1/2 cup plain Greek yogurt
2 tablespoons maple syrup
2 to 3 teaspoons minced chipotle peppers in adobo sauce
1/8 teaspoon plus 1/2 teaspoon salt, divided
1 medium pie pumpkin
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine yogurt, maple syrup, chipotle peppers and 1/8 teaspoon salt. Refrigerate, covered, until serving., Preheat air fryer to 400°. Peel pumpkin; cut in half lengthwise. Discard seeds or save for toasting. Cut into 1/2-in. strips. Transfer to a large bowl. Sprinkle with remaining 1/2 teaspoon salt, garlic powder, cumin, chili powder and pepper; toss to coat., In batches, arrange pumpkin on greased tray in air-fryer basket. Cook until just tender, 6-8 minutes. Toss to redistribute; cook until browned and crisp, 3-5 minutes longer. Serve with sauce.

You can have crispy, salty pumpkin seeds ready in just 30 minutes thanks to the air fryer. They are delicious plain, but also great with your favorite seasonings. Toss the seeds with a generous coating of ranch seasoning, chili powder or sumac, for instance, just before air frying them.

1 medium pumpkin (about 10 pounds, for about 1 cup pumpkin seeds)
1 teaspoon olive oil
1/2 teaspoon kosher salt

Steps:

  • Preheat a 6-quart air fryer to 360 degrees F.
  • Cut a 10-inch circle in the top of the pumpkin and remove the top. Scrape out the pulp and seeds with a large spoon and transfer to a bowl. Separate the seeds from the stringy pulp, then rinse the seeds in a colander under cold water. Shake the seeds dry; it's okay if they're damp so don't blot them with paper towels (they will stick to the paper).
  • Toss together the pumpkin seeds, olive oil and salt in a clean bowl. Transfer to the air fryer basked in a single layer and cook, shaking the basket every 5 minutes, until lightly golden and crispy, about 15 minutes. Cool before serving.

1/2 Medium Sugar Pumpkin or Pie Pumpkin. Regular pumpkin will do as well.
2 tablespoons Avocado oil
1/2 teaspoon coarse sea salt
1/2 teaspoon garlic powder/onion powder
1/2 teaspoon seasoning of choice. I used Trader Joe's BBQ Rub and seasoning with coffee and garlic.
1/2 teaspoon Salt-free veggie blend.
1/2 teaspoon cinnamon powder

Steps:

  • Using a sharp knife, cut the pumpkin in half. Scoop out the seeds and pulp. Cut pumpkin into French fry slices. I use this 7" Ultra-sharp Chef knife. In a separate bowl mix oil with seasoning Rub the seasoning blend onto pumpkin fires. I suggest using a container or zip-lock bag to shake the raw pumpkin slices with oil and seasoning blend. Next, place the slices in the fryer basket Spread them out on the cooking sheet so they don't overlap. Air fry in a preheated air fryer oven at 390 F/ 190C for 12 minutes or until beautifully golden browned with a caramelized look. Flip halfway (6 minutes per side) Bon Appétit!

And it doesn't get more classic than French fries; the generally accepted technique is pretty, dare I say, airtight, at this point, but I do have one extra trick in store! Finally, dip them in honey mustard, spicy ketchup, garlic aioli, or all 3 mixed together, like I did.

1 pound russet potatoes, peeled
2 teaspoons vegetable oil
1 pinch cayenne pepper
½ teaspoon kosher salt

Steps:

  • Cut each potato lengthwise into 3/8-inch-thick slices. Slice sections into sticks also about 3/8 inch-wide.
  • Cover potatoes with water and let soak for 5 minutes to release excess starches. Drain and cover with boiling water by a few inches (or place in a bowl of boiling water). Let sit for 10 minutes.
  • Drain potatoes and transfer onto some paper towels. Blot off the excess water and let cool completely, at least 10 minutes. Transfer into a mixing bowl; drizzle with oil, season with cayenne, and toss to coat.
  • Preheat the air fryer to 375 degrees F (190 degrees C). Stack potatoes in a double layer in the fryer basket. Cook for 15 minutes. Slide basket out and toss fries; continue frying until golden brown, about 10 minutes more. Toss fries with salt in a mixing bowl. Serve immediately.

3/4 cup sugar
1/2 cup semolina flour
1 tablespoon pumpkin pie spice
1 teaspoon ground cloves
1/4 teaspoon baking powder
1/2 cup canned pumpkin
1 large egg, room temperature
1 tablespoon butter, melted

Steps:

  • In a large bowl, whisk the first 6 ingredients. In another bowl, beat pumpkin, egg and butter until blended. Stir into dry ingredients to form a soft dough., Turn dough onto a floured surface; knead until smooth, about 12 times. Cover and let rest 15 minutes. Divide dough into 4 portions.
