • Arrange the rack bone side down in the skillet. Roast the lamb in preheated oven for 12 to 18 minutes, depending on the degree of doneness you want. With a meat thermometer, take a reading in the center of the meat after 10 to 12 minutes and remove the meat, or let it cook longer, to your taste. Let it rest for 5 to 7 minutes, loosely covered, before carving between the ribs.

1 head garlic
3 tablespoons chopped fresh parsley
½ teaspoon minced fresh thyme
1 ½ cups soft bread crumbs
1 (8 bone) rack Lamb, domestic, rib, separable lean and fat, trimmed to 1/8" fat, choice, raw
kosher salt and ground black pepper to taste
¼ cup Dijon mustard

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Wrap garlic head in foil.
  • Roast garlic in the preheated oven until soft, about 40 minutes. Remove from the oven and let cool enough to handle, 15 to 20 minutes. Slice in half; squeeze to remove the roasted garlic within.
  • Combine 1 tablespoon roasted garlic with bread crumbs, parsley, and thyme. Reserve remaining roasted garlic for another use.
  • Wrap the exposed bone sections of the rack individually in aluminum foil.
  • Set the rack, bone-side down, ribs facing away, on a sheet of plastic wrap and sprinkle with salt and pepper. Brush meat with mustard to create a thin layer. Spread bread crumb mixture over and press the crumbs into it using the plastic wrap. Set the lamb on a roasting rack. Discard the plastic wrap.
  • Roast in the preheated oven until an instant-read thermometer inserted into the center reads at least 140 degrees F (60 degrees C) for medium doneness, or to desired doneness, 25 to 35 minutes. Let the lamb sit for 20 minutes in a warm location; carve into 4 two-bone chops. Season with salt.
