4 Italian sausage links (4 ounces each), sliced
1 medium onion, chopped
2 garlic cloves, minced
2 teaspoons olive oil
2 cans (14-1/2 ounces each) chicken broth
8 ounces uncooked angel hair pasta, broken in half
2 packages (9 ounces each ) fresh spinach, trimmed and coarsely chopped
2 tablespoons all-purpose flour
1/4 teaspoon pepper
1/3 cup heavy whipping cream

Steps:

  • In a Dutch oven, cook the sausage, onion and garlic in oil over medium heat until meat is no longer pink; drain. Add broth; bring to a boil. Add pasta; cook for 3 minutes, stirring frequently., Gradually add spinach. Cook and stir until pasta is tender and spinach is wilted, 2-3 minutes. In a small bowl, combine the flour, pepper and cream until smooth; gradually stir into pasta mixture. Bring to a boil; cook and stir until thickened, 1-2 minutes.

3/4 cup pine nuts
1/3 cup olive oil
6 cloves garlic, minced
1/2 teaspoon dried crushed red pepper
3/4 pound angel hair pasta
3 pounds fresh spinach, washed & stemmed
3 tablespoons butter
1/2 cup grated Parmesan cheese
1/8 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Saute pine nuts in olive oil until golden. Remove nuts and set aside. In same oil, saute garlic and red pepper for 3 minutes; set aside. Cook pasta per pkg directions until tender and drain. Reheat oil containing garlic and pepper; add spinach and saute until wilted (about 3 minutes.) Stir in butter. In large bowl, toss pasta, spinach, pine nuts and cheese. Add salt and pepper and serve.

2 ⅓ tablespoons butter
1 pinch ground nutmeg

Steps:

  • Toast pignoli nuts slowly in a skillet, watching carefully not to burn. Remove from skillet when nuts are tan in color.
  • Cook noodles in boiling salted water until al dente. Drain.
  • Combine heavy cream, clarified butter, 2 1/3 tablespoons butter or margarine, nutmeg, and salt and pepper in a saucepan; heat thoroughly. Add noodles to the heated sauce. Let sauce reduce to a creamy consistency. Top with nuts, and serve.

1/4 cup extra virgin olive oil
2 garlic cloves, minced

1 medium yellow onion, chopped
1 (8 ounce) can tomatoes, chopped (no salt added)
1 (16 ounce) package fresh spinach, torn

Steps:

  • Cook pasta per pkg; while it cooks, heat oil in a skillet and saute the onion and garlic over medium heat for 2 minute.
  • Add tomatoes to the onion/garlic mixture, along with salt and pepper to taste and cook 3 min more, stirring; then add spinach and toss until wilted.
  • Drain pasta and place in a large pasta bowl; add the skillet mixture to the pasta and toss to coat.
  • Sprinkle with parmesan and serve.

12-14 ounces of long pasta (I used our Tri-Color Angel Hair Pasta Nests, but you can sub any long shape)
2 T. olive oil
12 garlic cloves, minced (please use fresh, not jarred)
12 canned anchovy fillets, chopped
1/4 cup capers
3 bags ready to cook baby spinach leaves (approx 12 oz per bag)
1/4 cup fresh Parmesan cheese
Fresh chopped tomatoes or sliced tomatoes, for garnish

Steps:

  • Heat olive oil in a large saute pan over medium heat. Add garlic and saute until golden brown.
  • Add anchovies to pan, and using a wooden spoon, mash and stir them until they dissolve into the oil.
  • Add capers and cook and additional minute.
  • Add spinach leaves, adding one bag at a time, tossing continuously until it wilts. Add a splash of water or wine if needed. Reduce heat to low and keep warm.
  • In the meantime, cook pasta according to package directions. Drain and add pasta to spinach mixture.
  • Serve on plates topped with fresh Parmesan and chopped or sliced tomatoes!

