Broccoli Apple Salad image

Bring this Broccoli Apple Salad to your next gathering or potluck, and you'll be going home with an empty bowl. It is just that good!

1/2 cup granulated sugar
1 teaspoon cornstarch
1 teaspoon dry mustard
2 large eggs
1/4 cup white wine vinegar
1/4 cup water
1/2 cup mayonnaise
4 cups fresh broccoli florets
2 cups cauliflower florets
1/2 cup slivered toasted almonds
2 apples, cubed
1/2 cup raisins
8 slices bacon, cooked & chopped
1/2 red onion, chopped fine

Steps:

  • In a saucepan, whisk the sugar, cornstarch and dry mustard together. Whisk in the eggs. Add the white wine vinegar and water. Cook over medium-high heat, whisking constantly, until it comes to a boil and thickens.Remove from heat and stir in mayonnaise. Let cool while you prepare the broccoli and cauliflower.
  • Place broccoli and cauliflower in a large mixing bowl. Pour the cooked dressing over, and stir to completely coat. Cover and let marinate several hours.
  • Right before serving, add the remaining ingredients, stirring to coat with the dressing. Cover and refrigerate any leftovers, if you happen to have any.

2-3 small heads of broccoli, chopped (3-4 cups)
1 head cauliflower (3-4 cups)
1 medium apple, diced
2 celery ribs, diced (3/4 cup)
1/2 medium red onion, diced (1 cup)
1/2 cup dried cranberries (Made In Nature are Whole30 compliant)
3/4 cup chopped walnuts, toasted (sub sunflower seeds for nut-free)
2/3 cup Tessemae's Lemon Garlic Dressing (or see recipe option below)
1/3 cup mayo
1 Tbsp. fresh thyme (optional)
Salt & pepper to taste

Steps:

  • In a large bowl, toss together all of the ingredients except for the dressing, mayo and thyme.
  • In a small bowl, whisk together the lemon dressing, mayo and fresh thyme. Season with salt & pepper to taste.
  • Add the dressing to the large bowl and toss until well combined. Let salad sit in the fridge for 30 minutes to allow veggies to marinate in the dressing.
  • Store leftovers in an airtight container in the fridge for up to 4-5 days.

4 cups fresh broccoli florets
1 medium red apple, chopped
1 medium green apple, chopped
1 cup halved seedless red grapes
1/2 cup golden raisins
1/2 cup chopped pecans
1/3 cup thinly sliced red onion
POPPY SEED DRESSING:
1 cup vegetable oil
3/4 cup sugar
1/3 cup cider vinegar
2 tablespoons poppy seeds
1-1/2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon ground mustard

Steps:

  • In a large bowl, combine the broccoli, apples, grapes, raisins, pecans and onion. In a jar with a tight-fitting lid, combine the dressing ingredients; shake until sugar is dissolved. Pour over salad and toss to coat. Cover and refrigerate for at least 1 hour before serving.

6 medium tart apples, chopped
3 cups broccoli florets
1 small onion, chopped
1/2 cup raisins
1-1/2 cups mayonnaise
2 tablespoons white vinegar
1-1/2 teaspoons sugar
1/2 teaspoon lemon juice
1/2 teaspoon salt
10 bacon strips, cooked and crumbled
1/2 cup coarsely chopped walnuts

Steps:

  • In a large bowl, combine the apples, broccoli, onion and raisins. In a small bowl, combine the mayonnaise, vinegar, sugar, lemon juice and salt; pour over apple mixture and toss to coat. Cover and chill for at least 2 hours. Just before serving, stir in the bacon and walnuts.

2 small gala apples (, cored and diced)
1 cup walnuts
1 cup matchstick carrots (, roughly chopped)
1/2 cup golden raisins or dried cranberries
1/4 cup chopped red onion
3/4 cup plain Greek yogurt
1/3 cup Hellman's or Best Foods Mayonnaise ((full fat))
1 1/2 Tbsp apple cider vinegar
3 Tbsp honey
Salt

Steps:

  • In a medium mixing bowl whisk together Greek yogurt, mayonnaise, vinegar, honey and season with salt to taste (about 1/4 tsp). Chill until ready to use.
  • In a salad bowl toss together broccoli, apples, walnuts, carrots, raisins or cranberries and red onion. Pour in dressing and toss until evenly coated.

2 thinly sliced Gala apples

Steps:

  • In a large bowl, whisk together oil and vinegar; season with salt and pepper. With a mandoline or sharp knife, shave cauliflower into thin slices. Add to dressing along with apples and mint leaves, then toss.
