I love cooking so much I sometimes think of recipes in my sleep and wake up to write them down! This dream-inspired dish is my family's favorite way to eat chicken. -Holly Kilbel, Akron, Ohio

1 teaspoon salt
3/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1 roasting chicken (6 to 7 pounds)
1 can (11-1/2 ounces) unsweetened apple juice
1/2 cup apple butter
1/4 cup barbecue sauce

Steps:

  • Combine the salt, garlic powder, pepper and cayenne; sprinkle over chicken., Prepare grill for indirect heat, using a drip pan. Pour half of the apple juice into another container and save for another use. With a can opener, poke additional holes in the top of the can. Holding the chicken with legs pointed down, lower chicken over the can so it fills the body cavity. Place chicken on grill rack over drip pan. , Grill, covered, over indirect medium heat for 1-1/2-2 hours or until a thermometer reads 180°. Combine apple butter and barbecue sauce; baste chicken occasionally during the last 30 minutes. Remove chicken from grill; cover and let stand for 10 minutes. Remove chicken from can before carving.

4 boneless skinless chicken breast halves (1 pound)
1/3 cup apple butter
2 tablespoons salsa
2 tablespoons ketchup
1 tablespoon vegetable oil
1/2 teaspoon salt, optional
1/4 teaspoon garlic powder
2 drops Worcestershire sauce
2 drops Liquid Smoke, optional

Steps:

  • Place chicken in a greased 8-in. square baking dish. Combine remaining ingredients; pour over chicken. Bake, uncovered, at 375° for 25 minutes or until meat juices run clear.

We eat a lot of chicken and I'm always looking for new ways to fix it. My husband loves apple butter so when I found this recipe in The Chicago Tribune, I had to try it! The instructions are for cooking indoors, on a grill pan, but I cooked it outdoors on my gas grill.

1 cup apple butter
3 tablespoons yellow mustard
2 tablespoons butter
2 tablespoons sugar
1 teaspoon celery seed
1 medium onion, minced
1 broiler-fryer chickens, cut up or 5 bone-in skin-on chicken breast halves
1 teaspoon salt
fresh ground pepper

Steps:

  • Heat the apple butter, mustard, butter, sugar, celery seed and onion to a boil in a medium saucepan over medium-high heat. Remove from heat; cool.
  • Place the chicken in a food storage bag. Pour half of the apple butter mixture over the chicken; reserve remaining mixture. Seal bag; smush around so the chicken gets thoroughly coated. Refrigerate 1 hour.
  • Heat a grill pan over high heat. Brush off extra sauce from the chicken and discard. Cook chicken, in batches if necessary, turning occasionally, until browned, about 20 minutes. Continue cooking, brushing with reserved marinade, until chicken is cooked through, 15-25 minutes longer.

1 6-ounce can frozen apple juice concentrate, thawed
1/4 cup firmly packed brown sugar
1/4 cup catsup
1 tablespoon cider vinegar
1 teaspoon dried thyme, crumbled
1/8 teaspoon hot pepper sauce (such as Tabasco)
1 3-pound chicken, cut into 4 pieces
Vegetable oil

Steps:

  • Combine first 6 ingredients in heavy small saucepan. Stir over medium heat until sugar dissolves.
  • Prepare barbecue (medium-high heat). Brush chicken with oil. Season generously with salt and pepper. Grill until chicken is almost cooked through, turning occasionally, about 20 minutes. Brush with glaze and continue grilling until chicken is tender and cooked through, brushing chicken frequently with glaze and turning occasionally, about 10 minutes longer.

1 (6 ounce) can frozen apple juice concentrate, thawed
1/4 cup reduced sodium ketchup
2 tablespoons brown sugar (packed)
1 tablespoon cider vinegar
1 teaspoon dried thyme
1/8 teaspoon hot pepper sauce
6 (4 ounce) boneless skinless chicken breast halves

Steps:

  • In a small saucepan, combine the apple juice concentrate, ketchup, brown sugar, vinegar, thyme and hot-pepper sauce.
  • Cook, stirring, over medium heat until the sugar completely dissolves.
  • Remove from the heat and cool to room temperature.
  • Place the chicken in a single layer in a 13 by 9-inch baking pan.
  • Pour about half of the cooled ketchup mixture over the chicken, turning once to coat both sides.
  • Cover and refrigerate both the chicken and the remaining ketchup mixture for 4 to 24 hours.
  • Coat a grill rack with nonstick spray.
  • Then light the grill according the manufacturer's directions.
  • Check the temperature for grilling; the temperature should be medium-hot.
  • Place the rack on the grill.
  • Remove the chicken from the ketchup mixture; discard whatever ketchup mixture remains in the baking pan.
  • Coat the chicken pieces with nonstick spray and brush them with some of the remaining ketchup mixture.
  • Place the chicken on the rack and grill, uncovered, for 8 minutes.
  • Turn the chicken over and brush with the remaining ketchup mixture.
  • Grill for 7 to 10 minutes, or until the chicken is tender and cooked through.
  • Discard any remaining ketchup mixture.
  • To broil the chicken instead of grilling it, coat the rack of a broiling pan with nonstick spray.
  • Remove the chicken from the ketchup mixture; discard whatever ketchup mixture remains in the baking pan.
  • Coat the chicken pieces with nonstick spray and brush them with some of the remaining ketchup mixture.
  • Place the chicken on the rack.
  • Broil 4 inches from the heat for 5 minutes.
  • Turn the chicken over and brush again with the remaining ketchup mixture.
  • Broil for 4 to 6 minutes, or until the chicken is tender and cooked through.
  • Discard any remaining ketchup mixture.
