BEER-B-Q RIBS FOR TWO
This Beer-B-Q Sauce is heaven. You'll want to drink it, but let's not do that. Rather, let's slather it on some ribs and grill 'em up, because it's darn tasty that way! Also, I should mention that you shouldn't skip the dry rub-and-baking part. Yes, it means longer prep time, but really, the oven is doing all the work for two hours, and you'll achieve fall-off-the-bone ribs.

- For the ribs: Position an oven rack in the middle of the oven and preheat to 325 degrees F. Line a large baking sheet with aluminum foil.
- Remove the silver skin on the backside of the ribs and discard. Place the racks of ribs on the prepared baking sheet, meaty-side up. (If the racks of ribs are too long for your baking sheet, arrange on 2 lined baking sheets, cutting the racks in half as necessary.)
- For the dry rub: In a small bowl, mix together the sugar, chili powder, paprika, garlic powder, onion powder, cayenne, cumin, 1 tablespoon salt and 1 teaspoon pepper. Sprinkle the rub generously on top of the ribs, saving just enough for a light rub on the underside. Tightly cover the entire baking sheet with another sheet of foil and bake until the meat falls easily off the bone when you pierce it with a fork, 2 1/2 hours.
- For the beer-b-q sauce: Meanwhile combine the ketchup, beer, honey, Worcestershire, sugar, mustard, garlic powder and onion powder in a medium bowl and set aside.
- Remove the ribs from the oven and let rest for 15 minutes. Meanwhile, preheat a grill for cooking at medium-high heat. Using a pastry brush, brush a medium layer of beer-b-q sauce on the meaty side of the ribs. Gently place the racks of ribs, meaty-side down, on the grill and cook until there is a nice char on the meat, 5 to 7 minutes. Remove from grill and let rest for another 5 minutes. Slice and serve with your favorite sides!
BARBECUED RIBS

- Heat the vegetable oil in a large saucepan over medium-low heat, and saute the onions and garlic for 5 to 7 minutes, until the onions are translucent but not browned. Add the chili powder, ground cumin and red pepper flakes and continue cooking for 1 minute. Add the zest and ginger and cook for an additional minute. Add the vinegar, tomato paste, honey, mustard, soy sauce and orange juice and simmer uncovered on low heat for 15 minutes, until thick.
- Marinate the ribs in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator.
- Prepare a grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the ribs on the grill and cook for about 25 to 30 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed.
- Serve with extra barbecue sauce on the side.

- Combine ketchup, vinegar, sugar, onion, and lemon juice in a small saucepan. Season with Worcestershire sauce, black pepper, allspice, celery salt, and mustard powder. Simmer over medium low heat for 5 minutes.

- 1. Preheat oven to 350°F. Place ribs, meat-side up, on 2 baking sheets. Sprinkle with salt and pepper. Bake 30 minutes.
- 2. Brush 1/4 cup barbecue sauce over each rack of ribs; bake for 20 minutes. Brush another 1/4 cup sauce evenly among all 3 racks; bake 20 minutes more. Repeat, using 1/4 cup sauce among all 3 racks; bake for 30 minutes.
- 3. To serve, cut each rack into thirds and arrange on a large decorative platter. Moisten with a little warm barbecue sauce. Sprinkle with chopped parsley to garnish.
APPLE BUTTER BBQ RIBS
This recipe is much easier than it sounds. It takes a while to prepare, but it's well worth the wait. I usually cook the ribs the day before and grill them for a quick dinner the next night.

- Preheat the oven to 350 degrees F (175 degrees C).
- Cut spareribs into 6 portions. Coat with garlic, then sprinkle with onion powder, cayenne, salt, and black pepper. Drizzle lemon juice over top. Wrap each portion in a double thickness of foil.
- Bake in the preheated oven for 1 1/2 hours.
- Remove from the oven. Unwrap ribs and drain drippings; transfer ribs to a baking dish. Liberally apply apple butter and approximately 10 ounces barbecue sauce. Cover and marinate at room temperature for 1 hour, or refrigerate for 8 hours or overnight.
- Preheat an outdoor grill for medium heat and brush the grate with oil.
- Place ribs on grill, and cook, basting with the remaining 4 ounces barbecue sauce, until meat pulls away easily from the bone, 20 to 25 minutes.

- For Rub: Mix chili powder, oregano, salt, pepper, cayenne.
- Rub on ribs, cover with foil and seal.
- Place on cookie sheets and bake at 350 for 1 1/2 hours.
- For Sauce:
- Fry 2 slices bacon in olive oil with fresh thyme.
- Add garlic and onion and salute in bacon grease.
- Add 3 cups catsup, peach preserves, molasses, brown sugar, paprika and cumin.
- After 1 1/2 hours, check ribs for tenderness.
- If coming off the bone, coat both sides with sauce and bake covered for another 1 hour.
- Open foil for last 1/2 hour. Finish on grill if desired.
