I served these fun appetizers for the first time on Thanksgiving. My family asked me to make them several times after that, so the tasty little bites made an appearance on my Christmas spread that year, too. We love them so much they've become a holiday tradition. -Tracy Burdo, Burlington, Vermont

Number Of Ingredients 10

1/4 cup butter, cubed
1 large onion, finely chopped
2 celery ribs, finely chopped
3 large eggs, beaten
1/4 cup minced fresh parsley
3/4 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
9 cups soft bread crumbs
2 medium apples, peeled and finely chopped

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add onion and celery; cook and stir 4-6 minutes or just until tender., In a large bowl, mix eggs, parsley, salt, thyme and pepper. Stir in bread crumbs, apples and the onion mixture. Shape into 2-in. balls. Place in a foil-lined 15x10x1-in. baking pan. Bake 30-35 minutes or until golden brown.

2 1/2 lbs cooking apples or 2 1/2 lbs pears
2/3 cup pitted dates
1 cup apple juice
1 teaspoon ground cinnamon
1/2 cup finely chopped walnuts

Steps:

  • Halve and core the unpeeled fruit and place in a large, heavy saucepan.
  • Caste iron is good.
  • Add the dates, apple juice and ground cinnamon.
  • Cook over very low heat, stirring occasionally for 4 to 6 hours, or until the mixture forms a dry paste.
  • Scrape into a bowl and cool, then roll the mixture into bite size balls.
  • Toast the nuts under the broiler until golden.
  • Coat the balls in the nuts.
  • Twist each ball into a candy wrapper or cellophane; plastic wrap can be used.
  • Store in an airtight container.
  • Variation: Use half ground cinnamon and half ground ginger instead of the 1 teaspoon cinnamon.

5 slices country white sandwich bread, cut into 3/4-inch pieces
6 tablespoons unsalted butter, melted
3/4 cup sugar, divided
6 tablespoons apple cider, divided
5 Granny Smith apples (2 1/2 pounds total), peeled, cored, and cut into 3/4-inch pieces
3/4 cup chopped dates, preferably Medjool (4 ounces)
4 teaspoons all-purpose flour
1 tablespoon lemon juice
1/4 teaspoon fine salt
1/4 teaspoon ground allspice
Heavy cream, for serving

Steps:

  • Preheat oven to 375 degrees. Scatter bread on a rimmed baking sheet and bake until dry and light golden brown, about 12 minutes, tossing halfway through. Crush half the bread to make crumbs. In a large bowl, combine butter, 1/4 cup sugar, and 3 tablespoons cider, then stir in bread pieces and crumbs.
  • Combine apples, dates, flour, lemon juice, salt, allspice, and remaining 1/2 cup sugar and 3 tablespoons cider. Stir in 1/2 cup bread mixture. Transfer to an 8-inch square baking dish and top with remaining bread mixture. Cover with foil and bake until bubbling in center, 40 to 55 minutes. Uncover and bake until top is golden, 5 minutes more. Let cool 15 minutes (or let sit at room temperature, up to 8 hours). To serve, divide among bowls and top with cream.

This was one of my mother's recipes for Christmas cookies. These moist and crisp cookies are fun and easy to make. These cookies get better over time when the flavors blend together. Enjoy.

1 cup butter
1 1/2 cups sugar
2 eggs
2 tablespoons milk
4 cups Rice Krispies
2 cups dates, chopped
1 teaspoon salt
1 cup pecans, chopped
1 teaspoon vanilla
0.5 (14 ounce) package flaked coconut

Steps:

  • Melt butter and sugar carefully.
  • Add chopped dates and cook until it boils. Take off heat and allow to cool slightly.
  • Add milk and salt into well beaten eggs and stir into hot date mixture.
  • Boil mixture 2 minutes.
  • Add vanilla and nuts.
  • Let cool, then add Rice Crispies and stir.
  • Butter hands, and shape into well rounded tablespoon size balls and roll in coconut.
  • Store in air-tight container.

When I was a youngster, Mom always baked these tender old-fashioned cookies dotted with chewy dates and crunchy walnuts. Much to the delight of my family, I've continued her delicious tradition.

1/2 cup butter, softened
1/3 cup confectioners' sugar
1 tablespoon 2% milk
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/4 teaspoon salt
2/3 cup chopped dates
1/2 cup chopped nuts
Additional confectioners' sugar

Steps:

  • Preheat oven to 325°. In a bowl, cream butter and sugar. Beat in milk and vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in dates and nuts. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake until bottoms are lightly browned, 22-25 minutes. Roll warm cookies in confectioners' sugar; cool on wire racks.

Alternative version of my recipe for Algerian Date Balls that calls for anise in the recipe. My husband and I don't care for the anise, so I tweeked the recipe and used the rice crispy cereal version. my husband loves them. You may also decide to roll into flaked coconut tinted with food coloring for a festive look instead of the powdered sugar. :) Prep time includes cooling time.

1/2 cup butter
3/4 cup sugar
1 teaspoon vanilla extract
1 (8 ounce) package chopped dates, with sugar
1 cup crisp rice cereal
1 cup chopped pecans
1 teaspoon vanilla

Steps:

  • Melt butter and sugar in a saucepan over low heat.
  • Add dates and cook 3 minutes and remove from heat.
  • Stir in cereal, vanilla, and pecans.
  • When cool enough to handle, shape into small balls about 1" in diameter.
  • Roll into confectioners' sugar (or flaked coconut -- see notes in recipe description).
  • Place cookies on cookie sheet lined with waxed paper until set.
  • Store in airtight container.
