PIMIENTO CHEESE DIP

2 cups freshly grated sharp Cheddar
8 ounces cream cheese, at room temperature
4 ounces diced pimientos, drained
1/4 cup mayonnaise
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
Kosher salt
1 teaspoon chopped fresh chives
Crackers and assorted crudités, for serving

Steps:

  • Add the Cheddar, cream cheese, pimientos, mayonnaise, onion powder, cayenne, garlic powder and 1/2 teaspoon salt to a large mixing bowl. Use a hand mixer to beat the mixture until it is well combined and fluffy, about 1 minute. Salt to taste.
  • Transfer the dip to a serving bowl and garnish with the chives. Serve with crackers and assorted crudités.

Try spreading it on buns with hamburgers or sloppy joes for a new twist! Soars above store-bought! Can be kept under refrigeration for up to one week.

1 (2 pound) loaf processed cheese food (such as Velveeta®), cut into 8 pieces
2 (7 ounce) jars pimento peppers, drained and chopped
¼ cup tarragon vinegar
¼ cup mayonnaise
¼ cup unsalted butter
¼ cup white sugar

Steps:

  • Combine cheese food, pimento peppers, tarragon vinegar, mayonnaise, butter, and sugar in a large saucepan or Dutch oven over low-heat; cook, stirring occasionally, until the cheese and butter are melted completely, about 20 minutes.
  • Pour mixture into sealable containers and refrigerate at least 4 hours before serving.

Being from So California originally I had never heard of pimento cheese. Once I tasted it I was hooked. But....way too many calories for me to have it as anything more than occasional treat. So, I went to work trying to make it as low fat as I could and still have that great flavor. I just made this and it's resting comfortably in the fridge. Might have to "tweak" it a bit, but here goes! Cooking time is chilling time.

1/2 cup fat-free cottage cheese
1/2 cup fat free cream cheese
4 ounces diced pimentos, with liquid
3 tablespoons stuffed green olives, diced
1/4 cup Greek yogurt
2 cups fat-free cheddar cheese, shredded and divided

Steps:

  • In a food processor blend the first 5 ingredients until smooth. Add 1 c cheese, blend just until mixed.
  • Stir in remaining cheese and chill for at least 2 hours.
