½ pound dried apricots
½ cup brown sugar
½ cup flaked coconut
½ (14 ounce) can sweetened condensed milk
1 cup flaked coconut for rolling

Steps:

  • Mince apricots in a food processor. Place in a bowl and toss with brown sugar. Stir in 1/2 cup coconut and condensed milk. Shape into 1 inch balls and roll in coconut. Keep refrigerated.

2 cups white baking chips, divided
1/2 cup butter, softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup apricot jam
1/2 cup sliced almonds

Steps:

  • Preheat oven to 325°. In a microwave, melt 1 cup chips; stir until smooth. Set aside. , In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in melted chips and vanilla. Gradually beat in flour. Spread half of the batter into a greased 8-in. square baking dish. Bake 15-20 minutes or until golden brown. Spread with jam., Stir remaining chips into remaining batter. Drop by tablespoonfuls over jam; carefully spread over top. Sprinkle with almonds. Bake 30-35 minutes or until golden brown. Cool completely on a wire rack. Cut into squares; cut squares in half.

Number Of Ingredients 11

1 tbsp olive oil
1 large onion , finely chopped
2 sticks celery , stringed and finely chopped
2 garlic cloves , finely chopped
15g dried apricots , roughly chopped
75g peeled chestnuts
75g almonds
100g wholemeal bread , crusts removed and roughly torn (about 6 slices)
large bunch parsley , chopped
large pinch dried sage
1 egg

Steps:

  • Heat oven to 200C/180C fan/gas 6. Gently heat the oil in a shallow saucepan then add the onion, celery and garlic. Keep everything sizzling on a medium heat for 15 mins until soft. Tip into a food processor with the rest of the ingredients, except the egg, plus a small pinch of salt, if you like. Pulse until everything is chopped, then add the egg and pulse until combined. Use wet hands to roll the mixture into walnut-sized balls, then place on a baking sheet lined with baking parchment.
  • Bake in the oven for 25-30 mins until golden and hot through. Will freeze for up to three months; defrost fully before reheating.

1 cup butter, softened
1 cup packed light brown sugar
1/2 teaspoon salt
3 teaspoons vanilla extract
3 cups all-purpose flour
1 jar (12 ounces) apricot preserves, warmed
ALMOND LAYER:
2 cans (8 ounces each) almond paste, crumbled into small pieces
1 cup sugar
2 teaspoons vanilla extract
4 large eggs
FROSTING:
2 ounces unsweetened chocolate, chopped
1/2 cup half-and-half cream
3 cups confectioners' sugar
1/4 cup butter, softened
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. Cream butter, brown sugar and salt until light and fluffy. Beat in vanilla. Gradually beat in flour. Press onto bottom of a greased 15x10x1-in. baking pan. Spread with preserves., In another bowl, beat almond paste and sugar on low speed until blended. Beat in vanilla and eggs, one at a time. Pour over preserves., Bake 20-25 minutes or until a toothpick inserted in almond layer comes out clean. Cool slightly on a wire rack., Meanwhile, place chocolate in a large bowl. In a small saucepan, bring cream just to a boil; pour over chocolate. Stir with a whisk until smooth. Add confectioners' sugar, butter and vanilla; beat until smooth., Spread over warm bars. Cool completely before cutting.

This recipe comes from the Jewish Holiday Feasts cookbook and is a recipe for Purim. All times are guesstimates and do not include cool times. These are wonderful as candy or cookies, after dinner or with wine. Kids can help roll up the dough into balls.

1/2 lb dried apricot
1/2 lb almonds, toasted
2 ounces bittersweet chocolate, cut into small pieces
1 cup sugar
8 tablespoons water
confectioners' sugar, for rolling

Steps:

  • In food processor, process apricots, almonds and chocolate until very finely chopped.
  • In medium saucepan over medium-high heat, cook sugar and water until soft ball stage, approximately 240°F (approximately 10 minutes).
  • Stir in apricot mixture and cool.
  • Squeeze mixture together with hands to form firm ball.
  • Using approximately 1 Tbsp of mixture, form into 1-inch balls.
  • Roll in powdered sugar.
  • Place in candy cups or serve as desired.
