APPLE SLICES

Apple Slices image

This is enough for a cookie sheet or jellyroll pan. Use ten cups sliced, peeled apples. Drizzle with a confectioners' glaze if you like.

Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Time 1h15m

Yield 20

Number Of Ingredients 10

2 teaspoons salt
4 cups all-purpose flour
1 ⅓ cups shortening
2 egg yolks, beaten
½ cup milk
10 apples - peeled, cored and sliced
2 tablespoons all-purpose flour
3 cups white sugar
1 tablespoon ground cinnamon
1 egg white

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 10x15 inch jellyroll pan or cookie sheet.
  • In a large bowl, stir together the salt and 4 cups flour. Cut in the shortening until the mixture resembles coarse crumbs. Use a fork to stir in the egg yolks and milk just until dough comes together. On a lightly floured surface, roll out half of the dough to 1/8 inch thickness or until big enough to cover the bottom of the jellyroll pan with a little hanging over the sides.
  • Arrange the slices of apple to evenly cover the bottom crust. In a small bowl, stir together the 2 tablespoons of flour with the sugar and cinnamon. Sprinkle the sugar mixture over the apple slices. Roll out the remaining dough to cover the apple layer and pinch to seal to the bottom crust. Trim off excess crust and brush with egg white.
  • Bake for 40 to 45 minutes in the preheated oven, until apples are tender and crust is brown. If the crust begins to brown too much before the apples are done, cover with foil and continue baking. Cool before cutting into squares.

Time 1h45m

Yield 12

Number Of Ingredients 10

2 cups all-purpose flour
½ teaspoon salt
⅔ cup shortening
¼ cup water
2 eggs
1 tablespoon lemon juice
6 apples - peeled, cored, and cut into 1/2-inch thick slices, or more to taste
1 cup white sugar
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
  • Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.
  • Place apple slices in a large bowl; add sugar, 3 tablespoons flour, and cinnamon. Toss apples to coat; spread over crust. Cover apple filling with remaining crust, piecing together any scraps to cover any holes. Cut several slits into top crust for ventilation while cooking.
  • Bake in the preheated oven until edges are browned and crisp, 45 minutes to 1 hour. Cool to room temperature before cutting into squares, about 30 minutes.

APPLE SLICES

Apple Slices image

Chicago-style bakery apple slices. Apple filling between two crusts in a sheet pan, topped with vanilla glaze and cut into squares.

Provided by Kelly ~ the hungry bluebird

Categories     Dessert

Time 1h10m

Number Of Ingredients 12

2 cups all purpose flour
½ teaspoon baking powder
½ teaspoon salt (I use Diamond kosher salt, even for baking)
¾ cup lard (preferably non-hydrogenated, unprocessed)
½ cup water
2 egg yolks
1 teaspoon lemon juice
32 ounces apple dessert filling/topping
1 cup powdered sugar
2 tablespoons melted or softened butter
½ teaspoon vanilla
2 tablespoons whole milk (more to thin, if necessary)

Steps:

  • Sift together flour, baking powder and salt in large bowl. Add lard and cut in with pastry cutter or fingertips until the mixture resembles coarse crumbs. In a measuring cup, mix water, egg yolks and lemon juice together and pour over flour mixture. Blend gently with a fork until combined; mixture will be very moist.
  • Divide dough in half. Roll or pat one half of dough directly into 9" by 13" jelly roll pan, bringing dough slightly up the edges. I patted with my hands, you could also try a mini roller. Spread apple filling evenly over the dough. Roll remaining dough to fit the top, either on a well floured pastry board or the back of a sheet pan and then carefully flip it over the top. Press or pinch the edges together, don't worry if it doesn't seal completely, as long as top is completely covering apples. Patch where necessary. Cut several slits in top dough for steam vents.
  • Bake in 400º oven for 40 minutes, until crust is nicely browned, rotating pan halfway. Remove to rack to cool.
  • Make glaze. Combine sugar, softened butter, vanilla and milk until smooth, adding more milk if necessary for consistency. Spread glaze over top of crust with an offset spatula and let glaze set and harden. Cut into 2- or 3-inch squares and enjoy!

  • Apple Sandwich. Kicking things off is a delicious and nutritious sandwich with a crunch. There’s no bread involved in this sandwich, yet it’s truly divine.
  • Peanut Butter Cookies. Nothing beats the classic chocolate chip cookies, but for peanut butter lovers, these ones are king. They look plain, true, but these cookies are epic.
  • Banana Bread. As a kid, I loved coming home from school to the smell of banana bread baking in the oven. I’m sure your kids will love the experience, too!
  • Peanut Butter Energy Bites. No kid (or adult) can ever say no to these peanut butter energy bites. A combination of peanut butter, chocolate chips, oatmeal, flax seeds, and honey makes these fantastic bite-sized treats.
  • Blueberry Muffins. Soft, moist, and crumbly are what you can look forward to in these muffins, and more. Every bite is loaded with fresh blueberries bursting with sweet juices.
  • Ranch Pretzels. These ranch pretzels are crunchy, salty, and absolutely addictive. Both you and the kids will want to snack on them nonstop! Don’t worry, you need not make the pretzels from scratch.
  • Apple Chips. Say no to greasy potato chips and yes to these healthy baked apple chips. They’re just as crunchy and delicious, but they’re good for you.
  • Strawberry Fruit Roll-Ups. Fruit roll-ups are a classic childhood snack. But instead of buying them from the store, why not make your own? After all, everything’s better homemade.
  • Puppy Chow. Puppy chow, muddy buddies, monkey munch, doggy bag – no matter what you call them, they’re delicious. This snack doesn’t have the best names, but it’s darn delicious.
  • Veggie Cups. I know what you’re thinking – how on earth will a kid say yes to a cup of vegetable sticks? The key is in the dip. Serve an array of dressings – preferably creamy, and those tomatoes and sticks of carrots, bell peppers, and celery will transform into a delightful treat.
