PERFECT ROAST CHICKEN

Perfect Roast Chicken image

Want a roasted chicken that is juicy inside without the use of a baking bag or flour? Then this recipe is perfect. It is quick and easy to prepare. The picture shown does display a chicken that was cooked in a bag, but the chicken was also roasted with vegetables and needed the bag to immerse the vegetables in the chicken flavor. I still guarantee a juicy chicken without the use of a bag each and every time.

Provided by Ina Garten

Categories     main-dish

Time 2h10m

Yield 8 servings

Number Of Ingredients 11

1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil

Steps:

  • Preheat the oven to 425 degrees F.

Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
  • Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

PERFECT ROAST CHICKEN

Perfect Roast Chicken image

The almost universal appeal of roasted chicken stems from its power to comfort. The ideal roasted chicken recipe will leave your chicken golden brown and gleaming, tender, and juicy. The crackle of chicken as it roasts and the wondrous aroma that perfumes the kitchen provoke a feeling of satisfaction and fulfillment.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 8

1 six-pound roasting chicken
2 tablespoons unsalted butter
Salt and freshly ground black pepper
2 medium onions, peeled and sliced crosswise 1/2 inch thick
2 lemons
3 large cloves garlic, peeled
4 sprigs fresh thyme
1 cup Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat

Steps:

  • Let chicken and 1 tablespoon butter stand at room temperature for 30 minutes. Preheat oven to 425 degrees. Remove and discard the plastic pop-up timer from chicken if there is one. Remove the giblets and excess fat from the chicken cavity. Rinse chicken inside and out under cold running water. Dry chicken thoroughly with paper towels. Tuck the wing tips under the body. Sprinkle the cavity of the chicken liberally with salt and pepper, and set aside.
  • In the center of a heavy-duty roasting pan, place onion slices in two rows, touching. Place the palm of your hand on top of lemon and, pressing down, roll lemon back and forth several times. This softens the lemon and allows the juice to flow more freely. Pierce entire surface of lemon with a fork. Using the side of a large knife, gently press on garlic cloves to open slightly. Insert garlic cloves, thyme sprigs, and lemon into cavity. Place chicken in pan, on onion slices. Cut about 18 inches of kitchen twine, bring chicken legs forward, cross them, and tie together.
  • Spread the softened butter over entire surface of chicken, and sprinkle liberally with salt and pepper. Place in the oven, and roast until skin is deep golden brown and crisp and the juices run clear when pierced, about 1 1/2 hours. When chicken seems done, insert an instant-read thermometer into the breast, then the thigh. The breast temperature should read 180 degrees and the thigh 190 degrees.
  • Remove chicken from oven, and transfer to a cutting board with a well. Let chicken stand 10 to 15 minutes so the juices settle. Meanwhile, pour the pan drippings into a shallow bowl or fat separator, and leave onions in the pan. Leave any brown baked-on bits in the bottom of the roasting pan, and remove and discard any blackened bits. Using a large spoon or fat separator, skim off and discard as much fat as possible. Pour the remaining drippings and the juices that have collected under the resting chicken back into the roasting pan. Place on the stove over medium-high heat to cook, about 1 minute. Add chicken stock, raise heat to high, and, using a wooden spoon, stir up and combine the brown bits with the stock until the liquid is reduced by half, about 4 minutes. Strain the gravy into a small bowl, pressing on onions to extract any liquid. Discard onions, and stir in the remaining tablespoon of cold butter until melted and incorporated. Untie the legs, and remove and discard garlic, thyme, and lemon. Carve, and serve gravy on the side.

AMAZINGLY JUICY AND FLAVORFUL ROASTED CHICKEN

Amazingly Juicy and Flavorful Roasted Chicken image

This is the juciest, best flavored roasted chicken I have ever made, or ever eaten! I have been experiementing, and It has turned out with the exact same wonderful results 3 times in a row now.. so I'm confident that anyone can make this with the same results. Never again will I purchase a pre-cooked rotisserie chicken! It's so easy too!

Categories     Whole Chicken

Time P1DT1h20m

Yield 8 serving(s)

Number Of Ingredients 10

1 whole chicken
1 tablespoon salt
1 teaspoon seasoning salt
1 teaspoon garlic powder
black pepper
1 tablespoon butter
2 tablespoons olive oil
1 lemon, quartered and slightly smashed
2 garlic cloves, smashed
1 teaspoon McCormick's Montreal Brand steak seasoning

Steps:

