Atcharang ampalaya or pickled bitter gourd is a refreshing side to compliment any fried dish. Made of julienned radish, carrots, bell pepper, and bitter gourd. A healthy side dish salad that is bursting with refreshing flavors.

1 large amplaya (bitter gourd)
1 small radish (julienned)
1 medium carrot (julienned)
½ slice of red bell pepper (julienned)
½ slice of green pepper (julienned)
½ cup juice of pineapple
1 cup pineapple bits
1 tbsp ground black pepper
3 cups white vinegar
1 ¼ cup granulated sugar
2 tbsp kosher salt (rock salt or iodized salt)
4 cloves garlic (slice into strips)
1 knob ginger (julienned)
500 ml water
2 tbsp salt

Steps:

  • In a pot pour vinegar, sugar, salt, garlic, and ginger then cook in medium heat until the sugar and salt are dissolved then set aside.
  • Prepare a large bowl with water and salt
  • Cut the bitter gourd into thin slices then soak it in water with salt. Let sit for a few minutes to release the bitter taste of the gourd.
  • Julienne radish, carrots, bell peppers, and slice pineapple bits to a smaller size.
  • Drain ampalaya/bitter gourd from the water and salt mixture and rinse in running water. Remove excess water and add the other vegetables.
  • Pour pineapple juice and the pickling solution and add the ground pepper. Gently mix to combine the vegetables and coated with pickling solution.
  • Transfer in clean, sterilized jars or containers with lids. Cover tightly and place in room temperature.
  • Let sit for at least 24 hours before consuming. Bon appetit!

Since most of my veggies are coming from my garden, I decided to post this recipe. I am sure that not a lot of people knows this veggie but contained a lot of medicinal value. Pls. check this veggie: http://en.wikipedia.org/wiki/Bitter_melon A very unique dish and I am not sure that people will like unless you are an Asian descent. When I was still living in my old country, my helpers used to make this salad which from the beginning I was not fond ot it. But when I looked at the medicinal value of this veggie, then I decided to like it and now, I really like it. So good!!!

2 medium ampalaya or bitter gourd (finely cut, sliced)
2 tablespoon(s) mayonnaise
dash(es) himalaya salt, fresh ground pepper and brown raw sugar or alternative to raw sugar: 3 finely chopped 3 stevia leaves (if available from your garden)
1/2 cup(s) red bell pepper (finely cut in cubes)
1/2 cup(s) celery (finely cut in cubes)
1/2 cup(s) shallots
1 tablespoon(s) chives ( finely cut)
10 - leaves of small mint leaves ( do not slice)
1 teaspoon(s) red wine vinegar
1/2 cup(s) tomatoes cut in small cubes

Steps:

  • Put the finely sliced Ampalaya or bitter gourd in a small bowl. Add the mayonnaise, Himalaya salt, fresh ground pepper, and dash of brown raw sugar. You can also use 3 leaves of Stevia leaves finely cut. Mix it. Add the red wine vinegar and mix.
  • Add the finely cut in cubes: celery, red bell pepper and shallots. Mix it thoroughly. You can always taste it and add more ingredients depending of what you like the salad to taste.
  • Add the tomatoes cut in small cubes.
  • Add chives and the mint leaves.
  • Mix well and put it in the refrigerator for 2 hours. Serve cold and with mint leaves.
