6 boneless skinless chicken breast halves (4 ounces each)
1 bottle (14 ounces) ketchup
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 medium green pepper, coarsely chopped
1/3 cup cider vinegar
1/4 cup packed brown sugar
1 teaspoon ground mustard
1 can (8 ounces) pineapple chunks, undrained
Hot cooked rice

Steps:

  • Preheat oven to 375°. Place chicken in a greased 13x9-in. baking dish. In a small bowl, mix ketchup, soup, green pepper, vinegar, brown sugar and mustard; stir in pineapple. Pour over chicken., Bake, uncovered, 25-35 minutes or until a thermometer reads 165°. Serve with rice. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.

4 1/2 teaspoons honey
2 boneless skinless chicken breasts, cubed
salt, to taste
pepper, to taste

Steps:

  • Whisk pineapple with its juice and honey in a bowl until combined.
  • Season chicken cubes with salt and pepper and place in a plastic bag covered with 2/3 of the pineapple sauce.
  • Refrigerate for at least an hour.
  • Place chicken on baking pan lined with foil and broil on middle rack for 6-8 minutes per side, or until cooked through.
  • For dipping sauce: While chicken is broiling, put the remaining sauce in a saucepan and cook over medium heat for 1 minute or until thickened.

¼ cup lemon juice
¼ cup light corn syrup
2 tablespoons soy sauce
1 teaspoon salt
¼ teaspoon ground ginger
¼ cup corn oil
1 (8 ounce) can crushed pineapple (not drained)
10 chicken leg quarters

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir together lemon juice, corn syrup, soy sauce, salt, ginger, and corn oil in a bowl until smooth. Stir in the crushed pineapple with its liquid. Place the chicken legs in an ovenproof glass baking dish, and pour sauce over top.
  • Bake in preheated oven for 30 minutes, then turn the chicken over, and continue cooking until the chicken is tender, and no longer pink, about 20 minutes. Baste with sauce frequently while baking.

1/2 cup pineapple juice
1/2 cup vegetable oil
1/2 fresh pineapple peeled and cubed
1/4 cup lime juice
2 cloves garlic
2 tablespoons oregano
2 whole ripe plantains (optional)
4 strips bacon
8 whole chicken thighs
1 large onion
Dipping Sauce:
Remaining marinade from the kabobs
2 tablespoons vegetable oil or other cooking oil
1 large onion, minced
1 (10-ounce) jar pineapple fruit spread

Steps:

  • On eight 10-inch skewers, thread chicken, bacon, pineapple, onions and plantains, alternating ingredients. Set skewers on a tray with sides or in a glass baking dish. In small bowl, stir together the pineapple juice, lime juice, oregano and garlic cloves. Pour the pineapple juice mixture over skewers, coating all sides thoroughly. Cover the skewers with plastic wrap and refrigerate them for at least 30 minutes. Kabobs come out best if they marinate for a full 24 hours. Please remember to turn them once in a while. When you're ready to cook these kabobs, heat your grill to medium-hot or start a charcoal fire. Don't put the skewers on the grill until all the black has burned away from the charcoal. If you put them on too soon, they'll end up tasting funny. Remove the skewers from the marinade and set the remaining marinade aside. We're going to use if for a sauce. 1/4 cup soy sauce
1/4 cup sugar
2 large eggs, lightly beaten
2 green onions, chopped
2 garlic cloves, crushed
1 tablespoon sesame seeds
1 teaspoon salt
1 1/2 lbs chicken wings, separated at joints tips discarded
vegetable oil
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup crumbled blue cheese
1 (8 ounce) can crushed pineapple, drained
1/8 teaspoon salt
1/8 teaspoon pepper
1 teaspoon sugar

Steps:

  • COMBINE cornstarch, flour, soy sauce, sugar, eggs, green onions, garlic, sesame seeds and salt in resealable food storage bag. Mix thoroughly.
  • RINSE chicken; pat dry. Add to cornstarch mixture. Toss to coat. Marinate 2 hours.
  • HEAT 2 inches oil in a deep fryer or deep heavy skillet. Fry chicken pieces, a few at a time, 8 to 10 minutes or until golden brown and no longer pink in center, turning to brown evenly. Drain on paper towels.
  • BLUE CHEESE DIP:.
  • COMBINE all dip ingredients; refrigerate until ready to serve. Makes about 2 cups.
