4 boneless skinless chicken breast halves, sized to fit the French rolls you pick out
2 cups red cabbage, shredded
4 slices swiss cheese
1 large sweet onion, cut into 1/2 in. slices
1 1/4 cups thousand island dressing, divided
4 French rolls, split
4 dill pickle slices (optional)

Steps:

  • Brush chicken and onion with 1/2 cup of the salad dressing and set aside.
  • Combine 1/4 cup of the salad dressing with the cabbage, mix well and set aside.
  • Grill the chicken 5 to 7 minutes per side or until no pink in the center.
  • Top each chicken breast with a slice of Swiss cheese during the last minute of grilling.
  • Grill onion slices 4 to 5 minutes on each side or until browned and tender.
  • Grill rolls until toasted.
  • Spread toasted sides with remaining salad dressing.
  • Place chicken on roll bottoms.
  • Top with onion, cabbage mixture and roll tops.
  • Garnish each, if desired, with a dill pickle spear and a toothpick.
  • Serve immediately.

8 slices rye bread
¾ cup thousand island dressing
1 (16 ounce) can sauerkraut, drained
8 slices Swiss cheese
8 slices pastrami
¼ cup margarine, softened

Steps:

  • Spread each slice of bread with thousand island dressing. Top 4 of the bread slices with sauerkraut, cheese and pastrami. Place remaining bread slices on sandwich. Spread margarine on the outsides of each sandwich.
  • Heat a large skillet over medium high heat. Grill until browned, then turn and grill until heated through, and cheese is melted.

1 (16 ounce) can sauerkraut, drained

buttered flavored Pam cooking spray

Steps:

  • Spread each slice of bread with thousand island dressing.
  • Top 4 of the bread slices with sauerkraut, cheese and corned beef.
  • Place remaining bread slices on sandwich.
  • Spray butter flavored papm on the outsides of each sandwich.
  • Heat a large skillet over medium high heat.

1 can (14 ounces) sauerkraut, rinsed and well drained

  • Pound chicken between two pieces of waxed paper to flatten. Place in a greased 13-in. x 9-in. baking dish. Spoon salad dressing over chicken; cover with sauerkraut. Cover and bake 350° for 30 minutes. Uncover; top with cheese. Bake 20-30 minutes longer or until chicken juices run clear.

6 breast half, bone and skin removed (blank)s skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 (16 ounce) can sauerkraut, drained and pressed
4 slices Swiss cheese
1 ¼ cups thousand island salad dressing
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with cheese slices. Pour dressing over all and cover dish with aluminum foil.
  • Bake in preheated oven for 90 minutes, or until chicken is cooked through (fork can be easily inserted and juices run clear). Sprinkle with chopped parsley and serve.

  • Combine all ingredients for homemade Thousand Island Dressing in a dish then cover and refrigerate. Can be done several days ahead of time.
  • Place a large skillet over heat that's just a touch above medium then spray with nonstick spray. Season chicken on both sides with homemade seasoned salt and pepper then add to the skillet and saute until golden brown on the bottom, 2-4 minutes depending on the thickness of your chicken cutlets/breasts. Turn heat down to medium, spray tops with nonstick spray, then flip chicken and saute for 1 more minute (2-3 minutes if using breasts vs cutlets.)
  • Add toppings to each piece of chicken - roughly 2-3 Tablespoons sauerkraut, 2-3 Tablespoons dressing, plus a slice of swiss cheese - then place a lid on top and continue to saute until cheese has melted and chicken is cooked through.
