A good-tasting fruit vinegar can be the cooking medium for an entire dish. For these ribs, adobo, the vinegar-laced national dish of the Philippines, is a delight.

1 cup apple cider vinegar, preferably organic and unfiltered
1 tablespoon soy sauce
3 small bay leaves
1 large jalapeño chili, stemmed and roughly chopped
1 side baby-back pork ribs (about 2 pounds), cut into individual ribs
2 teaspoons sea salt
6 garlic cloves, peeled
2 teaspoons black peppercorns
Cooked rice

Steps:

  • In a bowl, combine vinegar, soy sauce, bay leaves and chili and set aside.
  • Season ribs with 1 teaspoon salt. Using a mortar and pestle or small food processor, grind remaining teaspoon salt, garlic and peppercorns to a rough paste. Rub paste into ribs and transfer to resealable plastic bag. Pour in vinegar mixture, seal and refrigerate at least 1 hour or overnight, turning occasionally.
  • Transfer ribs and marinade to a pot, bring to a boil, reduce heat and simmer, covered, 1 hour, until meat is tender. Remove ribs to a baking sheet and simmer sauce until thick.
  • Meanwhile, preheat broiler. Pour 1/4 cup of thickened sauce over ribs, turn to coat, and broil until nicely browned, about 7 minutes, turning once. Serve with remaining sauce and rice.

These sweet-and-spicy ribs with chipotle and fresh orange are tender and sticky and just right.

1 rack pork spareribs, cut in half (about 3 1/2 pounds)
2 tablespoons chipotle in adobo
2 tablespoons soy sauce
1 tablespoon honey
3 cloves garlic
Juice of 3 oranges, plus 2 teaspoons grated orange zest
1 medium onion, chopped
2 bay leaves
1 tablespoon lime juice
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the ribs in a roasting pan. Put the chipotle, soy, honey, garlic, orange juice and zest and onion in a blender and blend until smooth. Pour over the ribs. Add the bay leaves and enough water to almost cover the ribs (about 3/4 cup). Cover with foil and bake until the meat is fork tender and very soft, about 2 1/2 hours.
  • Remove the pork from the pan and pour the liquid into a saucepan to reduce until it is a glaze-like consistency, about 10 minutes. Add the lime juice and season with salt and pepper.
  • Preheat the broiler. Arrange the ribs in a single layer on a baking sheet or broiler pan and brush with the glaze. Broil until sticky and charred, about 6 minutes.

1/3 cup soy sauce
2 tablespoons garlic, minced
2 bay leaves
1 teaspoon peppercorn
4 lbs country-style pork ribs
3/4 cup coconut milk

Steps:

  • Mix together the vinegar, soy sauce, garlic, bay leaves, and peppercorns.
  • Add pork ribs and toss to coat.
  • Marinate overnight in refrigerator, turning at least once.
  • Dain marinade into a large straight-sided skillet or 2 smaller skillets.
  • Bring to a boil and add ribs.
  • Cover and simmer for 1 hour, turning ribs over half way through.
  • Add coconut milk and simmer 20 minutes longer, uncovered.
  • Remove ribs and turn heat to high.
  • Boil the sauce and reduce to about 1 cup.
  • Strain and set aside.
  • Brush the ribs with the sauce.
  • Grill or broil until slightly crisp, basting with the sauce.

Oven-baked ribs, which were once the standard, are now uncommon, because everyone thinks grilled ribs are the thing. But these are delicious, great with rice or polenta, and far easier than grilling. But if you like, you can use this sauce for grilling, too: parboil the ribs in water until nearly tender, then grill them, basting with the sauce, until they are nicely browned. Other cuts of meat you can use here: chunks of pork shoulder, short ribs (which will need much more time), bone-in chicken thighs (which will cook much more quickly).

Yield makes 4 servings

Number Of Ingredients 8

3 to 4 pounds spareribs, more or less, separated into individual ribs
Salt and black pepper to taste
1 tablespoon minced garlic
1 medium onion, peeled and quartered
2 teaspoons fresh oregano or marjoram leaves
1 tablespoon pimentón (page 14) or 1 dried chipotle chile, soaked in hot water to soften, then minced
2 cups chopped tomatoes with their liquid (canned are fine)
1 tablespoon wine vinegar

Steps:

  • Place a large deep skillet with a lid over medium-high heat and add the ribs. Cook, turning as necessary and sprinkling with salt and pepper, until they are well browned, at least 10 minutes. Transfer to a plate.
  • Preheat the oven to 350° F. Turn the heat under the pan to medium and add the garlic, onion, oregano, more salt and pepper, and pimentón. Cook, stirring occasionally, until the onion is well softened, about 10 minutes. Add the tomatoes and vinegar and cook, stirring occasionally, until the tomatoes begin to soften, 5 to 10 minutes. Add the ribs, cover, and put the pan in the oven.
  • Cook until the ribs are tender and just about falling from the bone, an hour or more. Serve immediately or cover and refrigerate for up to 2 days; reheat gently before serving.

When DH was in grad school one of his professors invited the entire class and their families to enjoy a Filipino meal prepared by his wife, Priscilla. She fed about 50 of us seated on the floor in front of long rolls of paper! 20 years later, that professor is no longer at this school but my husband and his son-in-law now teach here. Rachel, Priscilla's daughter, shared her Mom's recipe with me. She has added slow cooker instructions to fit her busy lifestyle but it is still the same great flavor that her mom prepared for us over 20 years ago. 3 -4 lbs pork (cut in 2-inch cubes) or 3 -4 lbs chicken (cut into serving pieces)
1/2 cup vinegar
1/2 cup soy sauce
1 cup water
2 -3 bay leaves, crumbled

Steps:

  • Note: The original recipe just called for vinegar. I use Apple Cider Vinegar - just use what you have. Some reviewers have used rice vinegar and been pleased. Rice vinegar seems to have a touch of sweetness. Do what pleases you - experiment and have fun in the kitchen.
  • Stove top instructions.
  • Combine all of the ingredients in a large pot. (The women who shared the recipe with me put the spices into the pot freely. Reviewer Felina suggested tying the spices into a cheesecloth to so that you get the flavor but don't bite into the peppercorns while you eat the dish - a stainless tea ball works too.   • Allow everything sit at room temperature for at least 15 minutes.
  • Bring to a boil then reduce heat to low; simmer for 1 1/2 - 2 hours (leave lid slightly ajar).
