ROASTED CORN AND GREEN RELISH

6 ears fresh corn
4 green chiles
1 red pepper
1 red onion
1/2 cup chopped cilantro leaves
1 lime, juiced
Olive oil
Salt
Garlic powder

Steps:

  • Preheat a grill to 350 degrees F.
  • Place corn and chiles on grill, and grill until corn is partially charred on outside and chiles are fully charred on outside. Transfer both to a platter. Peel the outer skin from the chiles and remove stems and seeds, leaving only the tender meat of the chiles.
  • Remove corn kernels from the cob with a knife or spoon and then place in a medium bowl. Dice chiles, red pepper, and onion and then add to bowl with kernels. Add cilantro and lime juice. Drizzle with olive oil. Add salt and garlic powder, to taste. Thoroughly combine and then refrigerate for 2 to 3 hours before serving.

2 tablespoons olive oil
1 large red onion, finely chopped
4 cloves garlic, finely chopped
1 cup dry white wine
2 tablespoons green curry paste
4 cups clam stock
2 corn husks, chopped
1 cup heavy cream
1 cup roasted corn kernels
Salt and freshly ground pepper
Chopped fresh cilantro
1 cup roasted corn kernels
3 tablespoons finely chopped red onion
1 ancho chile, seared in a hot pan until pliable, seeds removed and finely diced
1/4 cup fresh lime juice
2 tablespoons olive oil
2 tablespoons chopped cilantro
Salt and freshly ground pepper
2 (1 pound) monkfish tails
Olive oil
Ancho chile powder
Salt

Steps:

  • Heat oil in a medium saucepan over high heat. Add onions and garlic and cook until soft. Add wine and cookpeole are s until reduced by 3/4. Add the curry paste and cook for 2 minutes. Add the clam stock and corn husks and cook until reduced by 1/2. Strain the sauce into a clean medium saucepan and bring to a simmer. Add the cream and corn and cook to a sauce consistency. Season with salt and pepper, to taste and add the cilantro.
  • Combine all ingredients in a bowl and let sit for 30 minutes before serving.
  • Preheat oven to 400 degrees F. Preheat a large ovenproof skillet over high heat. Brush monkfish with olive oil and season with ancho chile powder and salt. Sear on both sides until golden brown. Transfer to the oven and continue cooking for 8 to10 minutes, until just cooked through. Ladle the sauce onto a platter, slice the fish into 3/4-inch thick slice, drizzle with more of the sauce and top with the corn relish and chopped cilantro.

This recipe calls for monkfish, but I am sure it would work as well with another firm white fish, i.e.cod. It is wonderful served with garlic mash potato and arugula with a little balsamic vinegar drizzled over the fish and arugula.

1 (8 ounce) jar sun-dried tomatoes packed in oil
1 cup basil leaves
16 slices parma ham
28 ounces monkfish, tails
salt & pepper

Steps:

  • Preheat oven to 400*.
  • In a food processor put the sun dried tomatoes with half their oil,and the basil leaves and blend until smooth.Add the remaining sun dried oil whil blending.
  • You will need 4 A4 size pieces of greaseproof paper.Lay 4 slices of parma ham snuggly next to each other on each piece paper.
  • Divide your paste into 4, smearing over the ham. Then place the fish at one end,season and using the greaseproof paper, fold and roll up.
  • Remove paper and carefully move to an oiled baking dish.
  • Bake in the oven for 20 minutes.
