APPLE MUFFINS
This recipe uses chopped apple and apple juice to make delicious apple muffins from scratch.

Steps:
- Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
- In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well. In a small bowl, combine apple juice, oil, and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.) Stir in chopped apples.
- Fill cups 2/3 full. Bake for 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

- Preheat oven to 400°F. Lightly grease a 12- cup muffin pan with cooking spray or line with baking liners.
- Place apple and granulated sugar in a medium bowl; toss to coat, and let stand 10 minutes.
- Meanwhile, whisk together flour, brown sugar, baking powder, salt, and cinnamon in a large bowl.
- Stir milk, melted butter, vanilla, and eggs into apple mixture; add to flour mixture, stirring until just combined. Divide batter evenly among prepared muffin cups.
- Bake in preheated oven until a wooden pick inserted in center comes out clean, 18 to 19 minutes. Cool in pan 5 minutes; remove muffins to a wire rack, and let cool 15 minutes to serve warm. Or let cool to room temperature.
RAW APPLE MUFFINS
I made these years ago everyday in a small cafe I worked at. They are chunky with the batter just holding all the fruit and nuts together.

- Using 3 Bowls:.
- Combine apples and sugar.
- Combine dry ingredients except raisins and walnuts.
- Combine liquid.
- Mix liquids and apples. Combine with dry ingredients to moisten. Add walnuts and raisins. Bake 25 minutes at 350.
- i've just made them recently and if all the quantities are included and not overbaked, the apples alone make this moist and almost sticky. So i hope some will give this recipe a try.

These are really yummy muffins. My friend Jenny brought these to a potluck once and I asked her for the recipe. I am giving the original measurements for the topping as she gave me, however I prefer to make less toppping.

- Prehat oven to 350 F and have ready greased muffin tins.
- Sift together flour, baking powder, baking soda, salt, sugar, and nutmeg.
- Cut in shortening until mixture is like fine crumbs.
- Mix together milk, eggs, and grated raw apple.
- Add all at once to the flour mixture and then stir together quickly and thoroughly.
- Fill greased tins 2/3s full and bake 20-35 minutes, or until a toothpick tests done.
- Remove from pan and dip tops first in melted butter then in cinnamon sugar mixture.

APPLE SPICE MUFFINS RECIPE BY TASTY
Fill your kitchen with the cozy aromas of fall with these apple spice muffins. Shredded apple and applesauce add moisture and natural sweetness without the extra sugar. If jumbo muffins aren't your thing, this recipe will make 12 standard-sized muffins; just reduce the cooking time by about 5 minutes.

- Make the apple spice blend: in a small bowl, stir together the cinnamon, ginger, allspice, cloves, and nutmeg.
- Make the muffins: In a medium bowl, whisk together 1 cup (125 G) all-purpose flour, the whole wheat flour, baking powder, baking soda, salt, and 1 tablespoon of the spice blend.
- In a large bowl, use an electric hand mixer on medium speed or whisk to beat the butter until light yellow and aerated, about 2 minutes. Add the granulated and brown sugars and continue beating until light, fluffy, and nearly doubled in volume, 2 minutes more. Add the eggs, 1 at a time, beating well after each addition.
- Add the applesauce and shredded apple and stir with a rubber spatula to incorporate.
- Add half of the dry ingredients to the wet and gently fold to combine, being careful not to overmix. Add 1¾ cups of the diced apples to the remaining dry ingredients and toss to coat, then add to the wet ingredients and gently fold to combine. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, up to overnight.
- Preheat the oven to 425°F (220°C). Line a 6-cup jumbo muffin tin with paper liners and lightly grease with nonstick spray.
- In a medium bowl, toss together the remaining ¾ cup diced apples, melted butter, remaining 1 tablespoon flour, and remaining 1½ teaspoons of apple spice blend.
- Evenly divide the batter between the prepared muffin cups. Top each muffin with some of the apple topping and sprinkle with the demerara sugar.
- Bake the muffins for 15 minutes, then rotate the muffin tin 180° and bake for 12-15 minutes more, until the muffins are puffed and golden brown and a cake tester inserted into the center comes out clean.
- Let cool for 15-20 minutes before serving.
