APPLE BANANA OAT MUFFINS



Apple Banana Oat Muffins image

These easy and healthy apple banana oat muffins combine bananas, applesauce, oats and chopped apples. The batter comes together in a blender and the muffins freeze perfectly.

Number Of Ingredients 11

2 large bananas
1/2 cup unsweetened applesauce
1 large egg
1 teaspoon vanilla extract
3 Tablespoons pure maple syrup
2 Tablespoons milk
2 and 1/2 cups old fashioned rolled oats
1/2 teaspoon ground cinnamon
2 and 1/4 teaspoons baking powder
1 teaspoon baking soda
3/4 cup Yes! Apples, chopped

Steps:

  • Preheat the oven to 425°F. Spray a 12-count muffin pan with nonstick spray or use muffin liners. If using liners, grease the liners so the muffins don't stick. Set aside.
  • Place all of the ingredeints in a high powered blender or food processer, in the order listed, except for the apples. Stir in the apples. Divide the batter evenly between the muffin liners, filling almost to the top. Top with a few oats, if desired.
  • Bake at 425°F for 5 minutes. Then, while keeping the muffins in the oven, reduce the oven temperature to 350°F and bake for an additional 10-11 minutes. The muffins are done when a toothpick inserted into the center of a muffin comes out clean or press your finger against a muffin, if the top bounces back they are done. Allow the muffins to cool for 5-10 minutes in the pan.
  • Muffins stay fresh at room temperature for up to 2 days or in the refrigerator for up to 1 week.

1 ½ cup all-purpose flour
1 cup old fashioned oats
½ cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 egg
¾ cup milk
1/3 cup vegetable oil
1 cup mashed bananas 3 medium sized bananas
½ cup grated granny smith apple peeled

Steps:

  • Pre heat oven to 400 degrees. Place all of the dried ingredients in a bowl and mix to combine.
  • In a large separate bowl, add in the remaining ingredients and mix to combine.
  • Pour the dry mixture into the wet mixture about ¼ of the bowl at a time and mix with a spoon until just wet and combined. DO NOT OVER MIX.
  • Line a cupcake tin with paper baking cups. Pour mix into baking cups 2/3 of the way. Sprinkle a pinch of granulated sugar on top of each muffin.
  • Bake 18-20 minutes, until golden brown on the top and a toothpick inserted into the center of a muffin comes out clean.
  • Let cool on a wired rack for 2 minutes in the tin. Take muffins out and place back on wired rack to cool completely. Enjoy!

1½ cups large rolled oats
1 cup whole wheat flour, ( 60%. You can use all-purpose flour if you prefer)
3 tsp baking powder
½ tsp salt
1½ tsp cinnamon
½ tsp nutmeg
2 eggs
4 tbsp vegetable oil
6 tbsp sugar
⅔ cup milk
1 cup mashed ripe banana
1 cup grated unpeeled apple, (approximately one large apple)

Steps:

  • Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg. Set aside.
  • Beat together the eggs. oil and sugar until fluffy.
  • Blend in the milk.
  • Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
  • Do not over mix. Fold in only until the fruit is mixed through the batter.
  • Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm.

1 egg
¼ cup honey
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon salt
1 teaspoon vanilla
½ cup greek yogurt
1 ½ cups oats
1 cup milk
chopped strawberry
chopped apple
blueberry
blackberry
raspberry
chopped almond

Steps:

  • Preheat the oven to 350ºF (180ºC).
  • In a medium bowl, mash the banana until mostly smooth. Add the egg and stir to combine.
  • Add the honey, baking powder, cinnamon, nutmeg, salt, vanilla and Greek yogurt and mix well. Fold in the oats, then stir in the milk.
  • Fill each cup of a greased 6-cup muffin tin ¼ of the way full. Add your additions of choice, then fill the muffin cups to the top with the rest of batter and top with more fruit or nuts.
  • Bake the muffins for 30 minutes, or until risen slightly and golden brown around the edges.
  • Let cool for 5 minutes.

½ cup white sugar
2 teaspoons baking powder

1 egg
¾ cup milk
⅓ cup vegetable oil

1 cup mashed bananas

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.

1/2 cup packed brown sugar
1/4 cup fat-free milk
1/4 cup canola oil
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, beat the egg whites, bananas, brown sugar, milk and oil. Stir into dry ingredients just until moistened. Stir in pecans. , Coat muffin cups with cooking spray; fill two-thirds full with batter. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. ½ cup buttermilk
½ cup oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
  • Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.
