PERFECTLY FLAKY PIE CRUST



Perfectly Flaky Pie Crust image

Yield about 1 pound dough (enough for 1 (9 to 10-inch pie dish))

Number Of Ingredients 6

1 3/4 cups all-purpose flour
2 teaspoons granulated sugar
3/4 teaspoon table salt
6 tablespoons cold unsalted butter, small dice
1/4 cup shortening
7 to 8 tablespoons ice water

Steps:

  • In a large bowl, mix together flour, salt, and sugar until well combined. Using clean hands, add butter and toss until just coated. Rub butter between thumb and forefingers to incorporate into flour mixture until butter is in lima bean-sized pieces and comes together in quarter-sized clumps when squeezed in palm, about 2 minutes. Add shortening, toss until just coated in flour, then rub into flour mixture until mixture forms pea-size pieces (some big chunks should remain) and comes together in fist-sized clumps when squeezed, about 1 minute. Drizzle in half ice water and rake through mixture with fingers until just moistened. Drizzle in remaining water 1 tablespoon at a time and comb through mixture with fingers to moisten. It will go from being a shaggy mess to coming together. Dough is moist enough when it is moistened through but is not wet when pressed. (Do not overwork the dough or it will become tough.)
  • While rotating the bowl with 1 hand, push dough between other palm and side of bowl to gather into a ball. Turn dough onto a piece of plastic wrap, press it into a flat disk, then close in wrap. Place in coldest part of refrigerator (usually back bottom shelf) at least 30 minutes before rolling out and forming into a crust.

3 tablespoons solid vegetable shortening, chilled, cut into small pieces
4 tablespoons (or more) ice water

Steps:

  • Blend the flour, sugar, and salt in a food processor. Add the butter and shortening; pulse until the mixture resembles coarse meal. Drizzle 4 tablespoons ice water over the mixture. Process just until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather the dough into a ball and flatten into disk. Wrap in plastic. Chill 1 hour. Use the dough with your favorite pie recipe.
  • Roll out the dough on a lightly floured work surface into a 14-inch round. Transfer the dough to a 9-inch diameter glass pie dish. Fold the overhang under. Crimp the edges decoratively. Pierce the bottom of the crust all over with a fork. Freeze the crust for 15 minutes. (Can be made 1 day ahead. Keep frozen.)
  • For recipes that call for a pre-baked pie crust: Preheat the oven to 375 degrees F. Line the crust with aluminum foil. Fill with pie weights or dried beans. Bake for 20 minutes. Remove the weights and foil. Bake until golden and set, about 10 minutes. Cool. (Crust can be made 1 day ahead. Wrap tightly with plastic wrap. Let stand at room temperature.)

¼ teaspoon salt
½ cup shortening, chilled
3 tablespoons ice water

Steps:

  • Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.
  • Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.
  • Roll out dough, and put in a pie plate. Fill with desired filling and bake.

Another great recipe from my 5th grade teacher/ranch cook. This is an old fashioned recipe that calls for lard which you can find in most baking isles at the store. Do not substitute because that gives it the crusts flaky texture. It will remind you of grandma's.

2 cups lard
1 tablespoon sugar
1 teaspoon salt
1 egg
1 tablespoon vinegar

Steps:

  • Put the egg and vinegar in a 1 c measuring cup fill to top with water.
  • Mix all dry ingredients and make a well in the center.
  • Pour liquids into well and mix with pastry fork just till flour is blended.
  • Store in ziplock in fridge till ready to use.
  • This also freezes well.

