CREAM CHEESE ALMOND COFFEE CAKE
An adopted recipe, I have made this ahead when having company over for and easy breakfast. Original Intro: A great moist coffee cake.

Steps:
- Preheat oven to 350.
- Spray a 9 x 13 cake pan.
- Cream butter, sugar and cream cheese very well until smooth.
- Add eggs, one at a time, scraping down as needed add vanilla and mix inches.
- Sift together dry ingredients and add alternately with milk.
- Stir in cherries.
- Spread into cake pan, smooth top Mix topping ingredients (excluding almonds) together.
- Sprinkle almonds then topping over batter.
- Press lightly.
- Bake until tests done.

ALMOND COFFEE CAKE
Steps:
- 1.Preheat the oven to 350°F.
- 2.Spray a 9-inch spring form pan with nonstick cooking spray.
- 3.Combine the flour and ¾ cup sugar in a bowl.
- 4.Cut in the butter until the mixture resembles coarse crumbs.
- 5.Reserve 1 cup of the mixture and set it aside. To the remaining crumb mixture add the baking powder, salt, sour cream, 1 egg, and almond extract. Blend well.
- 6.Spread the batter in pan. In a separate mixing bowl combine cream cheese, cottage cheese and ¼ cup sugar and beat with the paddle attachment of the mixer.
- 7.Add the remaining egg and beat an additional minute until blended well.
- 8.Pour the cheese mixture over the batter in the pan.
- 9.Combine the reserved crumb mixture with almonds. Sprinkle over the cheese mixture in the pan.
- 10.Bake at 350°F for 45-50 minutes or until cheese mixture is set and cake is firm and slightly pulling away from the sides of the pan. Cool before removing the sides of the pan and serving.

- In a small bowl, dissolve yeast in warm water. In a large bowl, combine 2 cups flour, sugar and salt. Cut in butter until crumbly. Stir in the yeast mixture, milk and egg yolks. Add enough remaining flour until mixture forms a soft dough. Cover and refrigerate overnight., In a small bowl, combine the filling ingredients; set aside. Punch dough down. On a floured surface, roll into a 13x10-in. rectangle. Transfer to an ungreased baking sheet. Spread filling over dough to within 1 in. of edges., Starting with a long side, roll just to the center of the rectangle; repeat with remaining side, meeting in the middle., With scissors, cut from outside edges to two-thirds of the way toward center at 1-1/2 in. intervals. Separate strips slightly; twist to allow filling to show. Cover and let rise in a warm place until doubled, about 1 hour., Bake at 350° for 20-25 minutes or until golden brown. Remove from pan to a wire rack to cool. For glaze, combine the confectioners' sugar, milk and vanilla; drizzle over coffee cake. Sprinkle with almonds.

- Heat oven to 350°F. Line 8-inch square pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
- In large bowl, beat butter, granulated sugar and almond paste with electric mixer on medium speed until light and fluffy. Beat in almond extract and eggs until well blended. On low speed, beat in flour, baking powder and salt just until blended. Spread batter in pan; sprinkle with almonds.

- Heat oven to 375ºF.
- Mix cream cheese, 1/4 cup sugar, 1/2 tsp. extract and egg yolk until blended.
- Unroll crescent dough onto center of baking sheet; press seams and perforations together to seal. Spread cream cheese mixture into 3-inch-wide lengthwise strip down center of dough to within 1/4 inch of short ends.
- Make cuts, 1-1/2 inches apart, down both long sides of dough to within 1/2 inch of cream cheese mixture. Starting at one short end, bring opposite strips of dough together over filling, then twist gently in center to secure. Whisk egg white until foamy; brush onto dough.
- Bake 18 to 22 min. or until lightly browned. Cool 15 min.
- Mix remaining sugar, extract and milk until blended; drizzle over coffee cake. Sprinkle with nuts.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.
- Mix strawberries and 3 tablespoons brown sugar together in a bowl.
- Mix flour, 1/3 cup brown sugar, baking powder, baking soda, and salt in a separate large bowl. Whisk yogurt, melted butter, vanilla extract, and egg in a third bowl. Stir yogurt mixture, alternating with milk, into flour mixture until just moistened. Spoon 2/3 of the batter into the prepared pan; spread strawberry mixture evenly over batter. Top with remaining batter. Sprinkle almonds over batter.

Steps:
- Chocolate Wafer Crust.
- In a small bowl combine crushed wafers, almonds, butter and instant coffee together, until well mixed.
- Press the crumb mixture into the bottom of a greased 9" springform pan and set aside until needed.
- Almond Coffee Filling.
- Combine cream cheese, sugar and cornstarch in a large bowl, and with an electric mixer beat till smooth.
- Add the eggs and yolk, one at a time, beating well after each addition.
- Split the batter into two bowls equally.
- In one bowl add the amaretto and almond extract, mix well and set aside.
- Stir together the instant coffee and hot water, mix with the Kahlua then add to the remaining cheese mixture, blending well.
- Pour half of the amaretto mixture over the chocolate wafer crust. Spoon half of the coffee mixture over the amaretto mixture.
- Now pour the remaining amaretto mixture over the coffee mixture. Top with the remaining coffee mixture.
- Without scraping the crust, swirl the blade of a knife thru the cake to create a marbling effect.
- Bake at 350 degrees for 15 minutes. Lower the temperature to 200 and continue baking for 1 hour and 20 minutes, or until the center no longer looks shiney or wet.
- Individual ovens vary -- please make sure that the cake center no longer looks wet or shiney, before returning to oven.
- Remove the cake from the oven and run a knife around the inside edge of the pan.
- Turn the oven off and return the cake to the oven for an additional hour, then chill uncovered overnight.
- Serve garnished with whipped cream and sliced almonds.
