- Preheat oven to 350°. In a Dutch oven, heat butter over medium-high heat. Add onion and garlic; cook and stir until tender, 2-3 minutes. Stir in flour, white pepper and salt until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2 minutes., Stir in 1 cup cheese. Reduce heat; cook until cheese is melted (sauce will be thick), 1-2 minutes. Remove from heat., Add potatoes, ham and broccoli to sauce; stir gently to coat. Transfer to 8 greased 8-oz. ramekins., Bake, covered, 40 minutes. Sprinkle with remaining cheese. Bake, uncovered, until potatoes are tender and cheese is melted, 20-25 minutes longer.

SCALLOPED POTATOES WITH HAM

Steps:
- Preheat oven to 350 degrees. Butter a baking dish.
- In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
- In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.
- Spread 1/3 of the white sauce in bottom of baking dish and top with half of the potatoes. Spread out half of the onions, ham, cheese and another third of the sauce. Season with salt and pepper. Continue layering ingredients, ending with the remaining cheese on top. Bake for 45 minutes or until golden and bubbly.
ALFREDO SCALLOPED POTATOES WITH HAM AND BROCCOLI
Although I love the traditional Ham and Scalloped Potatoes, y'all know I just can't leave well enough alone. I spun this snazzy version from one I had at a party years ago. It could easily be a main course .... or a side dish!

- Preheat oven to 400°F. Coat a 9x13-in. a baking dish with cooking spray and set aside.
- Whisk together the Alfredo and milk in a medium bowl. In a separate medium bowl, combine the ham, broccoli and 1 cup of the cheese.
- Layer half of the potatoes in the baking dish. Sprinkle with half of the Parmesan cheese. Season with salt and pepper. Top with half of the ham mixture. Spread one-third of the Alfredo mixture over the top. Repeat layers. Top the casserole with the remaining 1 cup of cheese. Pour the remaining Alfredo sauce over the top.
- Spray a piece of aluminum foil large enough to cover the dish with cooking spray and place sprayed side down over the casserole.
- Bake for 45 minutes. Reduce oven temperature to 350°F. Uncover dish. Continue to cook for 20-25 minutes or until the potatoes are tender. Let stand for 5 minutes before serving.

- Preheat oven to 375°. In a large saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, parsley, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes. , Combine potatoes, ham and onion; place half in a greased 2-1/2-qt. baking dish. - In a large bowl, combine the Alfredo sauce, milk and garlic powder. Pour a fourth of the mixture into a greased 13x9-in. baking dish. Layer with a fourth of the potatoes; sprinkle with 1 tablespoon Parmesan cheese, salt and pepper., In a large bowl, combine the turkey, broccoli and 1-1/2 cups Swiss cheese; spoon a third over potatoes. - Preheat the oven to 400 degrees. Mist a 9×13-inch (or other 3-quart) baking dish with nonstick cooking spray.
- In a Dutch oven, large pot, or extra-large skillet over medium-high heat, heat the coconut oil or butter until melted.
- Add the onion and frozen broccoli florets and cook until the vegetables are softened and tender, 4-5 minutes.
- Add the flour, tossing to coat the ingredients, and cook 1 minute more.
- Reduce the heat to low and add the milk, ½ to 1 cup at a time, whisking after each addition. Be patient and whisk slowly as you continue adding the milk until all is added. Stir in the salt, thyme, garlic powder, and pepper. Increase the heat to medium-high and allow the mixture to come to a boil for 1 minute. Remove from the heat.
- Add the frozen shredded potatoes, diced ham, and 1 cup of the cheese into the mixture, stirring until well incorporated.
- Transfer the mixture to the prepared baking dish and spread into an even layer. Top with the remaining ½ cup cheese.
- Bake for 30 minutes.
- After 30 minutes, turn the oven broiler to High and broil the casserole for 3-5 minutes, until the topping is browned, watching carefully so it doesn't burn.
- Garnish with sliced green onions, chives, or parsley.

- Preheat oven to 400°F.
- In a medium bowl, whisk the Alfredo sauce and milk until blended.
- Add ham, Swiss cheese and peas to another bowl and mix well.
- Grease a 9 x 13 inch baking dish and spread 3/4 cup of the Alfredo mixture over the bottom of the dish.

- Heat oven to 350 degrees; coat shallow 2-quart baking dish with nonstick cooking spray.
- Thinly slice potatoes.
- Reserve 1/4 cup cheese.
