GRILLED STEAK MARINADE
Delicious grilled steaks in a rich, savory marinade.

Steps:
- Whisk together all of the ingredients for the marinade, except for the meat, in a small bowl.
- Place the meat in a large zip-top bag and massage the marinade into the meat. Seal the bag, making sure to get out as much air as possible. (Alternatively you could place the meat in the marinade in an airtight container - just be sure to flip it a few times so the meat gets the marinade on both sides).
- Store in the refrigerator for at least 6 hours or up to 5 days. Or keep in the freezer for up to 12 months.
- Set meat on the counter for 20-30 minutes to come to room temperature before grilling.

GRILLED MARINATED SALMON
I got this recipe from an old cookbook. This dish is very fast and easy to prepare. Very healthy and looks elegant! I always have these ingredients in my home. I serve this with a salad and a country style rice.

Steps:
- Combine marinade ingredients. Pour over salmon steaks in a shallow dish. Cover and let marinate 2-3 hours refrigerated.
- Drain salmon, reserving marinade and lime slices for garnish. Grill steaks in a heavy skillet over medium-high heat a few minutes on each side. (I prefer baking in the oven at 350F for 25 minutes - it's ip to you).
- Baste fish throughout cooking with marinade. Cook just until flesh is barely opaque through; flesh should be soft rather than firm.
- Serve garnished with reserved lime slices.

Steps:
- Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
- Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

- In a large resealable plastic bag, mix first nine ingredients. Add steaks; seal bag and turn to coat. Refrigerate 4 hours or overnight., Drain steaks, discarding marinade. Grill steaks, covered, over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°), 5-7 minutes per side.Freeze option: Freeze steaks with marinade in a resealable plastic freezer bag. To use, thaw in refrigerator overnight. Drain beef, discarding marinade. Grill as directed.

GRILLED MARINATED STEAKS WITH MUSHROOMS AND BLUE CHEESE
Recipe from Festival Foods, a grocery store in Green Bay. Time does not include marinating, which is 30 minutes to 2 hours.

- In a small bowl, whisk together three tablespoons of the olive oil, balsamic vinegar, garlic, rosemary and salt and pepper, to taste.
- Pour the olive oil mixture over the steaks and rub in well over both sides. Allow them to marinate in the refrigerator for at least 30 minutes or up to two hours.
- Grill steaks until desired doneness is reached. I like mine medium rare.
- While steaks are grilling, sauté mushrooms and onions in butter and remaining oil with a pinch of salt and pepper over medium-high heat for about five minutes. Add the blue cheese.
- When the steaks are ready, smother with mushrooms and blue cheese.

- In a small bowl, combine the olive oil, soy sauce, steak spice, and garlic. Pour the marinade into the bag with the steaks, making sure to move the liquid around to cover all of the meat. Place steaks in the fridge and marinate for at least one hour and up to eight (I've also done overnight marinating with excellent results).
- Remove the steaks from the fridge one hour before grilling. Heat the grill on high a few minutes to get it nice and hot. Turn it down to medium and place the steaks on.
- For medium rare steaks that are about 3/4 of an inch thick, grill for 5 minutes without touching or flipping over. Turn the steaks over after 5 minutes and grill for an additional 5 minutes. See note.
