I love my French toast sticks sugary and easy to make. This recipe is easy and quick, and it serves a lot of people.

1 loaf bread, sliced
6 large eggs
½ cup white sugar, divided
6 teaspoons ground cinnamon, divided
1 teaspoon vanilla extract

Steps:

  • Cut the crust off of the bread and cut each slice of bread into 3 pieces.
  • Combine eggs, 1/4 cup of sugar, 4 teaspoons cinnamon, and vanilla extract in a bowl. Dip bread in the egg mixture until it is soaked through.
  • Place about 6 sticks at a time into a greased skillet set over medium heat. Cook until golden and cooked though, 2 to 3 minutes per side. Continue until all sticks are cooked.
  • Mix remaining 1/4 cup sugar and 2 teaspoons cinnamon together in a separate bowl. Transfer each stick into the mixture and turn until fully coated. Place on a platter and serve.

6 large eggs
1/2 cup half-and-half
1 tablespoon vanilla extract
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 1/2 cups panko breadcrumbs
1 1/2 cups sweetened corn and oat cereal, such as Cap'n Crunch, crushed to fine crumbs
2 tablespoons salted butter, melted
12 slices Texas toast, each cut into 3 strips
Powdered sugar, for serving
Warm pancake syrup, for serving
Raspberries and blueberries, for serving

Steps:

  • Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup of the granulated sugar and 1/2 teaspoon of the cinnamon. Whisk lightly until combined; set aside.
  • In a separate pie plate, stir together the panko breadcrumbs, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist. Crack up at the madness that is in this dish, then set it aside.
  • One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning them over, sprinkling and pressing so the crumbs totally cover the surface. Place the sticks on a rack set in a baking sheet. Flash-freeze for 30 minutes to set the surface.
  • Transfer the sticks to zipper bags for storage in the freezer. I do smaller bags of 6 to 8 sticks each, but you can do larger batches if you prefer!
  • To bake them from frozen state, preheat the oven to 425 degrees F. Line a pan with frozen sticks and bake until golden brown around the edges, 15 to 18 minutes. Sprinkle with powdered sugar. Serve with warm pancake syrup for dipping and fruit to make you feel good about life!

2 onions, cut into 1/4-inch dice
12 ounces button mushrooms, stemmed and quartered
6 large eggs
1 1/2 cups heavy cream, half-and-half, or milk
1/2 cup grated Parmesan cheese (about 1 1/2 ounces), plus more for serving
1 teaspoon coarse salt
6 slices 1-inch-thick bread, such as sourdough, each cut into 3 long strips
2 tablespoons unsalted butter
2 tablespoons vegetable oil

Steps:

  • Heat a skillet over medium heat. Add bacon; cook until browned, 3 to 4 minutes. Remove bacon with tongs, drain on paper towels, and set aside. Add onions to skillet with bacon drippings; cook, stirring constantly, until onions begin to soften, about 3 minutes. Add mushrooms; cook until tender and most of the liquid released has evaporated, 5 to 6 minutes. Transfer mixture to bowl to cool. When cool, finely chop half the mixture, and set aside the other half.
  • In a medium bowl, whisk together eggs, cream, Parmesan, and salt. Stir in the finely chopped vegetable mixture.
  • Place the bread strips in a shallow baking dish large enough to hold them in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn strips over, and soak until bread is soaked through, about 10 minutes more.
  • Preheat oven to 250 degrees. Place a wire rack on a baking sheet; set aside. Heat 1 tablespoon butter and 1 tablespoon vegetable oil in a large skillet over medium heat. Fry half the bread strips until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread.
  • Wipe out skillet; repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Heat remaining onion mixture in a small skillet until warm. Serve French toast warm, topped with reserved onion mixture, crumbled bacon, and Parmesan, if desired.

  • Dunk each strip of bread into the mixture, allow the excess to drip off, then place on prepared baking sheet. Repeat with remaining strips.

I got this basic recipe from another site but changed it a little for my family. The original recipe called for orange juice as the liquid instead of milk. I also added the vanilla as we think it gives it a nice flavor.

8 slices bread (Texas Toast style or French)
1/4 cup melted butter
4 eggs
1/3 cup sugar
1/4 teaspoon cinnamon
2/3 cup milk
3/4 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cut each slice of bread into 3 pieces to make sticks. Texas Toast is a very thick sliced bread about 3/4" thick. You could substitute french bread if Texas toast is not available.
  • In a bowl, mix together melted butter, eggs, sugar, cinnamon, vanilla and milk. Beat well.
  • Dip sticks into egg mixture and place on a cookie sheet that has been sprayed with cooking spray.
  • If there is any dip left, you can drizzle it over the sticks.
  • Bake for 25 minutes on middle rack of oven. Turn halfway through baking time.
  • Allow to cool.
  • Flash freeze on cookie sheet, remove and place in a ziploc bag.
  • To reheat: place 3 sticks on a microwave-safe plate and heat on high for 1 minute until warm. Serve with syrup.
