2 cups chopped onion
2 cans (16 ounces each) chili beans, undrained
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
4 teaspoons chili powder
2 teaspoons paprika
1 teaspoon pepper
1 teaspoon salt
1/4 teaspoon garlic powder
Chopped green pepper
Shredded cheddar cheese

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Add the beans, soup and seasonings; bring to a boil. , Reduce heat; cover and simmer for 15 minutes or until thick and bubbly. Garnish with green pepper and cheese.

  • Stir in pinto beans, onions, diced tomatoes, Mexican-style stewed tomatoes, water, brown sugar, chili powder, vinegar, mustard, salt, and black pepper; bring to a boil. 6 dried ancho chiles, stems and seeds removed
2 dried chipotle chiles, or substitute canned chipotle chiles and forgo soaking them
2 tablespoons vegetable oil or rendered bacon fat
1 medium yellow onion, quartered
4 cloves garlic, chopped
2 pounds ground beef chuck, preferably coarsely ground passed through the large holes of a grinder only once
4 dried pequin chiles or ¼ teaspoon cayenne pepper
1 tablespoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
Salt
pepper
2 teaspoons masa harina, or as needed
2 tablespoons lime juice
Grated Cheddar cheese, for garnish
Diced onions, for garnish
Pickled jalapeños, sliced, for garnish
Sour cream, for garnish
Fritos, for serving, optional

Steps:

  • In a large heavy skillet, heat the dried ancho and chipotle chiles on medium-high heat about a minute on each side. Turn off the heat, cover the chiles with water and soak them until rehydrated, about 30 minutes.
  • Meanwhile, in a Dutch oven or other large pot over medium heat, heat 1 tablespoon vegetable oil or bacon fat. Add the onions and sauté until they start to brown, about 10 minutes. Add the garlic and cook for 30 more seconds. Transfer to a blender.
  • Form the ground beef into balls the size of marbles. Return the Dutch oven to medium heat, add 1 tablespoon vegetable oil or bacon fat and, when it is hot, add the meatballs. Stir occasionally until lightly browned, about 10 minutes, then remove from the heat.
  • Drain the chiles well, and remove and discard stems and seeds. Add the chiles to the blender. Add the canned chipotles, if using, pequin chiles or cayenne, cumin, oregano, cloves, cinnamon and 1 cup water. Blend until smooth. Add to the Dutch oven with the browned meatballs along with 4 cups water. Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally.
  • Adjust salt and pepper to taste. If the chili looks too thin, slowly stir in the masa harina. Add the lime juice, and simmer for 15 minutes more. Serve topped with grated cheese, diced onions, pickled jalapeños and sour cream. Or serve as Frito pie: For each serving, mound 1 cup Fritos in a bowl and top with 1 cup chili, ¼ cup grated cheese, 1 tablespoon diced onions, sliced jalapeños and sour cream.

1 lb ground beef (or chuck or sirloin)
1 lb ground sausage (mild, don't use hot unless you like el scorcho chili)
6 tablespoons extra virgin olive oil
2 medium onions
3 large green peppers
3 stalks celery
3 tablespoons roasted garlic, puree
4 tablespoons chili powder
1 tablespoon flour
2 tablespoons Worcestershire sauce
2 (28 ounce) cans diced tomatoes
1 (40 ounce) can red kidney beans
1 teaspoon salt
1 tablespoon oregano
1 tablespoon red wine vinegar
2 tablespoons brown sugar

Steps:

  • Coarse chop onions and sauté in 4 tbs olive oil until caramelized in a 6 quart cooking pot.
  • While onions are cooking coarse chop peppers and celery and place in bowl.
  • Remove onions from pot (leaving oil) to bowl with peppers/celery; set aside.
  • Add 2 tbs olive oil to pot.
  • Combine chili powder and flour in small bowl and once well blended add to oil in pot.
  • Add 2 tbs Worcestershire sauce and stir until smooth.
  • Add Beef and Sausage to pot and stir until combined and well coated with sauce.
  • Continue cooking over medium heat until browned.
  • Add both cans of tomatoes to meat in pot and bring to light boil over medium heat.
  • Add beans, pepper/celery/onion mixture, garlic, and all seasonings to pot and stir.
  • Cover and reduce heat to lowest setting.
  • Cook over low heat for at least four hours or up to 8 hours.
  • In final hour of cooking remove cover and increase heat slightly to reduce liquid.
  • Once chili reaches desired consistency replace cover and reduce heat back to low.
  • Serve with side bowls of sour cream and shredded cheese (cheddar, or a good mix) and crackers.

