MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

Steps:
- Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
- Add the baking soda and flour.
- Combine well for 2-3 minutes.
- Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.

- Preheat oven to 350° and spray a 9 x 5 baking dish with a non stick spray. Set aside.
- In a medium mixing bowl, beat butter and sugar until creamy.
- Add egg and lightly beat then add bananas and stir until incorporated.
- Mix baking soda and flour just until combined.
- Lastly, add chopped pecans and stir.
- Place into prepared baking dish and bake for 50-60 minutes or until toothpick comes out clean.

- Preheat oven to 325. Grease a 9" x 5" loaf pan.
- In a large mixing bowl, beat together butter and brown sugar until creamed. Beat in eggs, mashed bananas, and vanilla until creamy.
- In a seperate bowl, combine flour, salt, baking powder, cinnamon and nutmeg. Gradually add this dry mixture into creamed mixture and mix well. Batter will get thick.
- Stir in chopped pecans.
- Pour into greased loaf pan. Bake at 325 for 70-80 minutes.
- Makes 1 loaf.

- Setup your bread machine and add ingredients into the bread pan starting with liquids, then fats, then dry ingredients.
- Add your fruits/nuts/chocolate chips to the fruit dispenser on your machine if desired. If your bread machine does not have a fruit/nut dispenser, check your manual for the appropriate time to add to the mix. This is typically ~10 minutes into the kneading cycle when the machine beeps.
- Bake the bread using the "No Yeast" setting. Since there is no yeast in the recipe there is no need to wait for the yeast to rise, and the entire baking process should only take about 90 minutes.
- Once finished, remove the loaf from the bread pan and allow to cool for ~20 minutes. Enjoy with butter, honey, peanut butter, or just on its own!

DELICIOUSLY MOIST BANANA BREAD RECIPE

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the butter and sugar. Add the eggs, vanilla and lemon juice. Mix well. In a separate bowl, combine the flour, baking soda, baking powder and salt. Once fully combined, pour into the butter mixture. Mix until smooth.

BANANA BREAD WITH PECANS

- Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
- In a large bowl, combine the flour, baking soda, and salt; set aside.
- Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.
