  • Bring 8 cups water and 1 cup thinly sliced unpeeled ginger to a simmer in a saucepan; simmer until reduced to 5 cups, about 25 minutes. Sweeten with 1/4 cup honey and divide among mugs (strain, if desired). Dust with cinnamon.

This one is an original recipe. If you like spicy teas, you'll like this one. The ginger makes it feel like a kick in the mouth! It's also good for upset or queasy stomach due to the soothing effects of the ginger. Anyway, this recipe is best hot and absolutely terrible chilled. I learned that the hard way... Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

3 teaspoons dried ginger
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon clove
1/4 teaspoon fennel seed
1/4 teaspoon anise seed

Steps:

  • Assemble all the ingredients and place in a tea ball. Note: If you don't own a tea ball, then you can put the ingredients directly in the water and then strain out later.
  • Place tea ball in hot water and steep for 10 minutes.
  • Drink as a hot tea.

1/4 cup packed dark brown sugar

Steps:

  • Combine first 5 ingredients in heavy large saucepan. Cover and simmer 10 minutes. Add milk and tea, bring to boil and simmer 2 minutes. Turn off heat and steep 4 to 6 minutes, according to desired strength. Mix in sugar. Strain tea. (Can be prepared 6 hours ahead. Cover and chill. Rewarm before serving.)

1 quart water
1/4 cup freshly grated gingerroot (no need to peel)
1 stalk lemongrass, cut lengthwise
2 bags herbal tea (or equivalent)
lemon, to taste (I squeeze a whole lemon in)
honey

Steps:

  • BRING the water to a boil.
  • Reduce heat and add gingerroot and lemongrass.
  • Simmer for ten minutes.
  • Turn off the heat and add 2 bags or about 2 teaspoonfuls of your favorite herbal tea mixture.
  • Taste and if it tastes too weak, continue steeping, if it tastes too strong add more water.
  • Strain and sweeten with honey and add lemon to taste.