Like most mothers, my mom had dishes that we could count on having any given week. One of the most loved was certainly her chili--it was meaty, comforting and full of spice. In our house, ground turkey was the go-to for burgers, spaghetti and chili alike. The addition of chorizo to the rich tomato base heightened with red chile sauce gives my mom's version a nuanced taste not often found in many chilis. The final extra-special touch comes from the chili con carne seasoning brick. It adds a layer of creaminess that makes every bite feel like a hug in your mouth.

2 tablespoons olive oil
1 white onion, minced
Kosher salt
4 to 6 garlic cloves, minced
1 to 2 canned chipotle peppers, chopped
2 tablespoons tomato paste
1 pound ground turkey (ground beef is okay too)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon ground cumin
1 tablespoon ancho chile powder
Freshly ground black pepper
One 11-ounce package beef chorizo
One 16-ounce package refrigerated chili base or brick, such as XLNT Chili Con Carne (see Cook's Note)
One 10-ounce can red chile sauce, such as Las Palmas
One 8-ounce can tomato sauce
One 14.5-ounce can crushed tomatoes
One 15-ounce can chili beans
Sour cream, avocado, Cotija, Cheddar, green onions and corn chips, such as Fritos, for topping

Steps:

  • In a large skillet over medium to medium-high heat, add the oil. Once the oil is shimmering, add the onions and season with pinch of salt. Cook until the onions are translucent, 3 to 5 minutes. Add the garlic, chipotle peppers and tomato paste and sauté until fragrant, about 1 minute. Add the turkey, breaking the meat down using a spatula. Add the dried seasonings--the garlic powder, onion powder, paprika, cumin and ancho chili powder--and 1 to 1 1/2 teaspoons each salt and pepper and mix as you break the meat down more using the spatula. Allow this to cook until all of the meat is browned, 6 to 7 minutes. Transfer the cooked turkey to a medium bowl and set aside.
  • Using the same skillet (don't worry about cleaning the skillet out; it's okay for those flavors to also mesh with the chorizo), add the beef chorizo and cook until browned, about 5 minutes. Remove the skillet from the heat and set aside.
  • In a large pot, add the chili base, chile sauce and tomato sauce over medium to medium-low heat. Let the brick break down completely, then add the meat mixture and cooked chorizo to the pot. Next, add the crushed tomatoes and chili beans with their liquid and allow to cook until the beans and tomatoes are heated through and the flavors are combined, 30 to 35 minutes over medium to low heat. Serve with sour cream, avocado, Cotija, Cheddar, green onions and corn chips for topping!

This is my main Chili recipe, it takes less than 1 hour to cook from 'start to devour'. So this is a GREAT weekday dinner, weekend lunch or an entertaining recipe. It will serve 6-8 so you can split it up and freeze half for another time, or serve it to friends like I did with homemade cornbread and red wine! Everyone went back for a second helping (of the Chili and wine ha ha).

1 lb lean ground beef (90% lean or above, you can use frozen)
1 (15 ounce) can beans, of choice (I use Navy or Pinto beans but any canned bean is fine)
1 (15 ounce) can white corn (you can use yellow, or frozen corn)
1 (15 ounce) can tomato sauce
1 (15 ounce) can of 'fire roasted' diced tomatoes (this helps make the chili taste like it was cooked for hours)
1 1/2 cups low sodium beef broth
1/4 cup salted butter (it's ok, the beef is lean, deal with it)
6 stalks celery
1 large onion
1/2 teaspoon black pepper
1/2 teaspoon garlic salt
1/2 teaspoon red chili pepper flakes (optional, does not make chili crazy spicy)
1/4 teaspoon cumin
1/4 teaspoon nutmeg
1 teaspoon paprika
2 tablespoons chili powder (seems like a lot but trust me)
3 milk chocolate, hershey kisses

Steps:

  • chop the celery and onion and place it in pot with 1/2 stick of butter, black pepper, and garlic salt. Cook it down on medium high until the onions start to look clear.
  • add the 1 1/2 cups of low sodium beef broth and 1 lb lean ground beef and bring pot to a medium boil. Allowing the beef to boil a couple minutes really breaks it down to a fine texture (with your help stirring).
  • lower the temp to a simmer and add the cumin, nutmeg, paprika, red pepper flakes, chili powder, tomato sauce, and fire roasted diced tomatoes (with juice).
  • drain and rinse the cans of beans and corn, then add them to the pot and stir well.
  • add 3 milk chocolate Hershey Kisses and stir until they are completely melted (this adds a subtle, unique but delish flavor - plus it is now definitely made with love).
  • cover and simmer on low for 15-30 minutes, stir on occasion.
  • serve in bowl with the toppings of your choice and enjoy!
