This garlic and herb "roasted" cauliflower is a is a breeze to prepare, and it cooks in the air fryer in just 10 minutes.

1 medium head cauliflower (1 1/2 pounds, about 6 cups raw)
1 1/2 tablespoons olive oil (or use olive oil spray)
2 cloves garlic, pressed or smashed and minced
1/2 teaspoon Italian herb blend
1/2 teaspoon kosher salt (or to taste)
1/4 teaspoon ground black pepper (or to taste)
Optional: 2 tablespoons grated Parmesan
Optional Garnish: 2 teaspoons chopped parsley

Steps:

  • Gather the ingredients. Preheat the air fryer to 400 F.
  • Cut the cauliflower into equal-sized florets. Wash under cold running water and let it dry thoroughly. Transfer to a large bowl.
  • Add the olive oil, garlic, herbs, salt, and pepper to the cauliflower. Toss to coat evenly.
  • Place the seasoned cauliflower in the air fryer basket.
  • Set the fryer to cook for 10 minutes. Shake the basket every 2 to 3 minutes so the florets cook evenly. Check for tenderness with a fork-larger pieces may take a little longer. If desired, add 2 tablespoons of Parmesan cheese to the cauliflower and continue cooking for 1 or 2 additional minutes. Taste and adjust the seasonings with more salt and pepper, if necessary.
  • Transfer the cooked cauliflower to a serving bowl, then garnish with parsley and extra Parmesan cheese, if desired.

1 tablespoon lemon juice
½ teaspoon oregano
½ teaspoon salt
⅛ teaspoon ground black pepper
1 small head cauliflower, cut into florets
¼ cup Mediterranean-flavored crumbled feta (such as Athenos®)

Steps:

  • Preheat an air fryer to 375 degrees F (190 degrees C).
  • Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  • Place cauliflower florets into a large resealable bag. Drizzle with oil mixture, then shake gently to lightly coat evenly. Transfer cauliflower to the air fryer basket in a single layer, working in batches if necessary.
  • Air-fry cauliflower, shaking basket every 4 to 5 minutes, until cauliflower is browned and edges are crispy, 12 to 15 minutes total. Place hot cauliflower in a serving bowl and top with feta cheese; toss gently to combine.

1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon salt
1 teaspoon baking powder
3/4 cup club soda
1 medium head cauliflower, cut into 1-inch florets (about 6 cups)
SAUCE:
1/4 cup orange juice
3 tablespoons sugar
3 tablespoons soy sauce
3 tablespoons vegetable broth
2 tablespoons rice vinegar
2 teaspoons sesame oil
2 teaspoons cornstarch
2 tablespoons canola oil
2 to 6 dried pasilla or other hot chiles, chopped
3 green onions, white part minced, green part thinly sliced
3 garlic cloves, minced
1 teaspoon grated fresh gingerroot
1/2 teaspoon grated orange zest
4 cups hot cooked rice

Steps:

  • Preheat air fryer to 400°. Combine flour, cornstarch, salt and baking powder. Stir in club soda just until blended (batter will be thin). Toss florets in batter; transfer to a wire rack set over a baking sheet. Let stand 5 minutes. In batches, place cauliflower on greased tray in air-fryer basket. Cook until golden brown and tender, 10-12 minutes., Meanwhile, whisk together first 6 sauce ingredients; whisk in cornstarch until smooth., In a large saucepan, heat canola oil over medium-high heat. Add chiles; cook and stir until fragrant, 1-2 minutes. Add white part of onions, garlic, ginger and orange zest; cook until fragrant, about 1 minute. Stir orange juice mixture; add to saucepan. Bring to a boil; cook and stir until thickened, 2-4 minutes., Add cauliflower to sauce; toss to coat. Serve with rice; sprinkle with thinly sliced green onions.
