Apple-Oatmeal Cookies are soft, chewy cookies that are loaded with rolled oats, apples, and bittersweet chocolate chips instead of raisins. While the original recipe calls for a lot of sugar and butter, I opted for NO sugar and NO butter. Therefore, I can have two cookies per day, guilt-free!

1 + 1/2 cups (135 grams) quick rolled oats ( I used Quaker Oats)
1/2 cup ( 75 grams) all-purpose flour
3/4 cup (96 grams) whole-wheat flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 + 1/2 tsp. cinnamon
1 cup (118 grams) finely chopped apple ( Fuji, Delicious, or Granny Smith)
1 egg
1/4 cup (85 grams) honey
1/4 cup (54.5 grams) vegetable oil (I used canola)
1/3 cup (85 grams) Almond milk
1/4 cup (40 grams) bittersweet chocolate chips ( I used Ghirardelli 60% cacao)

Steps:

  • Preheat oven to 375 degrees. ( No Mixer needed, just a good wooden spoon)
  • In a large bowl, combine oats, both flours, baking powder, baking soda, salt, and cinnamon. Stir to combine.
  • Next, stir in the apples, egg, honey, oil, and milk. Mix to form a smooth batter.
  • Lastly, stir in the chocolate chips until well combined.
  • Drop by teaspoon onto a cookie baking sheet.
  • Bake for 10 to 12 minutes, or until lightly golden. Remove and transfer to a cooling rack.

¾ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

  • Slice the banana and place in a medium bowl. Mash with a fork. Set aside the bowl.
  • Peel the apple and grate. When you grate the apple, there will be some excess juice left. Leaving that excess juice (don't squeeze the apple, I mean the excess juice that stay on where you zest the apple) place the grated apple over the mashed banana and add the cinnamon, mix with a spoon/fork.
  • Add the peanut butter and mix again. Finally mix in the oats.
  • Make 1 and ½ tablespoon big balls. The mixture will be sticky so you should either use a cookie scoop or a spoon. Place them on the baking sheet and flatten with your fingers.
  • Bake for almost 14 minutes or until the cookies become firm on top and they don't stick to the parchment paper. When you remove the cookies from the oven, they will be soft to handle but they will be firm as they cool on the baking sheet for 10 minutes.

1 teaspoon cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
½ teaspoon baking soda
1 cup (124g) all-purpose flour
½ cup (113g) unsalted butter, softened
¾ cup (150g) packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 ⅔ cups (142g) quick cooking oats
1 cup (126g) finely chopped apples

Steps:

  • In a medium bowl, whisk cinnamon, nutmeg, salt, baking soda, and flour. Set aside.
  • Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. (You can also use a large bowl and a hand mixer.) Cream until smooth, about 1-2 minutes. Mix in eggs, and vanilla and beat until smooth.
  • Gradually mix in dry ingredients until smooth, being careful not to over mix. Add oats and mix until all combined.
  • Peel, core, and chop your apples. Be sure to cut them small so they aren't large chunks in your cookies. Stir apples into cookie dough.
  • Scoop 2 tablespoon sized balls of dough and place on a cookie sheet lined with parchment or wax paper. Cover with plastic wrap and chill for at least 30 minutes.
  • When ready to bake, preheat oven to 350°F. Line two cookie sheets with parchment paper or a silpat baking mat and place the cookie dough balls 2" apart.
  • Bake for 11-15 minutes, until the bottom is slightly golden. Cool on cookie sheets for 10 minutes, then remove to a rack to cool completely.
  • Store cookies in an airtight container for up to 4 days. They can also be frozen in an airtight container or ziploc bag for up to 2 months.
