APPLE BANANA OAT MUFFINS
Steps:
- Preheat the oven to 425°F. Spray a 12-count muffin pan with nonstick spray or use muffin liners. If using liners, grease the liners so the muffins don't stick. Set aside.
- Place all of the ingredeints in a high powered blender or food processer, in the order listed, except for the apples. Stir in the apples. Divide the batter evenly between the muffin liners, filling almost to the top. Top with a few oats, if desired.
- Bake at 425°F for 5 minutes. Then, while keeping the muffins in the oven, reduce the oven temperature to 350°F and bake for an additional 10-11 minutes. The muffins are done when a toothpick inserted into the center of a muffin comes out clean or press your finger against a muffin, if the top bounces back they are done. Allow the muffins to cool for 5-10 minutes in the pan.
- Muffins stay fresh at room temperature for up to 2 days or in the refrigerator for up to 1 week.

- Pre heat oven to 400 degrees. Place all of the dried ingredients in a bowl and mix to combine.
- In a large separate bowl, add in the remaining ingredients and mix to combine.
- Pour the dry mixture into the wet mixture about ¼ of the bowl at a time and mix with a spoon until just wet and combined. DO NOT OVER MIX.
- Line a cupcake tin with paper baking cups. Pour mix into baking cups 2/3 of the way. Sprinkle a pinch of granulated sugar on top of each muffin.
- Bake 18-20 minutes, until golden brown on the top and a toothpick inserted into the center of a muffin comes out clean.
- Let cool on a wired rack for 2 minutes in the tin. Take muffins out and place back on wired rack to cool completely. Enjoy!

- Beat together the eggs. oil and sugar until fluffy.
- Blend in the milk.
- Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
- Do not over mix. Fold in only until the fruit is mixed through the batter.

- Preheat the oven to 350ºF (180ºC).
- In a medium bowl, mash the banana until mostly smooth. Add the egg and stir to combine.
- Add the honey, baking powder, cinnamon, nutmeg, salt, vanilla and Greek yogurt and mix well. Fold in the oats, then stir in the milk.
- Fill each cup of a greased 6-cup muffin tin ¼ of the way full. Add your additions of choice, then fill the muffin cups to the top with the rest of batter and top with more fruit or nuts.

- Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
- Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.

- In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients - flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
