DILL PICKLE APPETIZERS



Dill Pickle Appetizers image

This is a very easy, delicious appetizer. A creamy mixture flavored with onion is spread on white bread and rolled with a crisp baby dill pickle. I usually at least triple the recipe for parties, because it disappears quickly.

1 (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise
1 tablespoon onion juice
1 tablespoon grated onion
1 (1 pound) loaf white bread, crusts trimmed
1 (22 ounce) jar baby dill pickles

Steps:

  • In a medium bowl, mix cream cheese, mayonnaise, onion juice and grated onion.
  • Spread the mixture thinly on the white bread slices. Roll 1 baby dill pickle in each slice of bread. Place in a medium glass baking dish with the seam side down. Cover and chill in the refrigerator 8 hours, or overnight.
  • To serve, slice each bread roll into 1 inch slices.

2 pounds pickling cucumbers (about 8 to 10 medium), trimmed and thinly sliced
3 medium onions, thinly sliced
1 large green pepper, chopped
3 tablespoons salt, divided
2 cups sugar
1 cup white vinegar
3 teaspoons celery seed

Steps:

  • In a large glass or stainless steel bowl, toss vegetables with 2 tablespoons salt. Cover with crushed ice and mix well. Refrigerate, covered, 8 hours. Drain and rinse; drain well. Return to bowl., In a saucepan, combine sugar, vinegar, celery seed and remaining salt. Bring to a boil; cook and stir 1 minute. Pour over cucumber mixture; stir to combine., Transfer to freezer containers or canning jars, leaving 1-in. headspace; cool completely. Freeze, covered, up to 6 weeks., Thaw in refrigerator before serving. Store thawed pickles in the refrigerator up to 2 weeks.

These are easy and so good, I like to use the dried Italian salami or all beef salami, use mini gherkin pickles also known as cornichons or small dill pickles --- make certain to tell your deli person to slice the salami thin -- I have listed the yield at 36 appetizers that amount is only estimated it will depend on what size you slice the rolls.

12 slices italian salami, thin slices (such as Genoa salami)
1/3-1/2 cup whipped cream cheese with garlic (or use desired flavor)
12 large mini gherkins, drained (pick out the longest pickles from the jar, or use 2 pickles per roll, or you may use small dill pick)
colored toothpick (use as many as needed)

Steps:

  • Spread each slice of the salami with a thin layer of cream cheese to within 1/4-inch of the edges.
  • Place 1 pickle or two small pickles in the center of the salami, then roll up jelly-roll style.
  • Slice each roll into thirds or in half then pierce each piece with a coloured toothpick.
  • Place on a serving platter.
  • Refrigerate until ready to serve.

About 25 years ago or so, a lady brought this yummy treat to an office party & I never forgot it. As a kid she used to work at a Kosher Pickle Factory and learned many things about the cold packed pickle. Now, since then I have tried flavored cream cheeses, different nuts and sprinkling a light touch of garlic salt on top, but all in all it stands as a simple recipe that I love so much and serve up as an appetizer for parties. ---- Cold packed dill pickles are the best and the most crunchy. Once you try them you will always want them and you can find them in the refrigerated section of the grocery store. Hope you enjoy as much as we have!

1 (28 ounce) jar kosher pickles
16 ounces packed cream cheese (flavored, I used chive & onion for this pic above)
2 cups chopped pecans
1 dash garlic salt

Steps:

  • 1. Remove your whole cold packed dill pickles from the jar I use 4-6 mild cold packed dill pickles and dry them off well with a paper towel.
  • 2. Pick up one pickle and hold on the ends and begin to spread the cream cheese with a knife over the pickle. It doesn't have to be perfect just covered well.
  • 3. Pour your chopped pecans into a bowl large enough to roll the pickle inches Now take your cheese covered pickle and roll drop down into the nuts and roll. Pat lightly the nuts into the cheese so they stick well. Set pickle aside and repeat until finished.
  • 4. You can refrigerate them until ready to cut and serve them. When you do cut them, don't slice too thin or the mixture will begin to fall off . Cut them in a thicker slice. If some mixture does fall off just lightly press it back on the pickle. 3/8 of an inch is good. You can put fancy toothpicks in the center of them or just sliced by themselved on a plate. If desired, sprinkle very lightly a dash of garlic salt over the top.
  • 5. Now the beautiful Pickles are ready to eat and Serve immediately.
