Steps:
- Beat eggs until thick and lemon yellow color.
- Mix in remaining ingredients in the order listed.
- Fill greased and floured minature muffin tin 3/4 full.
- Bake at 300°F for 25 to 30 minutes, or until lightly browned.
- These freeze well.

Steps:
- Prheat oven to 400 degrees.
- Line 2 dozen muffin cups.
- Stir together flour, baking powder, baking soda and salt. Set aside.
- Dissolve coffee in the hot water and stir into bananas.
- Beat together sugar and butter until fluffy.
- Add egg, then banana mixture.
- Stir in flour. Mix until well blended.
- Fold in chocolate chips.
- Divide into cups.
- Bake for 25 - 30 minutes.
- You can put it into 2 loaf pans and bake at 350 degrees for 45-50 minutes until a toothpick comes out clean too!
