250 grams pumpkin
0 As required salt
0 As required black pepper crushed
1/4 cup cheddar cheese
4 tablespoon fresh cream
1 sprig parsley
0 As required water

Steps:

  • To start this delicious dish, peel the skin of pumpkin and deseed it. Cut the pumpkin into cubes and then put a pressure cook on medium flame. Add these pumpkin cubes in the cooker along with a little water and close the lid, cook until soft and tender for about 3-4 whistles.
  • Once cooked, switch of the burner and let the steam release on its own. Open the lid of the cooker and drain the extra water, if any. Transfer these cooked pumpkin cubes in a bowl and mash them well using a masher until it is smooth.
  • To the mashed pumpkin, add the grated cheddar cheese along with fresh cream, salt and crushed black pepper. Mix well using a spoon and once done, transfer it to a serving bowl and garnish with a sprig of parsley. Enjoy!

1 small pumpkin (3 lb. whole, 2 lb. peeled and cleaned)
1/4 cup heavy cream
1/2 cup grated Parmesan ((not shredded))
2 teaspoons minced fresh garlic
2 teaspoons Diamond Crystal kosher salt (or 1 teaspoon fine salt)
1/4 teaspoon freshly ground black pepper

Steps:

  • If using the oven for cooking the pumpkin, preheat it to 425°F, set an oven rack to the lowest position, and line a rimmed baking sheet with parchment paper.
  • Wash and dry the pumpkin. Place it in the microwave and microwave it for one minute on each side to slightly soften.
  • Using a very sharp chef's knife and a back-and-forth sawing motion, cut a thin slice off the stem end. Place the pumpkin on this newly formed flat area and, again using a back-and-forth sawing motion, cut it in half.
  • Use a large metal spoon to scoop out the seeds and the pulp, saving the seeds and washing them to make roasted pumpkin seeds if you wish.

2 pounds boneless pork butt, cut into 1-inch chunks
2 small onions, 1 whole and unpeeled, 1 coarsely chopped
4 garlic cloves, 2 whole and unpeeled, 2 finely chopped
Coarse salt and freshly ground pepper
1 teaspoon black peppercorns
1 two-and-a-half- to three-pound pumpkin or winter squash, or a chunk of the same size cut from a West Indian squash, unpeeled
4 to 5 arbol, or dried Serrano chiles
1/4 cup pumpkin seeds
3/4 teaspoon cumin seeds
3/4 teaspoon coriander seeds
2 medium-size ripe tomatoes, coarsely chopped
4 tablespoons lard, preferably home-rendered, or vegetable oil
2 tablespoons apple-cider vinegar

Steps:

  • Combine pork, the unpeeled onion and unpeeled garlic, 1 teaspoon salt, and 1/2 teaspoon peppercorns in a medium stockpot. Add water to cover by about 1 inch. Cover and bring to a boil, immediately reduce heat to maintain a slow rolling boil, skimming off any froth that rises to the surface. Cook, partially covered, until the meat is tender, about 45 minutes. Transfer meat to a bowl, letting it drain well; reserve the liquid, and set the meat aside. Strain the liquid through a fine-mesh sieve; there should be 3 to 4 cups. Wipe out the pot, and return stock to pot; set aside.
  • Cut pumpkin or squash into 8 equal chunks, removing any seeds or strings. Add to stock and bring to a boil. Reduce heat to maintain a low rolling boil and cook until tender, about 30 minutes. Remove pumpkin, and drain well in a colander. Cool to room temperature. Reserve stock for another use. Scrape pumpkin flesh into a bowl, discarding the skin. Mash the flesh thoroughly; set aside.
  • Meanwhile; bring 2 to 3 cups water to a boil in a small saucepan. Add the dried chiles, and cook, uncovered, until softened, about 5 minutes. Drain, stem and seed the chiles; set aside.
  • Place pumpkin seeds in a small skillet over medium-low heat. Toast, stirring and shaking skillet, until the seeds begin to swell and pop, 3 to 5 minutes; set aside. In a spice grinder or a mortar and pestle, combine the cumin, coriander, and remaining 1/2 teaspoon peppercorns. Grind until fine; set aside.
  • In the jar of a blender, combine the coarsely chopped onion, finely chopped garlic, tomatoes, drained chiles, pumpkin seeds, and ground spices; puree until smooth.
  • In a medium saucepan, heat 2 tablespoons lard over medium-high heat until rippling. Add the pureed tomato mixture. Reduce heat to medium, cover, and cook, stirring occasionally, until the fat starts to separate, about 15 minutes. Add the reserved mashed pumpkin or squash and the vinegar, stirring to mix well. Cook, covered, for 10 minutes more. Taste and adjust for seasoning.
  • Heat the remaining 2 tablespoons lard in a large skillet over medium-high heat. Add the pork, seasoning with salt and pepper. Cook until lightly browned and crisp, but not dry, about 5 minutes.
  • Spoon seasoned pumpkin or squash mixture onto a platter and top with pork.

