GERMAN CHOCOLATE POUND CAKE

This has always been one of my favorite pound cakes. I got this recipe from a friends Mom who would make 2 of these at a time. We would eat warm slices of this pound cake with a glass of cold milk. Enjoy.

2 c sugar
1 c butter
4 eggs
2 tsp vanilla extract
2 tsp butter flavoring
1 c buttermilk
3 c sifted all purpose flour
1/2 tsp baking soda
1 tsp salt
1 pkg german sweet chocolate

Steps:

  • 1. Preheat your oven to 300F. Grease and flour a bundt pan and set aside. In the bowl of your standing mixer, cream sugar & butter well, then add eggs one at a time letting it blend after each egg addition. Then add flavors and buttermilk blend together.
  • 2. Remove wrapper from chocolate and melt the chocolate in the top of a double broiler over hot water. * I have also placed the chocolate in a small ceramic dish in the oven a couple of minutes to soften, but watch it.
  • 3. Sift together the flour, baking soda, and salt and blend. Then add flour mixture to the buttermilk mixture, Then add the softened german chocolate to the batter. Blend well. Pour into Prepared bundt pan. Bake 1 hour 30 minutes or until cake tests done in the middle.
  • 4. Let cool 5 minutes then remove cake from pan, and place under a tight fitting cake cover and leave covered until cold. This is delicious warm as well! Just letting ya know! 8) Enjoy!

This chocolate cake with coconut-pecan frosting is a favorite dish at all of our potlucks.

4 (1 ounce) squares German sweet chocolate
½ cup water
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup butter, softened
2 cups white sugar
4 egg yolks
1 teaspoon vanilla extract
1 cup buttermilk
4 egg whites
12 fluid ounces evaporated milk
1 ½ cups white sugar
¾ cup butter
4 egg yolks
1 ½ teaspoons vanilla extract
1 (8 ounce) package flaked coconut
1 ½ cups chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line bottom of 9x13 pan with parchment paper.
  • Microwave chocolate and water on high for 1 1/2 to 2 minutes. Stir halfway through. Stir until all is melted and smooth.
  • In a medium bowl, mix together flour, soda and salt. Set aside.
  • In a large bowl, cream 1 cup butter and 2 cups sugar until light and fluffy. Add 4 egg yolks one at a time, beating well after each addition. Stir in chocolate and 1 teaspoon vanilla. Add flour mixture alternately with buttermilk. Beat after each addition until smooth.
  • In a separate bowl, beat egg whites on high until soft peaks form. Gently fold into batter. Pour into 9x13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, or until toothpick inserted into center of cake comes out clean. Cool completely, then frost with coconut-pecan frosting.
  • Combine milk, 1 1/2 cup sugar, 3/4 cup butter, 4 egg yolks and 1 1/2 teaspoons vanilla in large saucepan. Cook and stir on medium heat for about 12 minutes, or until thick and golden brown. Remove from heat. Stir in coconut and pecans. Cool to room temperature, and spreading consistency.

I went to B.B. King's club in New York City to see Johnny Winter play and enjoyed it so much! In honor of B.B. I am posting his German Chocolate Cake! Adapted from recipegoldmine. UPDATE: Due to a helpful review, I have added more chocolate to the ingredients.

Number Of Ingredients 17

1 cup semi-sweet chocolate chips
1 1/4 cups butter
2 cups granulated sugar
4 eggs, separated
1 teaspoon vanilla extract
3 -4 tablespoons cocoa powder (optonal, taste batter and see if it's chocolaty enough)
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 1/2 cups evaporated milk
1 1/2 cups granulated sugar
4 egg yolks, slightly beaten
3/4 cup butter
1 1/2 teaspoons pure vanilla extract
2 cups sweetened flaked coconut
2 cups chopped pecans (try toasting them slightly-yum!)

Steps:

  • Preheat oven to 350*F.
  • Melt the chocolate chips and 1/4 cup of the butter in heavy bottom pan. Let cool.
  • Cream together remaining butter and sugar in medium bowl. Beat in egg yolks. Stir in vanilla and cocoa powder and chocolate mixture. Sift together dry ingredients. Alternately add dry ingredients and buttermilk to chocolate mixture.
  • Beat egg whites until stiff in large bowl. Gently fold in chocolate mixture. Pour cake batter evenly into the three prepared round cake pans. Bake at 350*F. for 30 minutes or until cake springs back. Let cool on racks.
  • Frosting:.
  • Combine evaporated milk, sugar, egg yolks and butter in a saucepan. Add vanilla extract. Cook over medium heat, stirring continuously until thickened (thick enough to coat back of spoon). Remove from heat. Stir in coconut and pecans. Cool until thick enough to spread over cake.
  • Place 1 cake layer on plate. Spread frosting evenly over top. Repeat with remaining layers. Spread remaining frosting evenly over sides of cake. Serve. Enjoy!

1 ½ cups cake flour
1 cup white sugar
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
⅓ cup butter, softened
⅜ cup buttermilk
1 teaspoon vanilla extract
4 (1 ounce) squares German sweet chocolate
2 large eggs eggs
⅜ cup buttermilk
⅔ cup flaked coconut
½ cup packed brown sugar
2 tablespoons cream
¼ cup chopped walnuts
¼ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch square cake pan. Sift the cake flour, 1 cup white sugar, baking powder, baking soda, and salt together.
  • Cream 1/3 cup of the butter or margarine. Stir in 3/8 cup buttermilk and 1 teaspoon vanilla. Blend in the flour mixture and beat with an electric mixer on medium speed for 2 minutes. Add the melted and cooled German sweet chocolate, eggs, and the remaining 3/8 cup buttermilk. Continue to beat at medium speed for another minute more. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes. Cool in pan for 15 minutes then frost.
  • To Make Frosting: Combine the coconut, brown sugar, cream, chopped nuts, 1/4 cup butter or margarine. Mix until of a spreadable consistency. Spread over top of baked cake. Broil 3 inches from heat until browned (about 3 minutes). Serve cake warm or cold.
