From Betty's Soul Food Collection... What a sweet deal! A parfait that's ready in 10 minutes and delivers healthy ingredients-like fat-free yogurt, pineapple, banana, oranges and strawberries.

3 containers (6 oz each) Yoplait® Original yogurt French vanilla
1 can (8 oz) crushed pineapple in juice, drained
2 cups Honey Nut Cheerios™ cereal
1 medium banana, sliced (1 cup)
1 can (11 oz) mandarin orange segments in light syrup, drained
1/4 cup flaked coconut, toasted
4 fresh strawberries, sliced

Steps:

  • In medium bowl, mix yogurt and pineapple. Into each of 4 parfait glasses, place 1/4 cup of the cereal.
  • Spoon 2 tablespoons yogurt mixture on top of cereal in each glass. Top each with 1/4 cup cereal, then with 1/4 of the banana slices.
  • Spoon 2 tablespoons yogurt mixture onto banana in each; top each with orange segments. Spoon remaining yogurt mixture over orange segments. Sprinkle with coconut. Garnish with strawberries.

A popular American dessert that is made frequently in the Southern States. This light and delicious dish is very easy to make and can be easily customized to ones preferences.

½ cup Heavy cream
½ cup Sour cream
1 tablespoon Sugar
1 cup Fresh pineapple, finely chopped
1 cup Red seedless grapes, halved
2 Oranges or Clementines, peeled and segmented
2 tablespoons Grated unsweetened coconut, fresh or dried
3 tablespoons Pecans or Almonds, toasted

Steps:

  • In a chilled bowl, pour the cream and add sugar. Beat with a hand mixer or a whisk until stiff peak forms.
  • Add sour cream to the whipped cream and gently fold it in.
  • Prep all the fruit and mix them in a small bowl.
  • At this point, you can either layer them into individual serving glasses to make ambrosia parfaits. Or toss everything in a big bowl for a even quicker dish.

Is Ambrosia a side dish or dessert? Does it really matter? ... Because no matter how you choose to enjoy it, classic Ambrosia Salad is just plain good. With its creamy mix of mini marshmallows, whipped topping, coconut, and fruit it's just one of those dishes that's loved by all.

1 (15 oz.) can mandarin oranges, drained
1 (20 oz.) can pineapple tidbits, drained
1 (10 oz.) jar maraschino cherries, drained
1/2 c. sweetened flaked coconut
1 ½ c. mini marshmallows
1/2 c. sour cream
1 (8 oz.) container Cool Whip

Steps:

  • Drain mandarin oranges, pineapple, and maraschino cherries very well. Pat cherries dry with a paper towel. Cut cherries in half.
  • In a bowl, mix together pineapple, coconut, halved cherries, and mini marshmallows until combined. Gently fold in mandarin oranges (they'll break up easily, so be gentle).
  • In a small bowl, stir together sour cream and Cool Whip until just combined. Gently fold into fruit mixture.
  • Chill at least 2 hours or overnight before serving.

1 package (3.4 ounces) instant vanilla pudding mix
1/4 cup honey
2 cups cold 2% milk
2 teaspoons grated orange zest
1/4 teaspoon vanilla extract
1 cup heavy whipping cream, whipped
1 banana, sliced
1 can (11 ounces) mandarin oranges, drained
1/4 cup sweetened shredded coconut
1/4 cup sliced almonds

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Add the honey, orange zest and vanilla. Fold in the whipped cream. , In individual dessert dishes, layer half of the pudding, banana slices, orange sections, coconut and almonds. Repeat layers. Chill.

This is supposed to make 10 servings, but I have seen civilized people turn into wild animals and attack the bowl before I've even managed to serve the stuff out!

1 (14 ounce) can pineapple chunks, drained
2 (6 ounce) cans mandarin oranges, drained
2 apples, cored and cut into chunks
2 pears, cored and cut into chunks
1 1/2 cups red grapes (go for seedless)
1 cup blueberries
2 cups frozen whipped topping, thawed (I use real whipped cream)
1 (2 ounce) jar marshmallow cream
1 cup shredded sweetened coconut

Steps:

  • In a large bowl, toss the pineapple chunks, mandarin oranges, apple and pear chunks, grapes and blueberries together.
  • In a separate bowl, whisk the whipped cream into the marshmallow cream.
  • Spoon 2 tablespoons of fruit into the bottom of 10 parfait glasses.
  • Add the whipped marshmallow mixture and sprinkle with coconut.
  • Keep repeating layers until the glass is full.

3 cups fat-free lemon yogurt
2 tablespoons dried sweetened cranberries (optional)

Steps:

  • In a medium bowl, stir together the mandarin oranges, mango, pineapple, banana, strawberries, and coconut.
  • To assemble, spoon about 1/4 cup yogurt into each parfait glass or small bowl. Top each with 1/4 cup fruit mixture. Repeat. Sprinkle with the cranberries. Serve or cover and refrigerate for up to 4 hours.
