BUTTERED CORN SOUP AMUSE-BOUCHE



Buttered Corn Soup Amuse-Bouche image

Number Of Ingredients 9

2 large ears corn, kernels scraped (about 5 cups)
1 1/2 tablespoons sugar
2 1/2 teaspoons kosher salt, plus a pinch
1/2 lemon grass stalk, outer leaves removed, cut in pieces 1/2 inch thick
1/2 green Thai chili pepper, stem removed
1/2 teaspoon canola oil
1 tablespoon popcorn kernels
6 tablespoons unsalted butter, cut into 1/2-inch cubes
1/3 cup heavy cream

Steps:

  • In a pan, bring 2 cups water, the corn, the sugar and 1 teaspoon salt to a simmer. Cook 30 seconds. Remove from heat, and add lemon grass and chili; cover, and let steep 5 minutes. Purée mixture in a blender until smooth, and pass soup through a fine sieve.
  • To make popcorn salt, heat oil in a small saucepan. Add popcorn, cover and cook over medium-low heat until popped, 3 to 5 minutes. Spread popcorn out on a plate, and let cool. Finely blend popcorn with 1 1/2 teaspoons salt in a coffee or spice grinder. Pour into a saucer.
  • Just before serving, make foam: in a small saucepan over medium heat, whisk together butter and cream until mixture comes to a boil. Remove from heat, add pinch of salt and blend with an immersion blender until foamy (or use a soda siphon if you have one).
  • To serve, dip rims of espresso cups in water, then in popcorn salt. Pour soup into cups, and top with a dollop of butter foam. Serve immediately.

Don't be scared, time to get fancy! I am totally into elegant dishes, and this is one of my favorites. Amuse-Boushe "a little bite" of a flavorful soup to begin a dinner party. This is NOT a large quantity soup, it is designed to be a small taste, prior to dinner. COOKS NOTE: This can be made ahead of time.

1 tablespoon butter
2 tablespoons onions, minced
2 tablespoons flour
1 cup chicken broth
1 teaspoon lobster base
1 cup whipping cream
1/4 cup brie cheese (rind removed)
8 pea pods
8 pieces crabmeat

Steps:

  • In a saucepan over medium heat, melt the butter. Add the onion and cook, stirring constantly until the onions are soft and translucent, do not let it brown. About 5-8 minutes.
  • Whisk in the flour, stirring constantly until incorporated. Add the chicken broth and lobster base, continue to whisk constantly until mixture thickens. About 3-5 minutes tops, use your judgment
  • At this point, the soup can be covered and set aside until serving time.
  • Just before serving, heat the mixture and add the cream and brie cheese, do not let it boil.
  • Do a taste test; if too salty, add more cream; if not salty enough, add Kosher salt to taste.
  • Serve the soup in demitasse cups. Measure out approximately 2 tablespoons per cup.
  • Open each pea pod and fill with a piece of crab meat. Lay the pea pod filled with the crab meat across the demitasse cup and serve.

8 pea pods
8 pieces fresh crabmeat
1 tablespoon butter
2 tablespoons onion, minced
2 tablespoons flour
1 cup chicken broth
1 teaspoon lobster base
1 cup heavy cream
1/4 cup Brie cheese (rind removed)

Steps:

  • Trim and remove any strings from pea pods; slit them open, remove and discard peas; fill pods with fresh crab meat; set aside. In a saucepan over medium heat sauté onion in butter until tender, do not let it brown. Whisk in flour, continue stirring 2 minutes. Add chicken broth and lobster base mixing well until thickened. At this point the soup can be covered and refrigerated then finished before serving. Before serving, heat the mixture, stir in the heavy cream and brie cheese, do not boil. Taste for seasoning; add Kosher salt if necessary or more cream if too salty. Spoon 2 tablespoons into each demitasse cup, straddle a crab filled pea pod across the rim and serve. Wine recommendation: Pinot Gris; Fumé Blanc

These are perfect, bite-size mushroom appetizers that are always a hit at parties and family gatherings alike. Even the little ones love them - just don't tell them they're made with mushrooms! The recipe comes from a French-Canadian grandmother whose kitchen creations are magnifique.

cooking spray
3 green onions
1 (10 ounce) can mushroom pieces, drained
2 tablespoons butter
2 tablespoons cornstarch
½ cup half-and-half
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
10 slices sandwich bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Chop green onions and mushrooms very finely, to a nearly paste-like consistency.
  • Melt butter in a small saucepan over medium heat; stir in green onions and mushrooms and cook and stir until fragrant, about 2 minutes. Whisk cornstarch into half-and-half; pour into mushroom mixture and cook, stirring often, until thickened, about 3 minutes. Season mushroom mixture with salt, pepper, and garlic powder.
  • Roll bread slices with a rolling pin until very flat and thin. Spread mushroom mixture evenly onto flattened bread; tightly roll up bread slices. Slice each bread tube into 1-inch thick rounds; place rounds onto a baking sheet.
  • Bake in the preheated oven until bread is browned, about 10 minutes.
