Almond-Tomato Spread image

Serve this savory snack with our homemade Crostini.

Yield Makes 1 1/2 cups

Number Of Ingredients 9

3/4 cup blanched almonds
1 can (14 ounces) whole peeled tomatoes
1 garlic clove
1 tablespoon paprika
1 tablespoon balsamic vinegar
2 teaspoons fresh lemon juice
1 teaspoon coarse salt
1/2 teaspoon red-pepper flakes
1/4 cup olive oil

Steps:

  • Preheat oven to 350 degrees. Spread almonds on a rimmed baking sheet; toast in oven until deep brown, about 20 minutes. Let cool.
  • Drain tomatoes; squeeze to remove seeds. Add tomatoes to processor along with toasted almonds, garlic clove, paprika, balsamic vinegar, lemon juice, coarse salt, and red-pepper flakes; process until nuts are finely ground and mixture is well combined.
  • With the motor running, add olive oil; process until a paste forms.

1 package (8 ounces) cream cheese, softened
1-1/2 cups shredded Swiss cheese
1/2 cup sliced almonds, toasted, divided
1/3 cup mayonnaise
2 tablespoons sliced green onions
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
Assorted crackers

Steps:

  • In a small bowl, beat the cream cheese until smooth. Stir in the Swiss cheese, 1/3 cup almonds, mayonnaise, onions, pepper and nutmeg. , Spoon into a lightly greased pie plate. Bake at 350° for 12-15 minutes or until heated through. Sprinkle with remaining almonds. Serve warm with crackers.

3/4 cup water
3/4-1 cup olive oil
1 -2 large garlic clove
1/2 lemon, juice of
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper (to taste)

Steps:

  • Place almonds in a blender with the 3/4 C water and mix well.
  • Add the remaining ingredients and blend for 2 minutes, or until creamy.
  • Almonds may be blanched before blending if allergies or taste so dictate.
