We love snacking on vegan protein bites and taking them with us wherever we go. So, today I have a simple recipe you can make in less than 20 minutes and with zero fuzz. You will end up with the most delicious Almond butter protein bites you ever came across. I like creating recipes that are easy and practical that will make my life easier when it comes to feeding myself or my family. And if I can make food quickly even better. And of course, the food has to be yummy, because what's the point of eating if it's not super delicious.For the longest time, I heard how a lot of friends and people around me struggled to figure out what to eat. Especially, when you first switch to a vegan lifestyle. It can feel overwhelming at first but it doesn't have to be. Once you have the right recipes in front of you, that are tailored for your needs and your lifestyle, things get much much easier. And for me, snacks are a must in my life so I needed to come up with different options so I can freely snack on healthy vegan food. Also, my kids love these vegan bites. And since I know exactly what goes in them I don't mind them having one or two, or a few in one sitting. Sometimes, if I'm not sure how long I'll be out and about with them. I just throw them in my bag in case they get hungry. They've saved us from the tantrums of a hungry toddler more than once. These little beauties are a breeze to make. You simply have to mix all the ingredients together and then make the balls with your hands. I recommend you mix all the dry ingredients and separately mix the wet ingredients. Once you have these two mixes, combine them. This will avoid clumps and will ensure you have a homogenous mix. I like making these vegan protein bites over the weekend. And it's the perfect recipe to make with the kids, it's easy and a really fun activity to keep them entertained. They love getting their little hands in there and making the bite-size balls. I make a really big batch so we have plenty for the week. And the kids can grab them from the fridge when they're hungry. I simply keep them in an air-tight container and they last for a good while. We can modify these vegan protein balls a bit if there's anything in the list you don't like. They have a beautiful almond flavour and by adding the almond aroma we get an extra kick of it. It's sooo nice, really subtle but it makes a big difference. Also, we have a view cranberries in the mix, which add little bits of sourness to every bite. We get the perfect combination of flavours here. And the texture is also amazing! The almond butter is so soft and creamy but we have those fun crunchy bits as well! These vegan protein bites are pure bliss!

Oatmeal Almond Butter Bites image

Super healthy and deliciously soft high-fiber snack made with chia seeds, ground flax, unsweetened coconut, and oatmeal. Almond butter adds protein. I use raw honey in these.

2 ½ cups rolled oats
1 cup almond butter
1 cup semisweet chocolate chips
½ cup honey
¼ cup chia seeds
¼ cup ground flax seeds
¼ cup finely shredded unsweetened coconut

Steps:

  • Combine oats, almond butter, chocolate chips, honey, chia seeds, ground flax seeds, and coconut in a stand mixer fitted with the paddle attachment. Beat together, gradually increasing speed, until mixture no longer sticks to the center of the paddle.
  • Shape mixture into 1-inch balls with your hands. Place on a baking sheet lined with parchment paper.
  • Freeze balls until firm, about 30 minutes. Transfer to an airtight container and store in the refrigerator.
