- For the chicken wings: Combine the apple cider, salt, brown sugar, peppercorns, juniper berries, chile flakes, garlic, bay leaves, cinnamon sticks and rosemary in a medium saucepan. Whisk over medium heat until the salt and sugar are dissolved and the liquid is hot but not boiling, 3 to 4 minutes. Put 2 heaping cups of ice in a large bowl and pour the brine over. Whisk until cooled completely. Add the chicken wings, cover with plastic wrap and chill in the refrigerator for a few hours.
- Combine the granulated garlic, onion powder, oregano, smoked paprika and 1 1/2 teaspoons salt in a small bowl and stir to combine.
- Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment paper and then top with a wire cooling rack. Line a second baking sheet with paper towels.
- Remove the wings from the brine and transfer them to the baking sheet with paper towels. Discard the brine. Dry the wings well with the paper towels. Coat the dried wings with the oil and rub with the seasoning mix.
- Lay the chicken wings in a single layer on the prepared baking sheet. Bake until golden brown, crispy and the chicken is cooked through, about 45 minutes, rotating the baking sheet once halfway through the cooking time.
- For the apple hot sauce: Melt the butter in a medium saucepan pan over medium heat. Add the maple syrup, apple cider and hot sauce. Toss the wings in enough sauce to coat them generously. Serve the wings immediately with the remaining apple hot sauce and ranch dressing, carrot sticks and celery sticks.
FIERY CHICKEN WINGS RECIPE BY TASTY

- Preheat the oven to 350ºF (180˚C). Line a baking sheet with parchment paper.
- Season the wings all over with salt and pepper and set on the prepared baking sheet.
- Bake the wings until the internal temperature reaches 165ºF (74˚C), about 20 minutes.
- Heat 1 inch of canola oil in a large pot over medium heat until it reaches 350ºF (180˚C).
- While the oil heats, make the wing sauce. In a medium skillet, gently melt the butter over medium heat. Once melted, add the lime juice, garlic, honey, and Fiery spice blend. Bring to a simmer, whisking to combine. Cook until the sauce comes together and thickens slightly, about 3 minutes.
- Make cornstarch slurry: stir together cornstarch and cold water, breaking up any clumps, you should be left with a milk like consistency. Whisk cornstarch slurry into the sauce, bring up to a low boil, whisking continuously until thickened. Season with salt to taste. Remove the sauce from the heat and set aside.
- Working in batches, carefully lower 4-6 wings at a time into the hot oil. Fry for 2-3 minutes, until the skin is golden brown and crispy. Repeat with the remaining wings.
- In a large bowl, toss 4-6 wings at a time with ¼-⅓ cup of the sauce until well coated. Repeat with the remaining wings.
- Garnish the wings with cilantro, lime zest, and a pinch of Fiery spice blend, if desired. Serve hot.

- Season wings with salt and pepper, then dredge in flour and cornstarch. Deep fry until done and crispy. Toss in hot wing sauce.
- In saute pan over medium heat, saute onions in oil for 4 minutes then add garlic. Cook 1 minute more. Add 2 cups chicken stock and ketchup, bring to a simmer. Mix remaining 1/4-cup stock and cornstarch together and whisk into saucepan to thicken. Now add Cheryl's Hot Sauce to desired heat, sugar, and salt, to taste.
- To a blender, add peppers and 1 cup of vinegar and puree. Add remaining vinegar, if needed. Stir in pimento seeds. Store in a bottle or jar in refrigerator.
SPICY AND TANGY HOT WINGS
This is my wing recipe that I've tweaked over the last 10 years to suit my specific tastes. If you don't like vinegar and cayenne; these wings will not be for you. I've never seen a middle ground with this recipe; they are either raved about or politely passed up. If you like a hotter wing experience, double the amounts of chili powder and cayenne powder. Enjoy with chunky blue cheese or ranch dressing.

- In a large bowl, mix together the red wine vinegar, malt vinegar, salad dressing, hot pepper sauce, 1 tablespoon chili powder, cayenne pepper, black pepper, garlic, oregano and horseradish.
- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C). In a separate bowl, mix together the flour and 3 tablespoons of chili powder. Dredge the wings in the seasoned flour.
- Deep fry the wings for about 15 minutes, or until dark brown but not burnt. Drain briefly, then throw them into the bowl with the sauce. Stir to coat liberally. If you enjoy a hotter rather than tangy wing, liberally dash more hot pepper sauce onto the already sauce-coated wings.

- Place wings in a large glass bowl. Sprinkle 1 1/2 tablespoons garlic powder, 1 tablespoon onion powder, 1 tablespoon paprika, 1 tablespoon chili powder, 1 tablespoon cumin, sazon seasoning, and 1 teaspoon cayenne pepper over chicken wings and rub spices into wings to coat completely. Cover the bowl with plastic wrap and refrigerate, 1 hour to overnight.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
- Melt butter in a saucepan over medium heat; whisk hot sauce and syrup into butter. Add brown sugar, 1 1/2 tablespoons garlic powder, 1 tablespoon cumin, 1 tablespoon onion powder, 1 tablespoon paprika, 1 tablespoon chili powder, and 3/4 teaspoon cayenne pepper; whisk until well-combined and the sauce is hot, 2 to 3 minutes. Remove from heat.
- Pour flour into a shallow bowl. Gently press the chicken wings into the flour to coat and shake off any excess.
- Working in batches, cook wings in hot oil until the skin is golden and crispy, the meat is no longer pink at the bone and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Transfer wings to a plate lined with a paper towel to drain excess oil.
- Dip each chicken wing in the hot sauce mixture and place on the prepared baking sheet.

BIRD'S SWEET AND FIERY CHIPOTLE STICKY WINGS
I created this fiery sauce with a sweet orange overtone for wings, but it goes great with pork chops or chicken breast nuggets too. - SAUCE: Using a small food processor or an immulsion blender, mix all ingredients well and set aside.
- WINGS: Place one oven rack 4-6 inches from heat source, and the other in the center. Preheat oven to broil setting. Place wings on a baking sheet and sprinkle with salt and black pepper. Broil 4-6 inches from heat for 3 minutes per side, or until browned (being careful not to burn them).
- Switch your oven from Broil to bake 350°F Remove wings from broiler and place them into a 9x13" pan. Add sauce and mix well to coat the wings (It's a good idea to use a disposable pan, or cover it in foil to make cleanup easier).
- Bake for 20 minutes, turn wings over and use a spoon to baste with sauce. Return to oven and bake an additional 15 minutes.
- Sprinkle wings with brown sugar and bake an additional 5-10 minutes. Remove from oven and immidiately drizzle with a bit more honey, and serve with ranch dressing.
