These are salmon fillets in a tasty, tangy sauce with a little heat! Serve with rice and a simple stir-fry of baby corn, shiitake mushrooms and snow peas.

8 (4 ounce) fillets salmon
½ cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced
1 ½ teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
½ teaspoon salt

Steps:

  • Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
  • Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.
  • Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.

4 salmon fillets, each weighing 7 ounces
Salt and pepper
Flour for coating
2 tablespoons olive oil
2 tablespoons butter
2 1/2 ounces air-dried Serrano ham
1/4 cup fish stock
1/2 cup sidra or apple cider

Steps:

  • Rinse the salmon fillets, pat them dry, and season with salt and pepper. Turn them in the flour and shake off any excess. Heat the olive oil and butter in a skillet and fry the salmon for about 5 minutes on each side on a medium heat. Lift from the skillet and keep warm. Cut the ham into fine strips and fry it in the oil. Deglaze the skillet with the fish stock and sidra and leave it to reduce by at least half. Place the salmon fillets on a preheated serving dish and pour over the sauce. Serve with small roasted Yukon Gold potatoes in their skins and thick-sliced broiled beefsteak tomatoes, accompanied by sidra or light wine.

alaska salmon steaks or fillets, thawed if necessary
1/4 cup peanut oil
2 tablespoons soy sauce
2 tablespoons balsamic vinegar
2 tablespoons chopped green onions
1 1/2 teaspoons brown sugar
1 garlic clove, minced
3/4 teaspoon grated ginger
1/2 teaspoon red chili pepper flakes (or more to taste)
1/2 teaspoon sesame oil
1/8 salt

Steps:

  • Place salmon steaks or fillets in a glass dish. Whisk together remaining ingredients and pour over salmon. Cover with plastic wrap and marinate in refrigerator 4-6 hours. Remove salmon from marinade and place on a well-oiled grill 5 inches from coals.
  • Grill for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes when tested with a fork. Turn halfway through cooking.
