1 lb ground beef
1/2 cup chopped onion
1/2 cup chopped celery
3 tablespoons flour
1/4 cup brown sugar
1/4 cup ketchup
4 cups tomato juice
2 -3 tablespoons chili powder
16 ounces kidney beans
salt and pepper (very little salt is needed)

Steps:

  • Brown ground beef, onions and celery, then drain excess fat.
  • Add flour and heat through, stirring constantly.
  • Add all remaining ingredients and mix well.
  • Cover and simmer 30 minutes.

Definitely NOT Tex Mex! :-) My grandmother always added broken spaghetti noodles to her chili, but she used ground beef instead of sausage.

1 1/2 lbs bulk sausage
2 medium onions, sliced
3 cups tomato juice
1 (15 ounce) can kidney beans
1 tablespoon chili powder
1/4 cup brown sugar (1/4 to 1/2 cup)
salt and pepper, to taste
1/2 cup broken pieces of dried spaghetti noodles (1/2 to 1 cup)

Steps:

  • Brown the sausage and onion in a deep pot and then drain off the fat, returning the meat and onions back to the pan.
  • Add the remaining ingredients, except the spaghetti, stir well, and bring to a boil.
  • Add the spaghetti to the soup and cook until spaghetti is done, about 5 to 10 minutes over medium-high heat.

Chili soup is a hearty and warming comfort food for a cold or rainy day. It is very easy and quick to put together.

1 - 1 1/2 lb. hamburger, ground turkey, or ground venison
1 Tbs. oil
2 cloves garlic, minced
1/4 c. onion, chopped
1/4 c. green pepper, chopped
3 cans chili beans, or you can use any beans you prefer, I like to use the mixed chili beans
1 can petite diced tomatoes
3 c. tomato juice
1 c. sliced mushrooms, optional
1 c. black olives, optional
1 - 2 Tbsp. chili powder (depending on how spicy you want it )
1 tsp. garlic salt
3/4 tsp. cumin powder
1/2 tsp. black pepper
1/4 tsp. paprika
1 tsp. sugar
1/4 tsp. salt, or as needed to suit your taste

Steps:

  • Brown, crumble and drain your hamburger.
  • Put oil in large pot, add chopped garlic, onion, and pepper. Saute for a minute or two.
  • Add the remaining ingredients. Bring to a boil.
  • Let it simmer for about 15 minutes, to get all the flavor incorporated.

4 tablespoons olive oil
1 yellow onion, chopped
1 red bell pepper, chopped
1 Anaheim chile pepper, chopped
2 red jalapeno pepper, chopped
4 garlic cloves, minced
2 ½ pounds lean ground beef
¼ cup Worcestershire sauce
1 pinch garlic powder, or to taste
2 beef bouillon cubes
1 (12 fluid ounce) can or bottle light beer (such as Coors®)
1 (28 ounce) can crushed San Marzano tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
1 (12 ounce) can tomato paste
½ cup white wine
2 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon brown sugar
1 tablespoon chipotle pepper sauce
2 ½ teaspoons dried basil
1 ½ teaspoons smoked paprika
1 teaspoon salt
½ teaspoon dried oregano
½ teaspoon ground black pepper
2 (16 ounce) cans dark red kidney beans (such as Bush's®)
1 cup sour cream
3 tablespoons chopped fresh cilantro
½ teaspoon ground cumin

Steps:

  • Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes. Stir beef mixture into pepper mixture.
  • Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. Season with chili powder, 2 tablespoons cumin, brown sugar, pepper sauce, basil, paprika, salt, oregano, and black pepper. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.
  • Mix kidney beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.
  • Blend sour cream, cilantro, and remaining 1/2 teaspoon cumin in a food processor until smooth. Serve sour cream mixture with chili.

1 can(s) kidney beans..drained and rinsed
1 Tbsp chili powder
1/4 c brown sugar
salt to taste
2 Tbsp flour
2 oz spaghetti

Steps:

  • 1. Brown sausage & onion in deep pot (drain) Add the next 6 ingredients. Stir well.Bring to a boil. Break spaghetti in 1/2.Add to soup. Cook until spaghetti is done 5-10 minutes If soup is to thick,add a little water.

  • Clean and de-seed the bell peppers (and hot peppers, if using), peel the onions, and skin and de-seed the tomatoes. Chop the vegetables in 1/4 inch pieces, place in a large (non-aluminum) pot and bring to boil. Boil for 1 hour, stirring often.
  • Dissolve the dry mustard, sugar and salt in the vinegar and add to the vegetables. Continue boiling for another 45 to 60 minutes, then lower to a simmer; stirring often. Simmer over very low heat to thicken; the actual of time depends on the "juiciness" of the vegetables and tomatoes - it could be several hours. You want the mixture to thicken nicely. Make sure to stir often and watch carefully; the thicker it becomes the more chance it will scorch.
  • When it is about an hour away from being done, add the cloves, cinnamon, allspice, and red pepper flakes, if using, stirring frequently. Continue to simmer to desired thickness.
