Air Fryer Buffalo Chicken Drumsticks are crispy on the outside and wonderfully juicy on the inside with lots of spice. It's the perfect keto, low carb gameday food.

6 chicken legs
1 cup dill pickle juice
1 teaspoon sea salt
black pepper
1/4 cup melted butter
1/3 cup hot sauce, (I use Frank's RedHot)
1 tablespoon lime juice
1/4 teaspoon garlic powder
blue cheese dressing and celery sticks for serving

Steps:

  • Place chicken, pickle juice, and sea salt in a large ziplock bag. Place in the refrigerator for 2 hours to overnight. If you have the chance, turn the bag a few times during the marination period.
  • Once chicken has marinated, remove it from bag and blot dry with paper towels.Season it with pepper. (Note: Both the marinade and the buffalo sauce are salty so you shouldn't need salt.)
  • Preheat your air fryer to 400 degrees. Spray the basket with oil and add the chicken. Air fry for 20 minutes.
  • Meanwhile, stir together the melted butter, hot sauce, lime juice and garlic powder in a medium bowl. Pour half of the sauce into a small bowl to serve with the chicken.
  • Once chicken has air fried for 20 minutes, remove it from air fryer and place it in the medium bowl with the buffalo sauce. Toss to coat and return the chicken to the air fryer. Air fry for another 5 minutes at 400 degrees.
  • Serve with set aside sauce, celery sticks, and blue cheese dressing.

¼ cup cayenne pepper sauce (such as Frank's® RedHot®)
½ teaspoon sea salt
½ teaspoon ground black pepper
½ teaspoon celery seed
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon pink curing salt
2 tablespoons cayenne pepper sauce (such as Frank's® RedHot®)

Steps:

  • Combine ground chicken, 1/4 cup cayenne pepper sauce, sea salt, pepper, celery seed, garlic powder, onion powder, and pink curing salt in a large bowl; mix until evenly combined. Cover and refrigerate for 8 hours, or overnight.
  • Use a jerky gun to form sticks of the meat mixture on air fryer oven racks.
  • Preheat the air fryer to 160 degrees F (70 degrees C).
  • Place racks into the air fryer and set timer for 2 hours. Flip the sticks over using a fork. Brush remaining 2 tablespoons cayenne pepper sauce over the tops. Air fry for 30 minutes more.
  • Let cool completely and transfer to an airtight container.

1 tablespoon olive oil
⅔ cup cayenne pepper sauce
½ cup butter
2 tablespoons vinegar
1 teaspoon garlic powder
¼ teaspoon cayenne pepper

Steps:

  • Preheat an air fryer to 360 degrees F (182 degrees C).
  • Place wings in a large bowl. Drizzle oil over wings and massage until chicken is evenly coated.
  • Place 1/2 the wings in the air fryer basket and cook for 25 minutes. Use tongs to flip wings and cook 5 minutes more. Transfer cooked wings to a large bowl. Repeat with remaining wings.
  • While second batch is cooking, combine hot pepper sauce, butter, vinegar, garlic powder, and cayenne pepper in a small saucepan over medium heat. Stir and keep warm until wings are done.
