- Cook bacon in a large skillet over medium-high heat until evenly browned, about 5 minutes per side. Transfer to a plate lined with paper towel to drain and cool.
- Cook sausage links in the same skillet until no longer pink in the center, 7 to 10 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Transfer to plate with the bacon to cool and drain.
- Drain most of the grease from the skillet and return to medium heat. Cook and stir eggs until scrambled and no longer wet, about 5 minutes; season with salt and pepper.
- Preheat oven to 350 degrees F (175 degrees C).
- Roll crescent roll dough out to cover bottom of a 9x13-inch baking dish.
- Bake dough until golden brown, about 10 minutes.
- Spread salsa in a layer onto the baked dough; top with the scrambled eggs. Crumble the bacon and sprinkle over the eggs. Slice sausage links and scatter evenly among the bacon crumbles. Top the entire pizza with Cheddar cheese.
- Bake in oven until cheese is melted and beginning to brown, about 10 minutes. Allow to cool 10 minutes before cutting to serve.

BACON AND POTATO FRITTATA WITH GREENS
This is a wonderful meal anytime of day or night. My grandfather used to make frittatas quite often. Instead of finishing a frittata under the broiler he would cook it halfway, put a plate on top of the pan, flip the pan over, and slide the frittata back into the pan to cook the other side. Sometimes a frittata would stick; other times the hot oil would drip on him as he performed this maneuver. It was during these moments that I learned all the really good Italian curse words I still use to this day.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Cook and stir bacon in a large oven-proof skillet over medium heat until evenly browned and crispy, about 10 minutes. Drain all but 1 teaspoon bacon grease from the skillet.
- Stir potato slices, water, garlic, red pepper flakes, salt, and black pepper into bacon; cover the skillet with a lid and cook until potatoes are tender, about 10 minutes.

- Place a pizza stone in the oven and preheat oven to 500°.
- Take potatoes out of bag and place in a colander. Rinse and drain well. Place potatoes in a clean dish towel and wring dry.
- Roll out pizza dough to a 10 - 12" round.
- Spread rolled out dough with 2/3 of the bacon jam.
- Top jam layer with one and a half cups of cheese.
- Top cheese with hash browns.
- Spread remaining cheese over hash browns.
- Make 4 small depressions in each quadrant of the pizza.
- Place 1 egg in each of the depressions.
- Dollop remaining bacon jam around top of pizza.
- Bake for 12 minutes, until egg white is cooked and yolk is runny.
- Note: Everyone's oven bakes differently. My oven is temperamental and takes longer to bake the eggs. Keep an eye on your eggs while they bake and adjust cooking time accordingly.

ONE PAN BREAKFAST POTATOES AND BACON

- BACON: Preheat the oven to 400 degrees F. Generously spray (with nonstick cooking spray) a very large sheet pan. Lay out 10 slices of bacon. Place in the oven and bake for 10-15 minutes or until bacon is at desired crispiness. Remove from the oven and using a metal spatula, transfer the bacon to a paper-towel lined plate. Set aside. Once the bacon has cooled off a bit, coarsely chop it and set aside.
- VEGGIES: Meanwhile, wash and prepare the veggies. Chop the red potatoes, peppers, and onion and then place the prepared veggies on the same sheet pan you used to cook the bacon on (don't discard the bacon grease!). Add the melted butter, salt, garlic powder, pepper, chili powder, paprika, cumin, and dried parsley. Toss well to ensure all the veggies are well coated and tossed in seasonings. Spread out the veggies so they aren't overlapping (this will cause veggies to steam not roast)
- BAKE: Bake for 15 minutes, toss the veggies with a metal spatula. Return to the oven for 15 more minutes. Remove and toss again. Return, once more for 5-10 minutes or until veggies are crisp tender.
- ENJOY: Remove from the oven. Sprinkle with a little more salt and pepper before serving if needed. Add the chopped bacon on top and, if desired, freshly chopped parsley. Enjoy hot!

This is an Idaho favorite, and especially my family's. We make it every time we have company (and I always receive compliments!). This is a recipe I created after eating the same style of pizza at one of the college pizza shops here in town.

- Place potato slices in a deep skillet and cover with 1 inch of water. Bring to a boil; reduce heat and simmer until just tender, about 5 minutes. Drain; set aside to cool.
- Place bacon slices in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; set aside to cool.
- Heat cream, butter, and garlic together in a small saucepan over medium heat, stirring occasionally, until butter is melted, about 5 minutes. Add Parmesan cheese; stir until melted. Reduce heat to low and simmer sauce, uncovered, until thick, about 5 minutes.
- Preheat oven to 425 degrees F (220 degrees C). Grease 2 pizza pans.
- Combine warm water, honey, and yeast in a large bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Stir oil into yeast mixture. Mix in flour, 1 cup at a time, until dough starts to come together. Turn out dough onto a well-floured surface. Knead, adding more flour as you work, until dough is no longer sticky. Divide dough into 2 pieces and roll out to the size of your pizza pans; transfer to greased pans.
- Bake in the preheated oven until crusts are lightly golden, about 5 minutes. Remove from oven and spread sauce over both crusts. Cover sauce with potato slices. Crumble bacon slices over potatoes and cover with mozzarella cheese.
- Bake pizzas in the preheated oven until crusts are golden brown and cheese is bubbly, about 10 minutes.
