SCALLION SESAME TURKEY BURGER

I found this in some random cookbook. One of the best turkey burgers ever. Full of flavor. Make an extra for lunch the next day, reheats beautifully.

1 1/2 lbs ground turkey
3 tablespoons sesame seeds
2 tablespoons soy sauce
1/2 cup minced scallion, white and green parts both
2 -3 tablespoons minced cilantro
2 teaspoons pulverized garlic
2 tablespoons sesame oil
salt
3/4-1 1/4 cup breadcrumbs, depends on how moist the turkey is
fresh ground pepper
oil, if desired (for cooking)

Steps:

  • Mix togeter, gently. the turkey, sesame seeds, soy, scallions, cilantro, garlic, sesame oil, 1 teaspoon of salt, and bread crumbs.
  • Form into patties.
  • I usually mix all this together and make patties in the morning and leave in the refrigerator till I'm ready for them.
  • Sometimes that is the next day.
  • Brush with a little oil before grilling if desired.
  • Grill on the George Foreman, in a grill pan.
  • If you're using the outside grill increase the breadcrumbs a bit to insure they don't fall apart.

this recipe was in AARP adapted from Sara Moulton's Weeknight Meals. We tried it and found it delicious!! In fact so much so, we had a 32lb hen turkey in the freezer, cut her up and ground the meat so we can use for this recipe and others. It's an easy recipe to make and very good for you. They smell so good while mixing up, you can hardly wait. Yuuuuummmmm gooood!!!

1 1/2 lbs ground turkey
1 medium red bell pepper, finely chopped
1/4 small napa cabbage, shredded
4 scallions, finely chopped
1 large egg white, lightly beaten
3 tablespoons cilantro, finely chopped
2 tablespoons light soy sauce
1 tablespoon fresh ginger, finely grated
1/2 teaspoon sesame oil
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
2 -3 tablespoons vegetable oil, divided
6 tablespoons light mayonnaise
1/2 teaspoon sesame oil
1 teaspoon light soy sauce
2 teaspoons wasabi paste
6 whole wheat hamburger buns, toasted

Steps:

  • mix together turkey, scallions, bell pepper (I used a small), egg white (I used 2 whole eggs), cilantro, 2 T soy sauce, ginger, 1/2 t sesame oil, salt and pepper. Shape into 6 patties about 1/2 inch thick.
  • Heat 2 T veg. oil in skillet until hot, reduce heat to medium; add turkey burgers and cook 5 min on each side or until cooked thru, adding more oil as needed.
  • Meanwhile, stir together the mayo., prepared wasabi, remaining teaspoon soy sauce, and 1/2 t sesame oil.
  • Put a burger in each bun and top with about 1 T of the mayo sauce.

2 lbs lean ground turkey
1/3 cup applesauce
3 tablespoons hoisin sauce
1 tablespoon soy sauce
1 tablespoon toasted sesame oil, plus additional
toasted sesame oil, for the pan
1 tablespoon finely minced gingerroot
2 -3 medium garlic cloves, finely minced
1 pinch salt & freshly ground black pepper
3 scallions, white and light green parts, finely chopped

Steps:

  • In a large bowl, combine the turkey, applesauce, hoisin and soy sauces, sesame oil, ginger, garlic, scallions and salt and pepper to taste. Form the meat into 6 patties. (May be covered and refrigerated for up to 24 hours.).
  • Lightly brush a grill pan or skillet with the sesame oil and place over medium-high heat. Add the patties and fry until golden, about 4 minutes. Turn and cook until the other side is golden and the turkey is cooked through, about 5 minutes. Transfer to a bun. Serve immediately.
