This rich, buttery frosting has just the right amount of sweetness. So it's a perfect compliment to any flavor cake.

Number Of Ingredients 6

1 cup sugar
1/3 cup water
6 large egg yolks, room temperature, lightly beaten
1-1/2 teaspoons vanilla extract
1-1/2 cups butter, softened
6 tablespoons confectioners' sugar

Steps:

  • In a heavy saucepan, bring sugar and water to a boil; cook over medium-high heat until sugar is dissolved. Remove from the heat. Add a small amount of hot mixture to egg yolks; return all to the pan, stirring constantly. Cook 2 minutes longer or until mixture thickens, stirring constantly. Remove from the heat; stir in vanilla. Cool to room temperature., In a bowl with the whisk attachment, cream butter until fluffy, about 5 minutes. Gradually beat in cooked sugar mixture. Beat in confectioners' sugar until fluffy, about 5 minutes. If necessary, refrigerate until frosting reaches spreading consistency. Store in the refrigerator.

7 1/2 cups powdered sugar (2 lbs)
12 tablespoons unsalted butter, softened (1 1/2 sticks)
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 cup heavy cream

Steps:

  • Cream powdered sugar, butter, vanilla, and salt. While mixer is running, slowly add a portion of the cream to the mixture. Continue adding the cream to make the frosting of a good spreading consistency. You may need a little less or a little more of the cream called out in the recipe to achieve your desired consistency.

6 large egg yolks
3/4 cup sugar
1/2 cup light corn syrup
2 cups unsalted butter, softened
2 tablespoons vanilla (or other flavoring--see not at top of page)

Steps:

  • In mixer bowl at high speed, beat egg yolks until pale yellow, 4 to 5 minutes.
  • Butter a 2-cup glass measuring cup (you will need it for the next step--so butter it now).
  • In a 2- to 3-quart pan, combine sugar and corn syrup.
  • Cook over medium-high heat and stir until sugar is dissolved and mixture comes to a rolling boil.
  • Immediately pour into the butter glass measuring cup.
  • Beating constantly at medium speed, pour syrup in a thin, steady stream into egg yolks (avoiding beaters).
  • Continue beating until mixture is at room temperature (7 to 10 minutes).
  • Add butter and vanilla.
  • Beat just until smooth.
