2 tablespoons mozzarella cheese
2 tablespoons sharp cheddar cheese

Steps:

  • Lay out tortilla's on a flat service.
  • Put a layer of 14 pepperoni slices on each tortilla.
  • Sprinkle 1 pieice of crumbled bacon on each tortilla.
  • Sprinkle 1 tablespoon of mozzarella over each tortilla.
  • Sprinkle 1 tablespoon of sharp cheddar cheese over each tortilla.
  • Wrap up and place seam side down in the air fryer basket.
  • Spray with butter flavored cooking spray.
  • Cook in air fryer at 400 degrees for 3-5 minutes or until cheese is melted and desired crispyness.

Great on their own as a snack or an excellent tool for your favorite dip. My favorite dip to pair these with is spinach and artichoke dip. I also like to use them as a replacement for croutons in a salad. You get that crunch and they have so much flavor you can cut back on the dressing as well.

Steps:

  • Preheat the oven to 380 degrees F (190 degrees C).
  • Place pepperoni slices in the basket of the air fryer, making sure they are only slightly overlapping if need be.
  • Cook for 5 minutes. Using tongs, transfer slices to a paper towel-lined plate and let sit for 5 minutes for final crisping. Eat immediately or refrigerate and store in an air-tight container.

Fatty and gooey--just like any good pizza;) When my husband and I stay in on Saturday nights (curled up on the sofa with pillows, blankets, Blockbusters, Ben&Jerry's, and candy!) he makes a batch of these to scarf down too:) Fortunately, we redeem ourselves by jogging together 3 times a week; I think myself "model-thin" by means of yoga and Tae-Bo. Chris shapes up by kick-boxing and lifting. Then we ruin it all by eating--but what a way to go!!!

4 teaspoons olive oil
1 teaspoon garlic powder
4 burrito-size flour tortillas (8")
3/4-1 cup prepared pizza sauce, depending on how saucy you like your pizza (Ragu is good)
1/2-1 cup shredded mozzarella cheese or 1/2-1 cup provolone cheese, depending on how cheesy you like your pizza
24 thin pepperoni slices (Hormel is good) or 1 sliced pepperoni stick, if you like it more toothsome
1/2 cup sliced black olives (optional)

Steps:

  • Combine the oil with the garlic powder; set aside.
  • Arrange the tortillas on a work surface; spread each with 3 Tbsp.
  • of the pizza sauce to within 1" of the edge.
  • Sprinkle the sauce with 1/4 cup cheese, 6 slices of pepperoni, and 1 Tbsp.

1 (8 ounce) package mozzarella cheese
1 (10 ounce) package egg roll wrappers
1 cup marinara sauce, divided
10 ounces mini pepperoni
2 tablespoons olive oil, or as needed
2 teaspoons Italian seasoning
1 teaspoon garlic salt

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Cut mozzarella cheese into 6-inch sticks.
  • Place 1 egg roll wrapper on a flat surface, positioned to look like a diamond. Add 1 teaspoon marinara sauce, 1 mozzarella stick, and 2 tablespoons mini pepperoni to the bottom third of the egg roll wrapper.
  • Roll up the bottom point over the filling, towards the center of the wrapper. Fold in the left side of the wrapper to cover the center. Fold in the right side of the wrapper to cover the left fold, like an envelope. Roll up the egg roll until just the top point is exposed. Brush some water on the top point and fold down. You may need to brush a bit more water over the edges to create a seal.
  • Repeat for the remaining egg rolls. Brush olive oil over the tops. Sprinkle Italian seasoning and garlic salt over the tops.
  • Brush some olive oil over the air fryer basket. Add egg rolls to the basket seam side-down, without letting them touch each other. Reduce the temperature to 360 degrees F (180 degrees C) and air fry for 8 minutes, flipping at the halfway point. Serve with remaining marinara sauce.