  • Night before:
  • Rinse chicken and pat dry.
  • Mix salts, garlic powder and black pepper together.
  • Liberally rub outside of chicken with salt mixture, then put the remaining salt mixture inside of the chicken cavity. Don't be afraid of the salt! Remember, we want the bird seasoned all the way through! I promise that it wont be salty. You may even want to use extra salt in the cavity, especially if you are using kosher salt.
  • Put into a plastic bag and chill in fridge overnight. The longer the better.
  • Day Of:.
  • Preheat oven to 350 f.
  • Put butter, lemon and garlic into cavity. You can also use herbs, onion etc.
  • Pat outside of chicken dry, then rub the chicken with olive oil.
  • Sprinkle Montreal steak seasoning on all sides. (Makes it really pretty when done).
  • Place chicken in a roaster with a rack breast side up.
  • Bake uncovered for approx 20 min per pound, or until thermometer in thickest part of thigh is between 175 to 180 degrees f.
  • DO NOT OVERCOOK!
  • Remove bird from oven and cover with foil. Allow to rest for at least 20 minutes, the longer the rest time, the jucier the chicken gets, so do not skip this step! It wont be juicy if it doesn't rest!
  • Enjoy!

ABSOLUTELY PERFECT ROAST CHICKEN

Absolutely Perfect Roast Chicken image

Perfect, that is if you like crisp garlicky skin, moist flesh and pan juices you have to force yourself not to drink straight from the pan. The flavor of this chicken is amazing and the best I have ever had. The recipe was given to me by my niece. Thank you Nancy!!

Provided by Marie

Categories     Whole Chicken

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 4

3 lbs whole chickens
2 garlic cloves
1 1/2 teaspoons kosher salt
1 cup water or 1 cup chicken broth

Steps:

  • Preheat the oven to 400°.
  • Remove the giblets and any excess fat from the chicken cavity.
  • Peel the garlic and put it through a garlic press.
  • In a small bowl or on your cutting board, mash the garlic together with the salt.
  • When you have a nice paste, smear half of it inside the chicken's cavity.
  • Rub the rest of the salt and garlic paste all over the outside of the chicken.
  • Then put the chicken on a rack and put the rack in a roasting pan just big enough to hold the chicken.
  • Pour the water into the bottom of the pan.
  • Bake the chicken for 1 hour and 15 minutes, or until the drumstick just begins to move in the socket.
  • Do not baste.
  • Check a few times to be sure the water has not evaporated; add more during cooking, if needed.
  • Cut the chicken into serving size pieces and serve with pan juices.
  • I like to serve the juice in individual small bowls to dip the chicken.
  • Note: Try to use a chicken as close to 3 lbs as you can find. It is more difficult to get the same results with a larger roaster chicken.
  • Also note: Do not substitute regular salt for the Kosher salt. Chicken must be on a rack in order for the chicken to brown well.

18 BEST ROASTED CHICKEN RECIPES - THE SPRUCE EATS
18-best-roasted-chicken-recipes-the-spruce-eats image

From thespruceeats.com
Estimated Reading Time 6 mins
  • Iron Skillet Roasted Chicken. Roasting this smaller-sized bird in a cast-iron skillet makes it cook fast enough for a weeknight meal. The garlic powder, onion powder, dried thyme, and paprika probably already live in your spice cabinet so you can put it together quickly even after a long day.
  • Classic Sunday Roast Chicken. Don’t let the name fool you, this classic roast chicken tastes great any day of the week. Plenty of butter gives it a crisp, golden skin and tender meat on the inside.
  • Lemon Roast Chicken. Zesty lemon contrasts with rich butter to give this roast chicken an especially zippy flavor. When the bird finishes cooking, its pan juices combine with a little white wine to form a delicious gravy for serving over carved meat.
  • Bacon and Sage Roast Chicken. Smoky bacon and earthy sage give roast chicken a different flavor that tastes almost like a chicken club without the accoutrements.
  • Persian Roast Chicken. The addition of saffron, cinnamon, and cumin give this bird a warm Middle Eastern profile. Clementines lend a sweet and sour element that's characteristic of Persian cuisine, but other oranges will work if you can’t find the smaller citrus.
  • Spatchcocked Spicy Roast Chicken. By spatchcocking a chicken, you can dramatically reduce the cook time and encourage the bird to cook more evenly to prevent dry breasts and underdone drums.
  • Chicken Under a Brick. Chicken under a brick is also a roasted spatchcocked recipe, and you will need bricks. The foil-wrapped weights keep the chicken flat while it cooks so every bit is done to perfection.
  • Pan-Roasted Chicken. There's no need to roast an entire chicken. This simple pan-roasted chicken recipe uses quartered chicken or individual pieces so the cooking time is sped up considerably.
  • Cuban Mojo Chicken. Sour orange (also called Seville orange) is the key ingredient in this traditional Cuban chicken, but since it can be hard to find in the U.S. this recipe substitutes a combination of navel orange and lime.
  • Thai Lime Roast Chicken. A lime, fish sauce, vinegar, and chili marinade tastes like all of your favorite parts of Thai takeout right from your own oven.