Yield Makes two 10-ounce balls of dough, enough for 1 double-crusted pie or 2 single pie shells

Number Of Ingredients 6

6 tablespoons ice-cold water
2 cups unbleached all-purpose flour
1/2 teaspoon salt
A pinch of sugar
12 tablespoons (1 1/2 sticks) chilled unsalted butter, cut into 1/4-inch cubes
3 tablespoons chilled lard

Steps:

  • Have ready in a measuring cup: 6 tablespoons ice-cold water
  • Mix together: 2 cups unbleached all-purpose flour 1/2 teaspoon salt A pinch of sugar
  • Add: 12 tablespoons (1 1/2 sticks) chilled unsalted butter, cut into 1/4-inch cubes 3 tablespoons chilled lard
  • Using a pastry blender or your fingertips, quickly work the butter and lard into the flour mixture until most of the fat has been broken into small pieces but there are still a few large flakes. Don't try to make the mixture look uniform.
  • Dribble in the tablespoons of ice water, mixing and tossing the dough with a fork. Don't try to force the dough into a ball, just keep adding water until it starts to cling together in clumps. After all the water has been added, check for dry dough mixture in the bowl and add drops of water to moisten.
  • Collect the dough and press it together into two balls. Shape the balls into plump cakes, making the edges as smooth as possible, and wrap in plastic. Press down on the plastic lightly to compress the dough. Refrigerate the dough for several hours before using to allow the gluten to relax and the flour to fully absorb the water. Dough may be stored in the refrigerator for 2 days or in the freezer for 1 or 2 months. Thaw frozen dough overnight in the refrigerator before using.

2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup shortening

5 to 6 tablespoons 2% milk

Steps:

  • In a small bowl, combine the flour and salt; cut in shortening until mixture is crumbly. Sprinkle with vinegar. Gradually add the milk, tossing with a fork until a ball is formed. Cover and refrigerate for 30 minutes or until easy to handle. , For a single crust, roll out pastry on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry 1/2 in. beyond edge of plate; flute edges. Fill or bake shell according to recipe directions., For a double crust, divide pastry in two portions so that one ball is slightly larger than the other. Roll out larger ball on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge of plate. Add filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top. Bake according to recipe directions.

Yield Makes about 30 crepes

Number Of Ingredients 11

2 cups milk
1/4 teaspoon salt
1/2 teaspoon sugar
4 tablespoons unsalted butter, plus more for pan and serving
1 1/4 cups all-purpose flour
1 tablespoon grapeseed oil, or vegetable oil
3 large eggs
1/2 cup beer
Alice's Raspberry Jam
Freshly squeezed lemon juice, for serving
Sugar, for serving

Steps:

  • In a medium saucepan, heat milk, salt, sugar, and butter until butter has melted. Let cool to room temperature.
  • Place flour in a medium bowl. Make a well in the center, and add oil and eggs. Beat until the batter is too stiff to beat and is smooth, 2 to 3 minutes. Add the milk mixture little by little, beating until smooth. Strain the batter through a fine sieve, and then whisk in beer. Chill overnight.
  • Heat a crepe pan over medium-high heat until a drop of water sizzles in the pan. (The first crepe may stick a little if your pan is not heated to the proper temperature.) Rub the pan with a little butter, wiping out the excess with a paper towel. Ladle a thin layer of the batter (about 2 tablespoons) into the center of the pan, tilting and rotating the pan to cover the bottom as thinly and evenly as possible. Lightly brown the first side for 1 to 2 minutes. Gently flip the crepe over, and brown the other side for about a minute. Turn out onto plastic wrap. The crepes may be covered and kept at room temperature for a few hours or refrigerated for up to two days. To reheat crepes, place in a covered baking dish, and transfer to an oven heated to 400 degrees until heated through.
  • To serve, spread warm crepes with jam or butter. Drizzle lemon juice over the butter, and sprinkle with sugar. Fold into quarters, and serve immediately.

1/3 cup vegetable oil
1/4 cup ice water

Steps:

  • In a medium bowl, mix flour and salt.
  • Add oil and water all at once to flour.
  • With a fork, stir until mixture holds together.
  • Shape dough into a ball and flatten.
  • Roll between two pieces of wax paper to a 12" diameter.
  • Peel off one piece of wax paper and invert dough, paper side up, into a 9" pie plate.
  • Peel off second piece of paper. Ease an fit pastry into plate. Trim and flute edges.
  • NOTE: DO NOT pierce pie crust. Fill as desired and bake according to pie recipe.
