This is a German salad that has been passed down through the generations. Good with 'Ruladen and Spaetzle' for a true German dinner.

Steps:
- Mix cucumbers and salt in a bowl; let sit for 1 hour. Drain cucumber in a colander, squeezing as much excess liquid as you can with your hands.
- Combine cucumbers and green onions in a bowl.
- Stir sour cream, vinegar, oil, and dill together in a small bowl; drizzle over cucumber mixture and toss to coat.

GURKENSALAT (GERMAN CUCUMBER SALAD)
A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

- Spread cucumbers and onion on a platter; season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers.
- Stir sour cream, sugar, vinegar, dill, and parsley together in a large bowl.
- Fold cucumber and onion slices into the sour cream mixture.
- Refrigerate 8 hours to over night; garnish with paprika to serve.

This traditional salad is served throughout Albania. It is often served as first course. Typically this salad has equal proportions of tomato and cucumber. The rest of the ingredients are stictly added based on personal preference. I got this recipe from some missionaries that have lived in Albania for a long time.