1 pound dried angel hair pasta
½ cup reserved pasta cooking liquid
½ pound fresh baby spinach
½ teaspoon granulated garlic dissolved in 1 teaspoon of water (this step will open up the flavors of the dried garlic)
¼ cup lemon juice
3 tablespoons olive oil (extra virgin )
Kosher salt and freshly ground black pepper (to taste)
½ tablespoon fresh nutmeg (grated)
2 tablespoons flat leaf parsley (minced)
2 tablespoons lemon verbena (if available, optional - minced )
⅓ cup Parmesan cheese (freshly grated )
½ cup pine nuts (toasted )

Steps:

  • Bring 6 quarts water to a full boil. Salt the water.
  • Add the pasta all at once. Stir gently to submerge. Reduce the heat slightly to prevent boil-over, and boil pasta according to the packaging until al dente.
  • When the pasta is done, remove and reserve ½ cup of starchy water the pasta cooked in.
  • Drain pasta and return the pasta back to the pot you cooked it in. Turn the heat up to medium-high.
  • Add the reserved liquid, spinach, garlic, lemon juice, olive oil, salt, pepper and nutmeg. Stir gently but thoroughly until the spinach is wilted and the sauce has reduced and emulsified, about 3 minutes.
  • Remove the pot from the heat and fold in the grated cheese and the minced herbs. Correct seasonings.
  • Plate and top each serving with some toasted pine nuts.

BUTTERY SPINACH ANGEL HAIR PASTA



Buttery Spinach Angel Hair Pasta image

2 big cups fresh baby spinach
4 oz angel hair pasta (cooked al dente to package directions, drained)
3/4 cup reserved pasta cooking water
4 TB butter (plus additional for serving)
1 1/2 tsp minced garlic
1 tsp lemon juice
1/2 tsp salt (more to taste)
1/4 tsp red pepper flakes (more to taste)

Steps:

  • Prepare pasta according to package directions. Drain and set aside, reserving some of the pasta water.
  • In a large skillet, melt the butter over medium heat. Saute the garlic and red pepper flakes until golden, about 3 minutes. Add the lemon juice and stir. Turn the heat off.
  • Add the pasta and pasta water to the pan. Toss to coat. Stir in the spinach and salt. Taste and reseason to taste.
  • Serve hot with additional butter if desired.

1/2 cup red bell pepper, sliced julienne
1 cup sliced mushrooms
2 cloves garlic, crushed

Sea salt
Crushed red pepper flakes (optional)

Steps:

  • Slice chicken breast into strips. Saute in olive oil over medium heat until still slightly pink.
  • Bring water to boil, add pasta and bring to a boil. Cook for 5 mins.
  • Add in red bell pepper and mushrooms to chicken. Saute for 2 minutes. Add spinach, garlic, crushed red pepper and saute for 1-2 minutes.
  • Drain pasta and put back in pan. Add 2 tbs light sour cream, stir, and add in cooked chicken mixture. Let stand for 5 minutes. Salt as desired.

1/4 c. extra-virgin olive oil
2 lb. Manila or littleneck clams
finely chopped shallots
Zest of 1 lemon
1 fresh or dried bay leaf
1/2 tsp. red pepper flakes
1 c. dry white wine
kosher salt and freshly ground black pepper
3 oz. fresh baby spinach
4 large radishes
2 scallions

Steps:

  • Bring a large pot of salted water to a boil over high heat. Stir pasta into boiling water and cook, stirring often to keep strands separated, for about 2 minutes, or until tender but still firm to the bite. Scoop out and re­serve 1/2 cup of the pasta cooking water. Drain the pasta.
  • Meanwhile, heat a large heavy skillet over high heat. Add 1 tablespoon of olive oil, then add clams and cook for 1 minute. Stir in shallots, garlic, lemon zest, bay leaf, and red pepper flakes. Add wine, cover, and cook for about 2 minutes, or until clams open. Using tongs, transfer clams to a large bowl, then cover to keep warm.
  • Simmer clam-wine broth until it is reduced by about one-fourth, about 2 minutes (pasta will absorb a lot of liquid, so don't reduce liquid too much). Stir in remaining 3 tablespoons olive oil and season with salt and pepper. Reduce heat to low.
  • Add pasta to skillet and toss to coat with liquid. Add clams and any accumulated juices in bowl to pasta. Add spinach and half of radishes and toss, adding enough of reserved pasta water to make a light sauce.
  • Using tongs, divide pasta and clams among four wide pasta bowls or place them in one large shallow serving bowl. Pour in broth. Drizzle olive oil over each serving and sprinkle with scallions and remaining rad­ishes. Discard lemon zest and bay leaf and serve immediately.
