1 jigger amaretto
1 jigger Irish cream liquor
1 jigger cinnamon whiskey
1 teaspoon vanilla extract
3 tablespoons pumpkin purée
2 tablespoons cinnamon sugar
2 tablespoons honey
1 cup ice
2 cinnamon sticks
pinch grated nutmeg

Steps:

  • Place the cinnamon sugar and honey on two separate plates. Dip the rim of each martini glass into the honey first and then the cinnamon sugar. Set aside.
  • Add the ice to a cocktail shaker. Add the amaretto, whiskey, Irish cream, vanilla, and pumpkin puree to the shaker. Return the lid to the shaker and shake well for 30 seconds.
  • Pour the martinis into the prepared glasses. Garnish with grated nutmeg, additional cinnamon-sugar, and a cinnamon stick in each glass (if desired).

Steps:

  • Place graham cracker crumbs in a shallow dish. Coat rim of martini glass with honey, and dip into graham cracker crumbs to coat.

  • Gather the ingredients.
  • In a small dish, combine the finely crushed graham cracker, sugar, and 1 teaspoon of pumpkin spice, mixing into an even consistency. Pour a bit of Irish cream into a second small dish. Rim a cocktail glass by dipping the rim into the Irish cream, then rolling it in the graham cracker mixture, tapping off any excess.   • Chill a martini glass 5-10 minutes before rimming the glass
  • Coat a plate in simple syrup and run the chilled rim of the martini glass in a circle until the rim is completely covered.
  • Use a 50/50 ratio of sugar and pumpkin pie spice on another plate to run the rim of the glass along the mixture, keep rubbing until the rim has a good coating of the sugar and pumpkin pie spice.
  • Fill a cocktail shaker up with ice
  • Add the Baileys, Pumpkin Spice liqueur, the whipped cream vodka,and the heavy whipping cream into the cocktail shaker.
  • Place the lid back onto the cocktail shaker and shake thoroughly for 30-60 seconds until the contents are chilled.

1/4 c. whipped topping or whipped cream
2 1/2 oz. vanilla vodka
1 1/2 oz. aged rum
1/4 c. pumpkin puree
3 tbsp. maple syrup
1/4 c. half and half
1/4 tsp. pumpkin pie spice, plus additional for garnish
Handful of ice cubes

Steps:

  • Place 2 martini glasses in the freezer.
  • For the Frozen Whipped Topping: Line a small sheet tray with parchment or waxed paper. Make 2 dollops of whipped topping or whipped cream and place in the freezer for 30 minutes.
  • For the Pumpkin Pie Martini: In a cocktail shaker, combine the vodka, rum, pumpkin puree, maple syrup, half and half, pumpkin pie spice, salt and ice cubes. Cover and shake vigorously for about 20 seconds. Strain into the 2 martini glasses. Top each glass with with one piece of frozen whipped cream. Sprinkle additional pumpkin pie spice and serve immediately.

1.5 ounces vodka
1 ounce half and half
1/2 ounce canned pumpkin puree
1/2 ounce maple syrup
1/4 ounce vanilla
1 tablespoon white sugar (optional for rimming glass)
1/4 teaspoon pie spice or cinnamon (optional for rimming glass)

Steps:

  • If rimming the cocktail in cinnamon and sugar: Mix the cinnamon (or pie spice) and sugar in a small, shallow dish. Dip the rim of the martini glass in a small, shallow dish of water. Then dip the wet rim into the dish with cinnamon sugar. Gently shake off excees. Set aside.
  • To a cocktail shaker, add vodka, pumpkin puree, pie spice, half and half, vanilla and maple syrup.
  • Add ice and shake well.
  • Strain the Pumpkin Martini into prepared martini glass.

2 ounces* vodka
1/2 ounce heavy cream (or coconut milk, for vegan)
1/2 ounce (to 1 ounce**) pure maple syrup
2 tablespoons canned pumpkin puree
1/4 teaspoon pumpkin pie spice
1/4 teaspoon vanilla extract
Graham crackers, for the rim

Steps:

  • Crush a graham cracker with your fingers, and place it on a plate. On another plate, add a small pool of maple syrup. Run the rim of a martini glass in the maple syrup first, rotating the glass so the rim is evenly coated. Then roll the rim in the crushed graham crackers until evenly coated.
  • Place all ingredients in a cocktail shaker. Add a handful of ice and shake until cold. Strain the drink into the prepared martini glass.