2 ½ pounds russet potatoes, scrubbed
¼ cup margarine (such as Country Crock®)
1 cup canned pumpkin
1 teaspoon salt
½ teaspoon pumpkin pie spice
½ teaspoon dried basil

Steps:

  • Cut potatoes into big chunks, leaving skins on.
  • Combine potatoes and 1 1/2 cups water in a stovetop pressure cooker.
  • Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Heat until steam escapes in a steady flow and makes a whistling sound, about 10 minutes. Adjust temperature until regulator is gently rocking. Cook for 10 minutes. Let pressure release naturally according to manufacturer's instructions, 5 to 10 minutes. Unlock lid and remove.
  • Drain water and mash potatoes. Stir in margarine. Stir in pumpkin, salt, pumpkin pie spice, and basil until combined.

I found this recipe from Kraft and the family loved this version of mashed pumpkin for a change. Potatoes are also wonderful done this way. It depends on the moisture in the cooked pumpkin as to how much cream you may need and of course I do prefer the good "ol" aussie Kraft cheddar for this recipe! :-)

  • Remove the seeds and skin from pumpkin and cut into smaller pieces.

  • Drain pumpkin and mash the pumpkin until smooth, add grated cheese, cream (enough to make smooth) , pepper and salt and continue to mash until cheese has melted.

Move over, sweet potato, there's a new brightly hued side dish in town: tender spiced pumpkin. This recipe comes from Virginia Willis's "Basic to Brilliant, Y'all."

1 (2 1/2-pound) sugar pumpkin, trimmed, cleaned, and cut into 2-inch wedges
2 tablespoons molasses (or maple, sorghum, or cane syrup)
1 tablespoon unsalted butter
Finely grated zest and juice of 1/2 orange
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
Pinch of cayenne pepper
Coarse salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with a nonstick baking mat or piece of parchment paper; set aside.
  • Place pumpkin wedges on baking sheet and transfer to oven; bake until fork-tender, 35 to 40 minutes. Remove from oven and let cool slightly.
  • When pumpkin is cool enough to handle, scoop out flesh and transfer to a large bowl; discard skin. Add molasses, butter, orange zest and juice, cinnamon, allspice, nutmeg, and cayenne; season with salt and pepper.
  • Using a potato masher, heavy-duty whisk or handheld mixer, beat until smooth. Transfer to a warm serving bowl.

Mashed Pumpkin Potatoes image

This is my personal rendition on a favorite from Quebec. The addition of pumpkin to ordinary mashed potatoes gives them an nice earthiness that goes well with roasted poultry or other autumnal fare. I have not tried it with canned pumpkin but will experiment eventually. Though I don't cook much with butter, you should feel free to add some more to suit your taste.

2 cups potatoes, cut into 1 inch cubes
2 cups pumpkin, cut into 1 inch cubes
1/2 medium onion, small dice
2 slices Canadian bacon, small dice
cooking spray
2 -4 tablespoons evaporated skim milk
1 -2 tablespoon butter (optional)

Steps:

  • In a large sauce pan cover potatoes and pumpkin with water. Bring to boil and simmer until potatoes are tender, 6-10 minutes.
  • While potato/pumpkins are cooking. Sauté onions and Canadian bacon in a non-stick pan prepared with a bit of cooking spray about 3-4 minutes. Onions should should be tender and golden. If the pan gets dry while cooking, sprinkle a bit of water into the pan.
  • Drain potatoes and pumpkin and return to pan. Lower heat to the lowest flame possible. Mash by with a potato masher, mixer or immersion blender. Add milk and butter to thin a bit and make mash creamier.
  • Mix in the onions & bacon.
  • Serve.
