ALMOND TOAST
This recipe is from Sugar off the TV food network. I love almonds so I had to try this recipe, and it turned out wonderful. It is nice and light, and great with coffee. Hope you enjoy it as much as I do!!

Steps:
- Preheat oven to 350 degrees F. and line a 9 x 5-inch loaf pan with parchment paper (do not grease).
- Whip whites and salt until foamy, then gradually pour in sugar. Continue whipping until whites hold a stiff peak. Fold in sifted flour and fold in almonds. Scrape meringue into prepared pan and bake for 35 minutes, until top is richly browned. Allow to cool, then wrap and freeze overnight. (Makes about 24 toasts).
- Preheat oven to 175 degrees F. and line a baking tray with parchment. Using a serrated knife, slice thin slices of loaf, about 1/4 inch thick or less and place on a baking sheet. Bake until dry and crisp, but not browned, 20 to 30 minutes. Store in an airtight container until ready to serve.

ALMOND FRENCH TOAST
This French toast is perfect for Mother's Day! It is a nice twist to the traditional breakfast dish, and makes a nice addition to any brunch. I hope that you enjoy this recipe. Serve with fresh fruit, fruit preserves, or warm maple syrup.

Steps:
- Place almonds in a small saucepan over low heat. Tossing frequently, toast until lightly browned, 5 to 10 minutes. Remove from heat, and set aside.
- In a large bowl, whisk together eggs, milk, flour, salt, baking powder, almond extract and vanilla extract. Soak bread slices in the mixture until saturated. Place slices in a shallow pan. Refrigerate slices approximately 1 hour.
- Heat canola oil and butter in a large skillet over medium heat. One at a time, press one side of soaked bread slices in the almonds to coat. Fry bread slices on both sides until golden brown. Dust with confectioner's sugar before serving,

SWEDISH ALMOND TOASTS
This is a biscotti type of cookie - very crispy and very good with a wonderful cup of coffee; Takes a bit of work but it is well worth it.

Steps:
- Heat oven to 350F and lightly butter and flour a large baking sheet.
- Stir the eggs, instant coffee, and vanilla in a small bowl until well blended, set aside.
- Mix the flour, baking powder and salt in a medium bowl, set aside.
- Beat the butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy.
- Beat in the egg mixture.
- Gradually add the flour mixture, beating well after each addition.
- Stir in the almonds.
- Divide the dough into 2 equal portions.
- On a lightly floured surface, shape the dough into 2 logs, each 8 inches long, 2 inches wide and 1 inch thick.
- Place the 2 logs 2 inches apart on the prepared baking sheet.
- Bake for 30-40 minutes until lightly browned.
- Set the baking sheet on a wire rack to cool for 10 minutes.
- Remove the logs from the baking sheet and place on a cutting board.
- Using a serrated knife, cut each log diagonally into 3/4 inch thick slices.
- Place the slices upright and 1/2 inch apart on the baking sheet.
- Bake for 20 minutes or until slightly dry.
- Remove the toasts from the baking sheet.
- Cool completely on the wire rack.
- Store in a tightly covered container.

ALMOND FRENCH TOAST
French Toast lover alert! This recipe will make you drool! Keep napkins available at all times! Almond paste is a mixture of ground almonds and sugar. You can find it in grocery stores.

- Trim crusts from bread; set bread slices aside.
- Process crusts in a blender or food processor until finely crumbled.
- Set crumbs aside.
- Combine cream cheese and almond paste; beat at medium speed of an electric mixer until smooth.
- Spread the mixture evenly on 4 bread slices.
- Slice each sandwich diagonally to form 4 triangles.
- Combine eggs, milk, and vanilla.
- Dip each bread triangle into egg mixture, coat with crumbs, and dip again in egg mixture.
- Melt butter in a large skillet; add oil.
- Cook triangles over medium heat 4 minutes on each side until browned.
- Serve immediately.
- Yield: 4 servings.

ALMOND FRENCH TOAST
This is one of my family's favorites brunches. Because of the baking powder the slices really "puff" up when fried, and the French toast is light and so fluffy! Prep time includes one hour refrigeration time. Also the bread slices need to be refrigerated for 1 hour.

Steps:
- Place the almonds in a small saucepan; toss occasionally until lightly browned (about 5-8 minutes) careful not to overbrown; set aside.
- In a large bowl, whisk together eggs, half and half or milk (if using) flour, salt, baking powder, almond extract and vanilla.
- Soak the bread slices in the egg mixture until soaked.
- Place in a shallow glass dish.
- Cover with plastic wrap and refrigerate the bread slices for about 1 hour.
- Heat the oil and butter in a skillet (I do this on my large electric frypan).
- Doing one slice at a time, press one side of the soaked bread slice into the toasted almonds to coat.
- Fry the bread slices on both sides until golden.
- Sprinkle with confectioners sugar if desired.

- Lay the bread or toast over the baking sheet. Spread a small amount of jam or Nutella on each slice, as desired.
- In a small mixing bowl cream together the almond flour, butter, sugar, and salt. Add the egg, extract, and lemon zest and mix well. Stir in the cake flour until smooth and spreadable. Spread this mixture over the toast, covering well from edge to edge. Sprinkle almonds generously over the top.
- Bake for 15 to 20 minutes until the almond cream is set and golden. Remove from oven and cool on a rack.
