Steps:
- Boil the potatoes in their skins. Drain and set aside to cool.
- While the potatoes are cooling, peel and chop the onion; set aside.
- Shred the cheddar cheese; set aside.
- Prepare the cheese sauce heating 1 cup of the milk on the stove in a pot. Off the stove, whisk the flour into another half cup of milk. Add to the heated milk, and whisk frequently until it comes to a boil. Remove from stove. Chop up the Velveeta ® cheese into a few pieces, add it to the milk, and cover the pot to help the cheese melt better. Set aside. When you go to use it later, give it a final whisk to blend smooth.
- Mix together the ranch dressing mix with the sour cream and the remaining 1/2 cup of milk; set aside.
- When the potatoes have cooled enough to handle comfortably, peel and shred them. Set aside.
- Start oven heating to 175 C / 350 F / Gas Mark 4.
- Fry the minced beef with the onion. Give this a head start of a few minutes, then stir in the taco seasoning mix, then the shredded potato. Season as desired to taste (salt, pepper, etc.)
- In a largish, deep, casserole dish, make alternate layers of the meat / potato mixture with the ranch dressing mixture. Top with the cheese sauce.
- Bake for 30 minutes. After 30 minutes, remove from oven, sprinkle with the grated cheddar, and return to oven for another 10 minutes to melt the cheese.
- While it is baking, roughly crush the tortilla chips (with a rolling pin, etc.)
- When casserole is done, remove from oven, sprinkle with crushed tortilla chips, and serve hot.
THE INCREDIBLE, EDIBLE AMISH HAYSTACK DINNER
I just returned from a trip to an Amish community where this incredible dish was served as a fundraiser. Each woman is in charge of topping your haystack with whatever ingredients you choose as you move down the line. By the time you're done, your haystack is mile high! Easily adapted for family use. Sure to be a kid's favorite...

Steps:
- 1. Brown your ground beef and drain. Add spaghetti sauce and taco seasoning. Prepare noodles or rice as per package instructions. Keep beef and rice or noodles warm as you prepare veggies.
- 2. To serve: Each person gets a large bowl. Start with a base of tortilla chips, broken Ritz crackers or Fritos corn chips. Start your haystack with a pile of hot rice or hot noodles. Top with meat sauce. Then move on down the line forming a large mound or haystack with your chosen optional ingredients. Top with either warm, creamy cheese sauce or salsa, guacamole, additional shredded cheddar and sour cream. The height of your haystack is up to you! Enjoy!
AMISH HAYSTACKS
I was looking at some of my recipe books last night and I found this in one of my Amish cookbooks. I haven't made this but it sounded very interesting. I'm planning to try it in the next week or so. The book says is not only delicious but very filling. I hope you like it.

AMISH HAYSTACK DINNER
Based on a prize winner from Newman's The Hole in the Wall Gang Cookbook. This is a big hit with large groups of teenagers. Since it's "build your own haystack" there's something for everyone. Serve with dinner rolls for the unadventurous who would rather have a sloppy joe and salad. I also serve with bottled Italian salad dressing for those who want a "wetter" haystack.
